NOTE: Day 5 on my change to all real low-carb foods with no low-carb "products" and I'm surprised I haven't lost a single pound yet. Starting on Wednesday, Day 1 I lost three pounds, Day 2 I gained those three pounds back, Day 3 I once again gained three pounds, and Day 4 I lost three pounds again. So, after four days, I have lost a grand total of ZERO pounds! WHAT?! If all these "products" were supposedly the reason why I've been gaining, then wouldn't it stand to reason I'd be losing eating the way I am now? Logically speaking (if the products were the culprit), then I should be losing a good percentage of those 30 pounds I've put on since I began lifting weights in December. Oh well, I'll stop ranting now. Today, I decided to do a twist on one of my favorite real low-carb foods--mashed cauliflower. I remember my dad used to have something we called "potato patties" on his buffet in his restaurants. These were made from mashed potatoes that were fried up in butter to a golden brown crisp on both sides like a pancake. I used to smother those things in ketchup (now you know why I was so fat as a kid!) and gobble 'em down. So, why wouldn't it work with mashed cauliflower. Lemme tell you...it worked BEAUTIFULLY! And with a dollop of sour cream on top, this was a masterpiece recipe which I'll be sharing at my blog very soon. YUMMY! :D

Just out of curiosity, how many total calories are you eating and what is your fat percentage. Man that Cauli Cake looks good!

Hey Scott, that cauliflower cake was AMAZING! Regarding your questions, I don't count calories, I just eat to satiety. My fat percentage is around 65-70% of total calorie intake with protein taking up 25-30% and carbs 5%.

You're eating about the same percentages as my foster son who is on the Modified Atkins Diet for seizure control. He's been on it nearly 1-1/2 years and has gone from a dozen or more drop (or worse) seizures a day to sometimes weeks with none...what a blessed relief!
I'm going to have to try your cauliflower recipe...it's making my mouth water!
I might be able to go on the cruise after all...a good friend is considering going along with me and, if she does, then we both will be going! I'll know this week. I am so looking forward to meeting you and Christine!
Jimmy, when you saw the doc recently, did he do any tests at all? Blood work, etc. or any other kinds of tests? I'm still wondering about your thyroid. Since that's been an issue for me for years -- hypothyroid -- your current pattern is very similar to mine...even since I've been on meds and am currently in the right range, I still have trouble with losing and not gaining. I stay on low carb for all the other health benefits anyway!

THANKS so much for writing! It really is amazing how eating a high-fat, low-carb diet can control seizures, but it works! Your foster son is so fortunate to have you to keep him on this diet when everyone in the world scares you into thinking it will harm him. As if the seizures won't?! :)

Yes, I had blood tests run and several of them are waiting to come back for analysis by my doctor. I can tell you that my thyroid function is normal, so it's not that. Although it certainly is acting like that at the moment. :O
