June 21, 2009 Low-Carb Menu

NOTE: Got up bright and early today to head back home to South Carolina after a quickie trip to Pensacola, Florida to see my sister and mom while attending my 20-year high school reunion. It was a little surreal not seeing my brother Kevin or hearing his big hearty laugh one more time. This was the first trip back since he passed away from heart disease and morbid obesity in October 2008. I still miss him so much and all the emotions and thoughts of my brother came flooding back being home again.

Our trip back home went well and I'm appreciative to a restaurant chain like Hardee's for offering low-carb menu items for us to enjoy while traveling on the road. Otherwise, you're just stuck with a whole lotta nothin'! I stopped at so many convenience stores looking for an Atkins bar or something along the way and 90% of them didn't even have sugar-free candy. That's pretty pathetic! But you do what you can and NEVER settle for garbage just because there's nothing available. You move on to the next store until you find what you need. That's what commitment to this permanent and healthy lifestyle change is all about.

When we got home, I was pretty hungry and decided to make something I haven't had in a long time--Dreamfields low-carb pasta. I recently interviewed the president of Dreamfields Foods and look forward to sharing that on my podcast show coming up in August. It's good to be home again!

Welcome home! 20 year reunion? You're still a puppy!
I know it's hard to miss someone. I still dial my Mother's phone number to tell her something... years after she's been gone.
Yes, also on the road trip food. Ya gotta be prepared!

How does the LC pasta taste? Do you feel pretty well after eating it? Sometimes I can tell if a food is good for me based on how it makes me feel - digestive system wise and energy wise.

You know, I felt good after the Dreamfields pasta. And the president of the company told me something really interesting about the cooking of this product that I think will help a lot of people who choose to consume it. It can make the difference between it being perfect or a disaster for your low-carb lifestyle. Can't wait to share about it on August 6, 2009. :)

Jimmy, I'm glad you enjoyed your 20-yr reunion. My class held its 20th reunion last yr. I wasn't able to attend, but I was able to reconnect with many of my classmates through our ning network. The thing that struck me most was the realization that 20 yrs is so NOT a long time. Such benchmarks in our lives make it clear that the only time to lose weight and/or make improvements in one's life is NOW.

Yes, the beauty of now.

Oh, and I want to know the new information on cooking Dreamfields NOW. :-)

It really is amazing how fast the time has gone by, OnPoint. I moved away nearly 23 years ago and it only seems like just yesterday I was a short, fat kid growing up there. What's really funny is more people talked about how much taller I am now at 6'3" than I was as a freshman/sophomore when my height was only about 5'9". I guess they just assumed when I got taller my pudginess just stretched out. :D

On the Dreamfields thing, I love to tease. But I'll give you a hint: READ THE PACKAGING AND FOLLOW IT EXACTLY. :)
