February 25, 2008 Low-Carb Menu

7:30AM
Eggs, ham, omelet with cheese, ham and mixed veggies



7:45AM
20-minute self-guided resistance training workout

3:30PM
Salmon, cheeseburger patty with lettuce, tomato, pickle and mayo, eggplant, and a slice of low-carb cheesecake



6:45PM
Broccoli and cheese soup, spinach and greens salad with Ranch dressing, Beef Wellington without the puff pastry crust in mushroom sauce, broccoli with butter, sugar-free vanilla ice cream






12:00AM
Taco meat with nacho cheese, salsa, sour cream, cheese and lettuce



NOTE: It was the second full day of our cruise and our first stop in Cozumel, Mexico. I loaded up for breakfast today because I knew it might be a while before we ate. And I was right. Although we were supposed to be fed a meal after our horseback riding excursion through the Mayan ruins, we were not. EEEEK! I even had to PAY to have a diet soda while beers and regular soda were FREE. BOO! Oh well. You live and learn. Needless to say, after spending some money in the shops at Cozumel, we headed back on board to chow down for a late lunch and we were starving! You can always count on having plenty of food on hand anytime while on a cruise ship. Just make the right choices for your low-carb lifestyle and you can stick to plan. Dinner was again AMAZING! I'd never had Beef Wellington before and I simply removed the puff pastry to make it low-carb. And I couldn't resist the midnight Mexican buffet! Ooo la la!
