April 11, 2008 Low-Carb Menu

7:30AM
Southwestern eggs with meat and cheese concoction, honeydew, cantaloupe



12:30PM
Roast beef and cheese dipped in mayo and mustard, Atkins Chocolate Chip Granola Bar



3:00PM
Spinach wrap with turkey, avocado, tomato, mayo and Ranch dressing with low-glycemic fruits and a pickle

8:30PM
Filet mignon, broccoli and cauliflower with butter

9:15PM
Livin' La Vida Low-Carb Bar

NOTE: Okay, so I'm at this obesity conference, right? One would think that the menu items would be at least reasonably healthy since the people attending specialize in bariatrics and helping patients with obesity. I guess somebody forgot to tell that to the people making the food because this stuff was just horrible! The breakfast "bowl" was some kind of egg thingy with meat like BBQ without the sauce in the bottom of it. It looked better than it tasted and I was longing for some bacon and sausage in the bottom of that bowl (a la the Hardee's breakfast bowl). Then for lunch, I couldn't believe my eyes at the box they served us...all I could eat was the roast beef and cheese in the middle of the sandwich with the big bun on it! I managed to find an Atkins bar to munch on, too, or I would have been starving! Thankfully, one of my blog readers Jeri Sessler came to our rescue and took us out for a REAL lunch at that excellent restaurant we went to yesterday and I got the same thing--it was amazing! We went back there again for supper to meet and hang out with all the low-carb researchers who were arriving into town for the weekend scientific sessions to present the latest studies on saturated fat and carbohydrate restriction. WOO HOO, this is getting exciting!!!
