May 28, 2009 Low-Carb Menu

10:45AM
2 slices Julian Bakery Smart Carb bread with butter, local farm eggs, cinnamon, heavy cream, Truvia, sugar-free maple praline syrup, and whipped cream
Diet Coke with Splenda

4:45PM
Pepperoni, sausage, bacon, hamburger meat, cheese, a little spaghetti sauce
Diet Coke with lemon

8:15PM
Vanilla Carbsmart ice cream, strawberries, Truvia, whipped cream
Diet Coke with Splenda

NOTE: When we went to the Whole Foods store the other day, Christine and I saw some big beautiful strawberries at the on-site farmer's market in the parking lot. It's funny how excited I get seeing fresh strawberries now because I used to think they were disgusting prior to my low-carb lifestyle. I don't know if it was the texture or the taste that I used to abhor, but now these are just about the only low-carb fruit (along with blueberries) that I'll proudly put inside my mouth anytime. Sprinkle a little Truvia and whipped cream on top and/or mix in with some low-carb ice cream for an outstanding low-carb treat.

A few weeks ago I bought my wife some fresh blueberries and strawberries from the local farmer's market. She could not stop raving about them! I guess it's a good year for berries!

I've been adding a little bit of LC-friendly fruit back into my diet now that I'm approaching my goal weight. One of my favorite combos is cantaloupe slices wrapped in prosciutto.

Have you ever tried that before?

I've had prosciutto before, J.P., but never with cantaloupe. Will DEFINITELY have to try that soon.
