June 23, 2009 Low-Carb Menu

1:15PM
1 cup greens with tomato and Ranch dressing
Baked bacon cheeseburger with tomato sauce and cheddar cheese
Beef meatballs with provolone cheese and tomato sauce
Diet Coke with lime

7:00PM
Beef meatballs with provolone cheese and tomato sauce
Diet Coke with Splenda

10:00PM
2 slices of Julian Bakery SmartCarb bread with low-carb chocolate sauce (3 blocks of unsweetened 100% cacao, butter, heavy whipping cream, and Xylitol)

NOTE: Isn't it strange after you get back home from a trip that knocks you out of your "normal" rhythm of life how difficult it is to get back into it again? The same is true with what you eat. Today I just wasn't feeling hungry at all until early afternoon and it just works out that way sometimes. It's not a bad thing necessarily to go without eating a meal that most people call breakfast prior to noon, but it's sorta looked at as odd in our three-meals-two-snacks-per-day society. If more people simply ate as a response to hunger rather than because of what the time is on the clock, then perhaps we wouldn't have an obesity problem anymore.

If what you say is true, then why are you still obese? Just tryin' to wrap my head around the issue. No offense meant personally.

THANKS Pooti and I appreciate your spirit of learning and an open discussion of an outstanding topic! To paraphrase a former president, I guess it depends on what your definition of the word "obese" is.

If we're talking about BMI, then absolutely I am obese. But I'm less interested in how much I weigh on a body mass index scale and much more interested in the health impact of the way I eat. And according to my most recent health markers such as HDL, triglycerides, LDL particle size, and the like, I am healthier than I have ever been in my entire life.

Would I like to weigh less than I do right now, Pooti? Absolutely. But I'm not gonna obsess over my weight as long as I am eating a healthy diet--namely a low-carb lifestyle. And that's what I've been doing for 5 1/2 years and counting.

Thank you again for your honest question. I sincerely appreciate it.

Jimmy,
1.) You ARE eating the typical 3 meals a day but they are just delayed. Take 5-6 hours off each mealtime and bingo!
2.) You are over-relying on labs as complete proof of health.
3.) Your need for sweet at every meal probably is psychological. I know lots of adults who never feel the need for sweet. You shouldn’t have been “miserable” during your sweet-free experiment. Maybe you parents used sweets or sweet withholding as reward/punishment.

Coyote, I appreciate your response. However,

1) There are some days I only eat twice and I hardly ever consume more than three total meal or snack times combined in a day. I credit the high fat and protein intake in my food selections for this.

2) What else should I be relying on to prove to me that my health is in order other than lab reports? What other reliable factors are necessary?

3) While I don't think there's anything at all wrong with desiring something sweet, I don't consume sweet-tasting foods at every meal. Many of my breakfast meals are simply eggs, butter, cheese and bacon. No sweet there. My lunch and supper menus consist of beef, cheese, bacon, green leafy veggies, and other non-sweet foods. Not sure what you're talking about.

The sweet-at-every-meal accusation is in reference to the diet soda, I think. Just another jab.

Anyway, about not eating until later in the day, I'm all for not eating when not hungry, but I've been under the impression that it's important to give a body something within two hours of waking (as you were doing with the raw milk). Cortisol levels are highest in the a.m.; without food, the body will catabolize muscle for fuel to keep functioning.

Ah, I was thinking food. Forget about the red herring argument about a calorie-free diet soda. I used to think I needed to consume something within a few hours of waking as well, Didirina, until Dr. Eric Westman said that's not really necessary. So I don't worry about it anymore.

Jimmy, if you can go 15 hrs w/o feeling hungry (overnight - not eating a meal until after 1 p.m.), you have to admit it was kinda odd to be hungry at 10 p.m., only 3 hrs after your evening meal. Did you eat just a small snack-sized portion of meatballs and cheese? Do you think maybe something in the meatballs created an insulin response, causing hunger?

Odd perhaps, or maybe I didn't eat enough in that dinner meal. Either way, I was hungry and responded by eating something I wanted that was low-carb.

Well, if not eating first thing is no big deal for Dr. Westman, then that's one less thing for me to be concerned about:-) It would make sense that high cortisol levels would be more of a problem for those eating the SAD as their insulin levels would also be higher.

Also, I just Googled low carb and high cortisol and found a piece about low carb diets ameliorating the negative effects on the body due to sleep deprivation, which included raised insulin levels and thus elevated cortisol levels (although we still need our rest, of course).

I always read your menu's, Jimmy. I will say that you do LC your own way and that you don't champion it. I do not know where your Doctor gets his info but there have been numerous studies that have shown the importance of eating within two hours and eating eggs. One thing you do almost vigilantly, another that you rarely do.

What have the studies shown??

1. eating eggs for breakfast helps hinder appetite and on average you will consume less food

2 waiting to eat causes hunger ramp..ie once you start eating it is hard to stop.. and is compounded by sweets.. (only in your head though)

I would love you to try to eat 3 meals a day and kick the sodas for a month.. and see if this kick started your metabolism..

I personally don't consume soda often as the carbonation.. is not good for you if you don't half enough calcium in your diet to let it go through kidneys.. there is truth to the saying that Coke eats your bones hehe

This post is not a jab.. just my opinion and something that I would be interested in seeing..

Jimmy you love sweets, no problem there..try curbing your sweat tooth with strawberries and heavy cream.. for a month..

I would love to see the results these changes..
