June 4, 2009 Low-Carb Menu

10:00AM
3 local farm eggs cooked in butter with Colby Jack cheese and tomatoes
Diet Coke with Splenda



3:30PM
Grass-fed beef stroganoff (grass-fed beef, sour cream, Ranch dressing powder, parmesan cheese, cheddar cheese, garlic salt) with 1 slice of Carb One Garlic Bread (eggs, almond flour, flax seed, carrots, garlic, salt)
Diet Coke with Splenda

8:45PM
Marcona almonds and Chocolate Carb One Muffin (eggs, almond flour, flax seeds, Splenda, chocolate)
Diet Coke with Splenda

NOTE: I've REALLY been enjoying the grass-fed beef I've been eating this week and today I wanted to make something a little different that I haven't had in a very long time. Growing up we used to eat Hamburger Helper and Rice-A-Roni meals a lot and so I decided to put my own low-carb twist on an old favorite flavor today. Beef stroganoff is an INCREDIBLE meal and it was so super-simple to make into a low-carb delight. That stuff was so filling and delicious and there was even enough for leftovers tomorrow! WOO HOO!

Remember, I told you about stubbing my toe yesterday. Well, here's a photo of the damage I did:



EWWWW, I know! It is still swollen and heavily bruised. I think I probably fractured it somewhat, so I'll be taking it easy while it heals. THANKS to everyone who shared concerns about it.

Ye-ouch! That looks like it hurts. Some ice will help with that if you apply it within the first 24 hours after the injury. After that, a hot towel would be beneficial to increase the blood circulation, but if the swelling continues, discontinue the heat until it subsides. You might want to get it checked out, too.

By the way, your reaction to how awesome grass-fed beef is was pretty much the same as mine. That stuff is gooood~!

I put the ice on it after it happened, but I didn't think about the hot towel. The swelling is still there and the bruising has actually gotten darker and spread along the inside between the toes. I'm holding off on getting it checked since I don't have health insurance. I appreciate your suggestions!

Grass-fed beef is da bomb! I'm gonna get some more tomorrow at the farmer's market. WORTH EVERY PENNY I pay for it!

If your toe is broken, a doc won't be able to do anything anyway, unless the bones are really misaligned. Is it crooked? I know that toe injuries are really painful; I smashed the little toe on my left foot and couldn't wear proper shoes for quite awhile.

That's right, Didirina! I wouldn't see a doc about this anyway because I'm not in such excruciating pain that I can't handle it. No crooked toes for me either. We'll just deal with it. :)

Yay! on the Grass-fed beef. But just so you know... the "beef" (aka: the COW - an animal with a soul, feelings and a life) is KILLED, regardless of if the poor thing was afforded some time in the grass or not. Think about it. These adorable, loving creatures are KILLED inhumanely so we can satisfy our appetite. How does that make you feel?

I appreciate it, Rian! But I'm not at all worried about that cow that was killed to be my sustenance. Only humans have a soul. Animals were made to be God's healthy foods for us to consume...and I do my part! :)

I believe that animals do have souls. Get to know that animal well enough, and you'll see it. However, plants have souls too. They can feel, love, and hurt, just like we do, and this has been scientifically documented.

To quote one of my amazing teachers, "Do you think that vegetable was making all of those nutrients and all of that energy for you?! No! It was making it for itself, and you killed it and stole it! No matter what diet you follow, you are a thief and a murderer. Unless you're a fruitarian. In that case, you're just way too involved in plants' sex lives."

It's just the circle o' life, baby. ;)

Ouch! I KNOW how much that toe can hurt. I broke mine last year slipping on some water on the floor when getting out of the shower. It was suggested to "tape it to it's buddy" (the toe next to it) and take Advil on a regular schedule. The Advil helped but when I taped mine up and then went out in the heat it just swelled up and hurt worse. Anyway, hang in there, it gets better but itf it is anything like my toe you may have a knot on it forever. Aren't feet just lovely! LOL
