August 31, 2008 Low-Carb Menu

10:15AM
Final weigh-in and measurements at FitCamp

11:30AM
2 eggs, sausage, bacon, tomato slices, whole wheat toast with butter, one bite of grits with Splenda, one bite of biscuit and gravy

3:00PM

7:00PM
Eggs with green peppers, onions, red peppers, mushrooms, green beans, broccoli, squash, bacon and sausage

12:15AM
Dark chocolate ChocoPerfection bar

CURRENT WEIGHT: 266.5

NOTE: After losing 4 pounds in Week 1 of FitCamp, I GAINED back 9.5 pounds in Week 2 for a net gain of 5 1/2 pounds. On the surface, that sounds like a REALLY BAD result. But check this out: I lost a total of 14 inches in my body, including 2 inches off my waist! So it sounds like I gained a LOT of muscle during this experience...not surprising as much working out as we did! I plan on continuing to exercise hard when I get back home and I'm gonna evaluate what to do about eating the extra carbs to prevent dizziness like I had early on at FitCamp. My low-carb doctor (Dr. Westman) is helping me assess this as we speak. I'm VERY pleased with this FitCamp and am planning on going again next year. :D

We got to celebrate our last night together getting all dressed up and going to see the Grand Old Opry in Nashville, Tennessee. It was fun although most of us didn't like country music that much. LOL! Tomorrow we'll know the verdict on our progress here at FitCamp and then we'll be HOME again. WOO HOO!

It was fun, but exhausting and we did a one-hour Latin dance class called Zumba that was more fun to watch than do followed by agonizing treadmill work. There was nothing left to burn after all of that working out today. FitCamp is almost finished!

NOTE: What a day! Check out Episode 17 and Episode 18 to see all we did at FitCamp in Day 11. We had some vigorous workouts today and I didn't get dizzy today with what I ate. WOO HOO! But when we went swimming this afternoon, both of my calves cramped up and then at 10:30PM both of my hamstrings locked up on me with some pretty writhing pain. Isabeau wanted me to eat two bananas, drink a glass of milk, and eat a slice of bread. One of the girls in another room had a plantain, so I ate half of it for the potassium along with a slice of whole grain bread and cheese for calcium. It wasn't the best thing in the world, but I got the cramps to stop. That was rough!

NOTE: We had a pretty relaxing day by FitCamp standards today and it was a nice surprise to get to go shopping rather than busting our butts on a treadmill! See Episode 16 of my FitCamp videos and you'll see it all. Of course, we did manage to get in some workout time too in the evening after a great dinner at Isabeau Miller's house. I gotta tell ya something and it shocked me, too. I ate that dinner of Quinoa pasta, chicken, veggies and salad because I was STARVING. But when I got to the gym, I didn't get dizzy one single time and my endurance was the best it has been since I've been here. I don't know if it was the extra rest or the carbs or what, but I was ready to do MORE when we were done running on the treadmill and doing the spin class. Is that sadistic or what? :)

NOTE: I woke up this morning with a VERY bad sore throat and I was bummed. Here I am at a fitness camp for two weeks and the last thing I need to be is SICK! But here I was with a scratchy, red hot throat that literally knocked me out after my morning workout session this morning. I took some Tylenol Cold liquid stuff that gave me a few hours sleep before my next workout in the afternoon. When Isabeau arrived, she could tell I wasn't feeling well and told me to stay at the hotel to rest up for tomorrow. Now THAT is a good trainer recognizing she wouldn't get anything out of me today and I took advantage of it. You'll notice I was VERY hungry the rest of the day eating quite often and I added in a few low-carb comfort foods to help relieve the throat pain. By the end of the day, the sore throat was nearly gone and I only hope the Zicam keeps the cold from developing tomorrow...IT'S A BIG DAY!

NOTE: You can see our first weigh-in results video at FitCamp from Saturday and today was our day off. I slept in pretty late for me (10:00AM) and it felt good to get that added rest. I enjoyed that Prime Rib steak for supper from O'Charley's and I couldn't even eat all of the 16-oz that I ordered. That's okay, it was worth every delicious bite.

By the way, I'm talking with some of the low-carb expert friends I know about my dizziness during our vigorous workouts here at FitCamp to see what to do about them. The consensus seems to be on one of three things: low blood pressure, low blood sugar, or medication. So for now I will be dropping the Metformin for a period of time and checking my BP to see what's going on with it before and during my workouts. We know about my blood sugar issues already, but we're just assuming that's what it is. Eliminating these other variables will determine how to proceed next with dealing with this. THANKS for all of your input about that because it's freaking me out eating bread and fruit like I am.

NOTE: After our weigh-in today at FitCamp, we were told to eat a high-calorie day's worth of meals bumping it up by 500 calories just for today. I did pretty well getting mine at 3090--over 400 more than the 2500 Isabeau has had me eat while I am training with her. We did a spin class today and it was the first time I ate TWO (EEEEK!) slices of whole grain bread before exercise...but I'm glad I did. That was BRUTAL and quite a workout. Thankfully we are off the rest of the day Saturday and all day on Sunday to recuperate before another week of FitCamp next week. I lost four pounds since last Sunday night, so it's been working moderately well (although deep down inside I expected a bigger number). Again, I'll not be reporting my daily weight since our next weigh-in is on Sunday, August 31, but I will share the menus when I can. It will be a helter skelter week coming up.

CURRENT WEIGHT: Next weight update will be on Saturday

NOTE: Oh, my calories fell so short today, but I just couldn't eat. Since I started FitCamp, my appetite has been shot. I think I'm hungry and I start eating, but then I'm full halfway through the meal. This isn't usually a problem when you don't have massive amounts of exercise to do, but these two weeks I DO! What's that all about? I fell short of my calories goal by about 500 today. :(

See our workouts on Day 4 today with our morning workout with Jacob and then Part 1 and Part 2. Yes, I ate two slices of whole grain bread to help with the dizziness and it did the trick in the morning session...but not in the evening with Isabeau. She worked us SUPER-hard and that bread didn't stand a chance. I even ate some strawberries and had to resort to an Atkins bar I was spinning so much by the end of that workout.

8:15PM
1/2 cauliflower--24 calories
2 Tbsp heavy cream--100 calories
1 Tbsp butter--100 calories
1/4 cup mozzarella--80 calories

CURRENT WEIGHT: Next weight update will be on Saturday

NOTE: After two days of beatings at FitCamp, we got a day off today--YEAH!!! Isabeau asked us to drop our calories by a couple hundred today on my non-workout day and I did that pretty well around 2200 calories. We'll be back to several hours of exercise tomorrow and I'll be experimenting with the slice of whole grain bread before each workout to see if it helps with my dizziness. Here's hoping.

By the way, meet my fellow FitCampers and see who is going through this with me. They all eat around 1500-1700 calories, so I get away with more calories than they do. But we're burning upwards of 5,000-6,000 calories a day! I'm still VERY sore, but I took it easy today. Christine and some of the girls went to the zoo and did some sightseeing, but I stayed at the hotel to rest. I have a feeling we're gonna need it! WISH ME LUCK! :D

Isabeau specifically asked me to NOT weigh until Saturday when all of the people at FitCamp will have our first official weigh-in since we started. So I won't update the weight until then. THANKS!

CURRENT WEIGHT: 255.4

NOTE: Day 2 of FitCamp happened today and I reached my goal of 2500 calories today with 2523. WOO HOO! But I gotta tell you something--I'm NOT at all hungry on these workout days. I don't know what it is, but I just haven't felt like eating. That meal at 4:30PM was hard to get down and I felt like throwing up those last few bites. Plus, Isabeau said I need to get in a few more fruits and veggies in my diet. Well, since I'm not very hungry, eating low-calorie foods like those will make me fuller without giving me the calories I need. It's a two-edged sword right now, but I'm gonna give it a go.

I am gonna give the slice of whole grain bread a try starting on Thursday when we workout again. That is what the trainers want me to try to help with the dizziness during the workouts. I'm game for it during these two weeks just to see how I do. I hate the feeling in the middle of a good workout, so we'll see what impact this has on me. I'm very pleased with the first two days at FitCamp...a TWO-POUND WEIGHT LOSS! I'm down to 255.4 compared to 257.4 on Sunday. WOO HOO! Let's watch this trend continue. See how our Day 2 at FitCamp went during our morning session with Jacob and afternoon session with Isabeau on YouTube.

CURRENT WEIGHT: 256.8

NOTE: Day 1 of FitCamp was one of the most challenging experiences of my life today. You can see what me and 7 brave women went through both in our morning session with Jacob Carringer followed by Isabeau Miller training us in the afternoon in these FitCamp videos I posted on YouTube today. They wanted me to eat 2500 calories to keep up with all this exercise while eating no more than every four hours--something I have been accustomed to in the past. The good thing is they have let me continue eating low-carb through this experience.

However, you'll notice another Atkins bar crept into my menus today and there's a reason for that. I started getting dizzy in the morning workout session and Jacob recommended I eat a grapefruit snack. When I asked if strawberries worked just as well, he said they're good, too. So I need to go to the store and buy some strawberries to eat between workouts the rest of the time I'm here at FitCamp.

You'll notice I listed the calorie counts for all the foods I'm eating so I can keep up with how many calories I'm taking in. Believe it or not, I had a challenge trying to get my calories up high enough to that 2500 level and maybe those extra snacks between the workouts will help me get the calories elevated. In fact, I was so full from that big meal I made for supper to make up my calories that I couldn't finish it in one sitting...I had to save the rest of it for three hours later. And I wasn't hungry then either. But there's a method to the madness right now that they're putting us through and I look forward to weight loss being produced from this. :)

Today I got in over 2250 calories and I'll try to hit closer to my goal on Tuesday.

August 17, 2008 Low-Carb Menu

8:15AM

7:00PM
Pulled pork on top of lettuce, tomato, bacon, cheese, cucumbers, and Ranch dressing

NOTE: It's the calm before the storm as FitCamp starts in earnest on Monday morning. I met with Isabeau Miller from "The Biggest Loser" along with the seven other participants who will be going through this the next two weeks. We had a great time getting to know each other before we get our butts kicked. Here's our first video documenting the FitCamp experience. ENJOY!

Being away from home made eating interesting today. We went to Shoney's for breakfast where I basically got eggs and meat from the buffet. Everything else was too carb-y. For supper, we went to a popular BBQ place called Corky's where I got some pulled pork without any BBQ sauce which was very tempting. But I don't need the sugar in it, so I resisted. The pork went on top of a salad which was so big I couldn't even eat it all. Today was a great day and I look forward to starting FitCamp bright and early tomorrow morning.

August 16, 2008 Low-Carb Menu

9:00AM
3 Hebrew National Beef Hot Dogs with mayo

2:45PM
Atkins Caramel Peanut Nougat bar

7:30PM
Side salad with Ranch dressing and 10-oz Ribeye steak

CURRENT WEIGHT: 256.8

NOTE: We traveled five hours up the road to Nashville, Tennessee today to attend Isabeau Miller's FitCamp which starts on Sunday night. We had a few hot dogs left in the fridge, so I ate them today so they wouldn't spoil while we're gone for two weeks. I wanted them to keep my hunger at bay for about five hours and they did the trick.

But just when I was getting ready to stop to eat something (I was looking for a Hardee's to get their low-carb Thickburger), we ran into a traffic jam backup just outside of Knoxville. I was getting hungrier and hungrier and we had no idea how long this was gonna last (it ended up being about an hour and a half standstill--two ambulances screamed by while we just sat there. And I had to go to the bathroom too which made it even worse.

So, against my personal wishes, I had no choice but to eat a low-carb product with that Atkins bar. To me, it was better to eat it than to go without and I don't feel bad about it. It's the first "low-carb product" I've eaten since I removed them from my diet nearly a month ago. You do what you gotta do sometimes and today necessity made this a reality for me. I have no regrets about it at all.

Then for supper I was privileged to meet one of my blog readers and forum members Shari at LongHorn Steakhouse where Christine and I split that beautiful steak you see above. It was 18 ounces in all and I gave Christine 8 ounces of it leaving me the rest. That was THE best steak I've ever eaten and it didn't need any steak sauce. AMAZING and I probably could have eaten that whole thing as hungry as I was. :)

We're in Nashville for the next couple of weeks and I look forward to sharing my menus through the FitCamp experience. Will I eat more carbs to energize my 6 hours of daily workouts? Or will I keep my diet the same with plenty of healthy fat and moderate protein? Keep reading and you'll see. :D I'll be posting my workouts as well so you can see what kind of energy expenditure I'll be putting out. This is gonna be fun!

Oh, by the way, did you notice I FINALLY beat the stupid 257-mark--I weigh 256.8 now and I've got momentum on my side going into this next two weeks. Wish me well!

August 15, 2008 Low-Carb Menu

6:15AM
1/3 pound 75/25 beef hamburger with mozzarella cheese and salsa

8:00AM
4 1/2 hours of golfing

2:15PM
Spinach salad with eggs, bacon, cheese, sunflower seeds, and Ranch dressing, mashed cauliflower with butter, small beef patty with cheese, pickle, and mayo

9:30PM
Country mashed cauliflower with bacon, American cheese, and mozzarella cheese

CURRENT WEIGHT: 257.6

NOTE: I got to do something today that I haven't had a chance to do much of at all this year. I went golfing! WOO HOO! Since taking up this sport last year for the first time in my whole life, I have wanted to get out there and do it. Unfortunately time and money have prevented me from golfing as much as I would like to. But it is relaxing and fun even if I'm not very good yet. My pastor and a couple of more friends from my church made up our foursome and it was a blast! I had my trainer go light on me this week so I wouldn't be too sore to play and I did fine. Plus I've got that FitCamp coming up the next two weeks, so I REALLY didn't want to be wore out before I started. I'll be leaving for Nashville, TN on Saturday morning. Wish me luck! :D

August 14, 2008 Low-Carb Menu

9:00AM
2 mini-beef burgers with cheese and mayo, mashed cauliflower with butter

10:30PM
30-minute resistance training workout with personal trainer

4:30PM
Spicy tilapia and shrimp with Parmesan cheese sauce, mashed cauliflower with cheese, tomato and butter

CURRENT WEIGHT: 258.0

NOTE: People have been asking me if I have noticed any side effects from taking the Metformin since I started it last week. For the most part I haven't felt a thing...until today. I don't know what it was, but I just didn't want to eat very much today. I had NO appetite, no desire for food, and felt this way just about all day long. Not that this is necessarily a bad thing when you want to lose weight because you can certainly keep calories low doing this. But I'm wondering if it's the Metformin doing this. I dunno. This is probably the lowest calorie day I've had in a very long time, but I didn't want to force myself to eat feeling the way I did. And the scale ticked ever-so-slightly upward by .2 of a pound to 258 today, but the good thing is it is not skyrocketing back up in the upper 260s again like it has been during this rollercoaster ride in 2008. Next week I start FitCamp, so let the weight loss begin! :D

August 13, 2008 Low-Carb Menu

10:00AM
Country mashed cauliflower with bacon, American cheese, and mozzarella cheese

3:00PM
1/3 pound 75/25 beef hamburger with American cheese and mayo

5:00PM
60-minute golfing at the driving range

7:00PM
Salad greens with cheese, eggs, bacon, sunflower seeds, and Ranch dressing

CURRENT WEIGHT: 257.8

NOTE: I tried, I REALLY tried to get rid of the diet soda I had been drinking. I made it all day yesterday and up until 3:30PM today, but I couldn't take it anymore! I had a glass of it because I got very weak and tired out of nowhere. I know, I should have bucked up and pushed through it, but I didn't make it. Maybe going cold turkey off the diet sodas wasn't such a good idea after all. I will consciously reduce my consumption slowly to see if that helps with the transition to none. I sincerely want to do this.

I noticed today I was not very hungry at all...in fact, my dinner was smaller than I expected because I was full before I got to the rest of my meal. This was surprising since I got in an hour of exercise on the driving range. Oh well, sometimes it just works out that way. I am quite content with what happened in my diet today despite the fact I was up ever-so-slightly by .4 of a pound.

August 12, 2008 Low-Carb Menu

9:15AM
1/3 pound 75/25 beef hamburger with cheese and 3 strips of bacon and mayo

10:30AM
30-minute resistance training workout with personal trainer

2:15PM
Salad greens with shrimp, homemade salsa, mozzarella cheese, and Ranch dressing

6:15PM
Roast beef, turkey, and cheese with tomato, pickle, on a bed of lettuce with oil and vinegar

7:00PM
120-minute recreational volleyball

CURRENT WEIGHT: 257.4

NOTE: I made it through the day without drinking any diet soda at all. I'm willing to give this a go because I have been needing to transition from using diet soda anyway and there's no better time than NOW to make that happen. Additionally, I am going to try hard to move away from eating anything sweet if at all possible. This will be a HUGE challenge for me since I used to be a sugarholic! I don't want sugar anymore, but I do still want sweet. Maybe as time progresses I'll be able to beat this urge, but it's really hard right now. I'm willing to try it as a new lifestyle change for the better in my overall health.

One thing I've noticed on days that I lift weights is my weight tends to stall or even go up a little. It could just be coincidence, but I've noticed this as a trend. I'm not sure if there is a connection per se, but I can't help but see it happening. It's not worrisome or anything, I just wonder if the weight lifting is playing any kind of role in my weight stall this year. I LOVE the way I feel eight months into lifting for the first time in my entire life, but getting my body fat to decrease would make it that much more enjoyable!

August 11, 2008 Low-Carb Menu

10:45AM
Bacon and mozzarella cheese sprinkled on top of a bed of salad greens, homemade salsa, and Ranch dressing

3:00PM
5-ounce sirloin steak, mashed cauliflower with butter, broccoli with butter

9:00PM
Country mashed cauliflower with bacon, butter, American cheese, and mozzarella cheese

CURRENT WEIGHT: 257.0

NOTE: Although I am losing weight now (down another .2 of a pound today!), someone asked if I was still drinking diet sodas. My reply was "yes" I am drinking Diet Rite which is sweetened with Splenda and is caffeine-free. Yes, I realize this is a "product," I have been allowing it since it is a calorie-free beverage. Perhaps I should have clarified I gave up all low-carb FOOD products--my apologies because I did not intend to mislead anyone in any way.

But one of the comments from Chris got me to thinking (thanks buddy!) that perhaps I should cut it out, too, since it is possible my body has adjusted to treating even artificial sweeteners like sugar. It didn't do this to me in 2004 as I was losing weight, but apparently I am getting some kind of an insulin response to things like Splenda now. Go figure.

Now keep in mind I've tried to give up diet sodas before and drove myself nuts doing it. But I've now been without my low-carb chocolate and other treats for several weeks and I can honestly say I'm doing okay with it. Maybe diet soda will be the same. I'm willing to give it a try along with continuing the Metformin (which, by the way, I am taking with the blessings from my low-carb doctor who has seen remarkable results for his patients who both low-carb and use it).

On the subject of this drug, let me tell you how much I struggled about taking it. I HATE taking prescriptions of any kind because most of the time drugs are overkill when simple changes in diet and exercise can do the same job or better. But my doctor said it was time to take a look at perhaps combining the two methods to control the insulin that's being produced in my body. I already low-carb well (and it'll be even better when the diet sodas are removed starting Tuesday!), so Metformin is simply aiding that process. Perhaps having Dr. Westman come on my podcast show to discuss this would be beneficial at some point. I'd love to see how my weight loss progresses in the next month or two to see what kind of results I'll see.

THANK YOU again for all of your amazing comments. Keep 'em coming! :)

August 10, 2008 Low-Carb Menu

9:00AM
2 slices of mozzarella cheese

12:30PM
Spinach salad with eggs, bacon, cheese, sunflower seeds, and Ranch dressing, mashed cauliflower with butter, broccoli with butter, chicken breast with lemon sauce and capers

8:45PM
Cold chicken marinated in Italian cooked in coconut oil on a bed of salad greens, salsa, mozzarella cheese, and Ranch dressing

CURRENT WEIGHT: 257.2

NOTE: I'm starting to get the feeling that my long-awaited answer to my weight loss stall may have finally arrived in the Metformin I started taking a few days ago. I don't want to get my hopes up too much right now, but I'm now at the weight I have not been able to break through at all since February. As you can see, I'm still avoiding low-carb products to ward off any possible insulin response to those and the Metformin should be helping normalize my insulin response even after a low-carb meal. This idea of low-carbing perfectly and producing no weight loss is not typical--but it's what has been happening to me. That doesn't mean low-carb doesn't work...it just accentuates the individuality we all possess when it comes to our weight. And much of it may not have anything to do with our diet at all! Let's see if this latest solution continues.

August 9, 2008 Low-Carb Menu

11:15AM
2 chicken breasts marinated in Italian dressing and cooked in coconut oil and cut into strips on a bed of salad greens with homemade salsa, Ranch dressing, and mozzarella cheese

3:30PM
Spinach salad with eggs, bacon, cheese, sunflower seeds, and Ranch dressing, mashed cauliflower with butter, small beef patty with cheese, pickle, and mayo

8:45PM
Mashed cauliflower with butter

CURRENT WEIGHT: 260.4

NOTE: In my second day on Metformin, I'm still doing fine. I've suffered none of the gastric side effects that everyone has warned me about, so that's good. I'm looking forward to seeing this produce the weight loss results that others have bragged about. We shall see. I had a great day of eating today and I have been making sure I take my medicine with my food. Chicken returned to my diet today for the first time in a while...it's not that I dislike chicken, but it's just too low in fat for me. To that end, I cooked the chicken in coconut oil--YUMMY! My weight was back down near 260 again today, so I am anxious to see this trend continue.

August 8, 2008 Low-Carb Menu

9:00AM
1/3 pound 75/25 beef hamburger on a bed of salad greens with homemade salsa and Ranch dressing, mozzarella cheese

1:30PM
Spinach salad with eggs, bacon, cheese, sunflower seeds, and Ranch dressing, mashed cauliflower with butter, small beef patty with cheese, pickle, and mayo

9:30PM
Salad greens with homemade salsa and Ranch dressing with mozzarella cheese

CURRENT WEIGHT: 262.6

NOTE: Today was my first full day on the Metformin and I felt just fine. No gastric problems like others have warned me about and it was no big deal taking one in the morning with my meal and one at night with my supper. I'm ready to see this start to make an impact for me within the next week, so here's hoping. By the way, yes this is a drug they give to diabetics, but I do not have diabetes. My blood sugar levels remain VERY stable between 75-100 regardless of what I eat. My A1C is 5.0 and my fasting blood glucose averages 92. Obviously NOT a diabetic. But Metformin can help me control the insulin spikes that seem to be happening to me even after a low-carb meal and that's why I'm taking it. Ideally, the weight will start coming off of me as it did in 2004 in conjunction with my low-carb meals. I was up a pound today, but I don't expect that to continue.

August 7, 2008 Low-Carb Menu

10:00AM
1/3 pound 75/25 beef hamburger on a bed of salad greens with Ranch dressing

11:00AM
30-minute resistance training workout with personal trainer

3:15PM
Shrimp cooked in butter with a splash of lemon juice on a bed of salad greens with salsa, mixed veggies with butter

7:30PM
Spinach salad with eggs, bacon, cheese, sunflower seeds, and Ranch dressing, mashed cauliflower with butter, small beef patty with cheese, pickle, and mayo

CURRENT WEIGHT: 261.6

NOTE: I LOVED making my hamburger meal this morning in a little different way...on top of a bed of salad greens. It turned out wonderfully! I had plenty of fuel for my full-body workout with my trainer today and he beat me up good. Next week he gets me twice on Tuesday and Thursday before my upcoming two-week stint at former "Biggest Loser" contestant Isabeau Miller's FitCamp August 17-31 where I'll be working out for six hours a day. HOO BOY! That's coming soon and I'm a little excited about it since I should lose weight in those two weeks. I'm gonna try to eat more moderate meals and be consistent with that starting as soon as possible. Also, I filled the Metformin prescription tonight and took my first one. We'll see how it works for me. Wish me luck! :) I was back up a little more than a pound today, so here goes.

Wednesday, August 6, 2008

August 6, 2008 Low-Carb Menu

9:30AM
1/3 pound 75/25 beef hamburger with American cheese and 1 tablespoon of mayo

6:00PM
8-ounce sirloin steak with portabello mushrooms, peppercorn, and Parmesan cheese cream sauce, mashed cauliflower with butter, broccoli with butter, spinach salad with eggs, bacon, cheese, sunflower seeds, and Ranch dressing

CURRENT WEIGHT: 260.4

NOTE: I don't know what was wrong with me today, but I was taaaaaard (that's Southern talk for tired). From the time I got up today, I was a little run down and dragging. I tried to fight through it, but the heat didn't help matters either and our air conditioner is on its last leg. So it got up to about 87 degrees in the house today. YIKES! Needless to say, I had to lay down this afternoon and I completely missed eating lunch. Despite that, I got in my calories in the low-carb variety at suppertime with a little twist on my steak today--topped with mushrooms with peppercorn and Parmesan cheese cream sauce. OUTSTANDING! My weight was up slightly again today--yeah, so what else is new? :)

Tuesday, August 5, 2008

August 5, 2008 Low-Carb Menu

9:30AM
1/3 pound 75/25 beef hamburger with American cheese and 1 tablespoon of mayo

1:00PM
8-ounce sirloin steak, mashed cauliflower with butter, broccoli with butter, spinach salad with eggs, bacon, cheese, sunflower seeds, and Ranch dressing

7:15PM
100-minute recreational volleyball

9:45PM
3 eggs with onions, green peppers, and red peppers, pico de gallo, sour cream, 2 bacon slices, 2 sausage links

CURRENT WEIGHT: 260.0

NOTE: Today was my 13th wedding anniversary and it was a good day for my menu. My lunch was a great steak with some mashed cauliflower and broccoli as well as a spinach salad. Lots of great non-starchy veggies with plenty of fat from the butter...LOVED IT!!! After an exhilarating workout playing volleyball, I decided to have a good post-exercise meal and it was oh so delicious! What a fabulous day this was and I couldn't have been more pleased. And my weight was down slightly again today, but I'm still right at that 260 mark. GRRRRR.

Monday, August 4, 2008

August 4, 2008 Low-Carb Menu

9:45AM
1/3 pound 75/25 beef hamburger with American cheese and 1 tablespoon of mayo

2:00PM
Shrimp lightly dusted with coconut flour and cooked in coconut oil served on a bed of spinach leaves with a squirt of lemon juice

7:00PM
Side salad with Italian dressing, salmon steak with garlic butter, broccoli with butter, cheese on top, and 1/2 cheese ravioli

CURRENT WEIGHT: 260.2

NOTE: I wanted to change things up a bit today just for fun by adding in some seafood to my menus. After my morning beef, I decided to eat some seafood the rest of the day. For lunch, I was having a great time making shrimp when I got the idea to cook 'em up in some coconut oil (since shrimp are VERY low in fat). Well, since I was gonna do that, I decided to throw a little coconut flour into the mix for fiber and put these cooked shrimp on top of a bed of spinach. A little lemon juice thrown in there and YUMMY! That was a good meal. Since tomorrow is my wedding anniversary, I took Christine out to the Olive Garden (her favorite restaurant!) to celebrate. I was good and avoided the bread sticks while having Wild Alaskan salmon with broccoli while Christine got the cheese ravioli meal. Just out of curiosity, I tried a half one of the ravioli just to see what it was like now:

I got a little bit of the sauce and meat and then took a bite...YUCK! The marinara sauce was WAY too sweet for my tastebuds and the food just all tasted gross to me. It shows just how far I've come from where I once was. Back in the day, I could have thrown down 10 bread sticks with my big plate of pasta meals. Not anymore and gladly so! :D

Sunday, August 3, 2008

August 3, 2008 Low-Carb Menu

9:00AM
1/3 pound 75/25 beef hamburger with American cheese and 1 tablespoon of mayo

3:00PM
Spinach salad with cheese, eggs, bacon, sunflower seeds, dried raspberries, and Ranch dressing, beef patty with cheese, pickle and mayo, and mashed cauliflower with butter

CURRENT WEIGHT: 261.4

NOTE: I am getting used to this eating less frequently thing and it just feels so much more natural than the every couple of hours thing. The foods I am eating are full of fat with very few carbohydrates. They're satisfying with moderate amounts of protein despite the lower calorie counts than I'm used to. It tastes so good eating this way and I fully expect to see my weight loss get out of this 260 funk it has been in for the past few days...SOON! I was up slightly again by .4 of a pound today, so I'm scratching my head as to why. I'm eating less than 2,000 calories a day, my carbs are low, my protein is moderate--what gives?

Saturday, August 2, 2008

August 2, 2008 Low-Carb Menu

10:00AM
1/3 pound 75/25 beef hamburger with American cheese and homemade salsa

2:30PM
Spinach salad with cheese, homemade salsa, 7 ounces of sirloin steak, and Ranch dressing

6:30PM
1/3 pound 75/25 beef hamburger with American cheese and 1 tablespoon of mayo

CURRENT WEIGHT: 261.0

NOTE: It was a pretty typical meal day for me, although my supper meal at 6:30PM was supposed to be a fuel-up before two hours of basketball tonight. But it was canceled--darn! I've been in a good calorie range for the past week or so (around 1800-2000 daily) and my carbohydrate intake is very nominal (less than 10g daily)--AND STILL NO LOW-CARB PRODUCTS YET! My Ketostix are registering purple which means I'm excreting a TON of ketone bodies. Today my weight was 261.0 which is up slightly from yesterday and relatively the same as it was the past four days. I think my body is desperately trying to figure out what to do with itself because I'm eating perfectly low-carb and we're just seeing a standstill right now. Insulin resistance is futile, my dear body, because I have the power of livin' la vida low-carb on my side! Mwhahahahaaaaa!

Friday, August 1, 2008

August 1, 2008 Low-Carb Menu

1:00PM
7-ounce steak, broccoli with butter, mashed cauliflower with butter, spinach and greens salad with cheese, bacon, eggs, sunflower seeds, dried cranberries, and Ranch dressing

CURRENT WEIGHT: 260.6

NOTE: What the heck happened today? I only ate ONE time. How in the...well, let's just chalk it up to my hunger (or lack thereof). I wasn't hungry this morning and then Christine wanted to go out for lunch. She's the boss, so we went to eat and I had a nice salad, steak, and two non-starchy veggies. I was full the rest of the day which really surprised me. I thought I'd get hungry, but I never did. And I checked with my Ketostix right before bedtime and saw purple. Veddy veddy interesting! My weight stayed relatively the same for the third day in a row, so I'm waiting for that next WHOOSH to happen soon. :D
