NOTE: I love a good challenge and I've been challenged by one of my menus blog readers named Jade. This person wanted to see me strive to reach one of two specific goals to get to "healthy" (although I consider myself healthy already) according to the standard of getting your waist size to no more than half of your height or my weight reduced to 200 pounds. Since I am 6'3" tall, or 75 inches, that means my waist size should be 37.5 by this definition. Currently my waist is 42 and I'm happy to take on this challenge head-on. Keep in mind I still deal with quite a bit of loose skin in my abdomen and very high bone density, so the goal weight is a little more challenging than it seems. But I'm game and will pursue this starting in April. The waist size will happen LONG before the goal weight of 200 pounds, so that's what I'm pursuing first. It's on!

NOTE: It was another "light" food day for me despite my volleyball tonight. I keep expecting to be more hungry since coming off of Metformin, but it hasn't happened. That's a GREAT sign because it means my body is producing the exorbitant amounts of insulin like it used to. Of course, that's what livin' la vida low-carb does for your body! :D

On Saturday, I went to see Dr. Doug McGuff who wrote a fabulous book called Body By Science I featured on my podcast show last week. He said a lot of things that made sense and one in particular stood out to me.

He noted that a lot of people who want to shape and mold their bodies into a specific look, they seek out people to emulate. For example, if you like the long, lean look of a swimmer like Michael Phelps, then you'd take up swimming to get that body, right? Dr. McGuff says that is dead wrong. While swimmers come in all shapes and sizes, the top athletes in that sport all tend to look the same. Why? Because their body fits the sport they are doing--not the other way around.

It's an interesting concept to think about because so often we hear informercials for fitness products that will give you the body you want when the reality is your body will only go as far as your genetics will allow it. As much as I'd love to look like Billy Blanks, I could never do enough Tae-Bo to get into that kind of shape. That's not to say my efforts in pursuing such a lofty goal would be in vain because I think we could all stand to be in better shape than we are no matter how fit we are.

At the same time, anyone who places an unnecessary goal of trying to look a certain way, be at a certain weight, achieve a certain fitness level that isn't in the cards for them is simply setting themselves up for a big time failure. To me, that's much more unproductive in the long-term than accepting that your body has certain limitations and then doing your best to reach those by eating a healthy low-carb nutritional approach along with focused commitment to YOUR body's fitness. If we could just get more people to start caring about this, then the weight and health problems people suffer from now would be a thing of the past.

NOTE: Today was one of those days when I just didn't get hungry until late in the afternoon. That happens sometimes and I don't force the issue with food if I don't need it. And so I didn't eat until 4:30PM. My stomach never growled the first time, so it's all good. When I felt I needed some food, I ate. Nothing earth-shattering about this and it is rare for it to happen. Maybe once a quarter for me.

I was experimenting in the kitchen again tonight and came up with a tasty low-carb treat with some real cacao baking chocolate, stevia and some leftover low-carb wraps in my fridge (trying to finish them up to get them out of the house if I begin a Paleo program soon). I cut up the wraps into little bite-sized pieces and dropped them into a saucepan with the melted chocolate mixture. Allowing this to set in the refrigerator created a pretty presentation and delicious dessert. It might have been better if I toasted the tortillas before covering them in the chocolate, but that's the fun of coming up with your own recipes like this. Try it sometime!

NOTE: Today I had the privilege of interviewing one of the modern pioneers of the "hunter-gatherer" diet known as Paleolithic eating--Dr. Loren Cordain--for an upcoming podcast show. He's a very articulate and well-versed proponent of getting back to the diet of our original ancestors and I learned quite a bit about this particular way to eat low-carb that differs somewhat from the Atkins diet I've been following for most of the past five years.

One thing Dr. Cordain mentioned was that cheese and dairy consumption is toxic for the body and does more harm than good. Now that will be a shock to a lot of low-carbers who have included this acceptable low-carb food in their diets on the recommendation of any number of low-carb diet books and experts. I now understand why some of the people who comment here (who happen to follow a Paleo diet) have eschewed my consumption of cheese. Very interesting!

I played a little devil's advocate with Dr. Cordain since he said dairy was so toxic by asking why nuts are allowed on his plan. Listen in for his answer on the April 23, 2009 edition of "The Livin' La Vida Low-Carb Show with Jimmy Moore." Overall, I think his plan is a good one for people to follow because it would move them in a better direction than the Standard American Diet (SAD) that dominates our society today.

Am I ready to go full-fledged Paleo? I'm thinking about POSSIBLY (lest I'm misunderstood as misleading anyone into thinking I'm definitely going to do this) trying it for a period of time to see how I do. I know my Paleo friends would love to see this happen and I'm giving it serious consideration. It's basically gonna be Atkins without the dairy products like cheese or cream, more organic and grass-fed foods (although I eat these as much as I can), and no artificial anything. Let me mull it over a little more and I may just start doing it spontaneously when you least expect it.

NOTE: A couple of people have brought up the fact that the work I do on the Internet about low-carb living is now my business and it's true. I've been doing this full-time as a career since October 2006 and I have worked very hard on over the past few years to build it up into the very best source of low-carb diet and health information online today. When I lost my weight in 2004, I considered it a true miracle from God that I was able to shed 180 pounds simply by making some changes in my diet. I never would have believed it had it not happened to me. Giving others the information that helped me get my life back is my way of paying it forward. And that's what I do.

As my blog and other projects grew in popularity and numbers, naturally I have parlayed that into an attractive source for advertisers who provide relevant products for people following a low-carb lifestyle. If you only knew how many potential sponsors I have REJECTED because their products are absolute garbage, it would astound you. I even turned down a HUGE monetary offer from a company who was hawking some carb-blocker product because I know it's something you DON'T need when you are livin' la vida low-carb. I live my life by integrity and with a moral compass and I'd never willingly be involved with any business that is not something I could fully embrace.

The bottom line is I provide a valuable service to a large number of people each day and they can choose to take the information or leave it. I invest countless hours into everything I do and any financial profit that comes from that hard work is because of my willingness to share so freely, honestly, and personally about my experiences on the low-carb lifestyle. People are not forced to read my stuff and have the right to look elsewhere on the Internet if I am not providing them with anything meaningful in their life.

However, I am grateful to the tens of thousands of visitors I receive each week who tell me that what I am doing is making a difference in their lives. And THAT is why I do what I do. Yes, it's nice to be compensated in small ways here and there with sponsors and generous donations from those who appreciate my work. But my main focus is on helping people the best way I know how--giving them solid information, useful tips and advice, encouragement to try and stay on low-carb, inspiration that shows them they can do it, and all of it packaged in an entertaining way. NOTE: I saw some baking chocolate in the grocery store the other day that caught my attention. It was 100% unsweetened cacao which is as pure chocolate as you can possibly find. The only problem with this is it is so bitter for chocolate that many people are turned off by it. And I was a bit concerned that I might not like it either. However, I added in some stevia-based Truvia to it and drizzled it on top of some omega-3-rich walnuts and set it in the refrigerator for an excellent healthy low-carb snack. LOVED IT! You should try it out sometime.

NOTE: Since I came off of Metformin about a week ago, I've been looking for anything suspicious that might happen with my body. It's probably too soon to tell, but I have noticed something odd this week that I wanted to let you know about. And it's kinda gross, so I apologize in advance for being so descriptively graphic. It's about my poop.

Yes, I've been "going" more often the past few days although my food choices are just about the same as they always are. I know when I was taking Metformin I would have a propensity to go to the bathroom more often than normal some days. So it was a little strange to see this increase in frequency of my #2 visits. And the poop itself is a different consistency than normal--it looks to be "fattier" and smaller little pellet-sized than the typical clean look. This is nothing like what happened in 2004 when I was losing weight and it sometimes came out yellowish there was so much fat in it...SORRY! I warned you I'd be descriptive.

Maybe this recent change in frequency and consistency could be attributed to the addition of the Premium MCT Gold oil I started taking on the advice of low-carb neurosurgeon Dr. Larry McCleary after my podcast interview with him earlier this year. He said this is a sure-fire way of spilling ketones into the body which is good for brain health. And this is a much more effective way to get 100% pure medium chain triglycerides (MCTs) into your body than coconut oil which Dr. McCleary says only contains about 5% MCTs.

So far, I like taking the MCT oil because it has a naturally-pleasant flavor in the tablespoon dosage. I'm consuming one tablespoon in the morning and one at night (it recommends 2-3 Tbs for people over 190 pounds). I am starting off on a smaller dosage to make sure I'm not gonna upset my stomach, but I have to wonder if this change in my poop has anything to do with the MCT oil. We'll keep an eye on it and let you know.

NOTE: I just LOVE playing volleyball. It's especially fun when you have other players who understand the value in bump, set, and spike. I've been playing volleyball at my church gym on Tuesday nights for years and enjoy the experience. But one of my Tuesday night volleyball buddies invited me to come play at another gym on Monday nights last week because it's a bit more competitive than our usual games. Boy, was he right! But I enjoy the competition since setting is one of my specialties. You'd think being a 6'3" tall guy that I'd like spiking, but not really. It's okay, but I get more thrill out of setting someone else to spike it or even blocking a shot. All that running and jumping and moving around is an AMAZING workout, too. I sleep like a baby after a good hard night of this kind of exercise.

Today we took it easy and went to see the new Nicolas Cage movie "Knowing" since Christine is a sci-fi fan. I'm not one to get into these kind of movies and it was indeed a weird one. But for some reason it was an appealing movie to watch even if I didn't fully understand what the heck was going on with the plot. A nice subliminal spiritual message at the end, too. That's always a pleasant surprise.

I'm progressing along quite well with my new book and only have about 6 more chapters to write (there are 21 "lessons" I'm sharing) to be finished with the rough draft. Then I'll hammer away at it for a few weeks to fine tune the message, proofread it until my eyes go blurry, and give it one last look through before sending it to my publisher. I'm hoping to have this finished by May. Wish me luck!

NOTE: When I woke up today and went outside, I was shocked at what I saw all over the hood of my recently-purchased Hyundai Sonata--CAT FOOTPRINTS! Well, it gave me an excuse to get out and soak in some sun on a gorgeous day for the first day of Spring to give that car a good washing. She's lookin' good now!

I enjoy the regularity of eating scrumptious low-carb foods that fulfill me and are pleasurable. NOTE: One of the best parts about livin' la vida low-carb is being able to experiment in the kitchen with the delicious foods you are able to consume to come up with dishes you may actually enjoy as part of a healthy lifestyle. While I've heard of some really strange things people do with things like frying radishes and celery root (still not ambitious enough to try any of those things yet!), I just kept it simple with two specific experimentations today.

The first one was with the mozzarella cheese. I LOVE fresh mozzarella and enjoy the taste of it in salads, with eggs, and rolling up with delicious meats. But what would happen if you diced it up and put it in a skillet to toast up? Well, I wanted to see for myself and so that's exactly what I did for my 6:30PM meal. Although there was a little smoke in the air as it was cooking, the payoff was when I took my first bite of this new way to use mozzarella cheese--OOO LA LA! If you've never cooked up mozzarella cheese until it is brown on both sides, DO IT! You'll love this amazingly simple low-carb dish.

The second one was when I wanted to make a little sweet low-carb treat using some cream cheese, unsweetened dark chocolate cocoa, and sweetener. I had thought about doing a cheesecake of sorts with the cream cheese, but wanted to have something with chocolate in it. I mixed in the cocoa powder and added liquid Splenda, DaVinci syrup, and a little stevia and started stirring it up. To my delightful surprise, the consistency came out like a spreadable frosting for a cake or something and one taste was all I needed to know this would be an incredible low-carb, sugar-free treat to eat anytime I wanted something like this. I'll probably have it again tomorrow with some kind of nut.

You gotta love this wonderful way of eating that gives you such choices for controlling your weight and health. I SURE DO! :)

NOTE: Today was the first day since coming off of the Metformin I had been taking since November 2008. Although I don't have diabetes, I discussed with my low-carb doctor (Dr. Eric Westman) about taking this drug to help complement my low-carb nutrition to produce weight loss. The past four months have been interesting taking this prescription drug with some of the side effects it produced--diminished hunger, stomach pain and knots, gastric distress, etc. It wasn't very much fun taking it which is why I wanted to come off of it to see how my body would react.

So here we are. I'll be monitoring my weight and health now that I've voluntarily come off of the Metformin. I am talking with Dr. Westman about whether I should continue again at some point, but I'd prefer not to take any drugs if I don't have to. The jury is still out on whether I need it or not, but we'll let you know about it here.

NOTE: One of the comments left on my menus blog yesterday asked if I was aware of what he describes as "a rather scathing discussion of your menus on a zero carb forum." Yes, I'm quite aware of this thread that started out late last year as an anti-low-carb products discussion and quickly morphed into a "What's The Fascination With Jimmy Moore" chat instead. I find it intriguing that people are interested in what an average guy from South Carolina eats on a daily basis.

To be honest, I've only been there a couple of times to see what all the fuss is about and I don't see anything productive or encouraging coming out of people like them who would ridicule and scorn someone else who is willing to post their menus for all the world to see. The man who started that forum used to be a friend of mine who I brought on to serve as a moderator at my own low-carb forum last year. He did an outstanding job in that role and everything was going along fabulously.

But when I asked him and others to tone down the references to zero-carb since my forum was about low-carb and even encouraged my friend to start his own forum to talk about that subject, him and his followers apparently think I booted them off of my forum and now they hold resentment against me for that. I welcome them to continue talking about healthy low-carb lifestyle as long as they don't reference zero-carb. Unfortunately, this doesn't sit too well with many who frequent the new forum and thus they have rationalized openly ridiculing me as they have been doing. I'll be sharing more about this in a chapter of my new book I'm writing about my low-carb dieting and blogging over the past five years.

I learned a long time ago when I first started blogging that you can't put much stock in the negative comments that are made about you by people on the Internet. People write things on forums and in comments at blog that they'd NEVER say to your face. My wife Christine gets very upset when people make disparaging remarks about me, but I explain to her that she shouldn't take it so personally--because I don't. I realize we all have different ways to communicate online and some are more blunt than others. That's not being mean, that's just a difference in style.

Take regular reader and commenter Chris, for example. This man has lived what he talks about and does a brilliant job sharing his experiences through his outstanding "Conditioning Research" blog. He has expressed open frustration with the way I eat since it does not line up with the Paleo-styled diet he promotes. And yet he continues to come back here to offer his comments often. Yes, he has joined in on the conversation at that other forum, but he offers constructive comments designed to help, not hinder. I can appreciate someone like him even when he disagrees with me.

But the same cannot be said for everyone who leaves feedback or discusses my daily menus at that other forum thread. I don't know if these people are just jealous of what I am able to do for a living or whether they think they are somehow more deserving of success than I am, but the holier-than-thou attitude they embrace apparently gives them the sense that they are the moral authorities and final arbiters over diet and health in the world. I've never understood people like that who desire to be "nannies" over every minutia of the life of someone else. But they're not worth worrying about.

At the end of the day, my purpose in blogging and sharing about the healthy low-carb lifestyle right now cannot and will not be distracted by those who hold ill will towards me for whatever their reasons. The work I do at my blog and podcast show each week is much too important to so many people for me to get upset by some annoying gnats flying around my head. I'll keep doing what I know is right and sharing with people why healthy low-carb living is probably one of the most important changes they could ever make in their lives! We'll leave the negative naysayer "nannies" to their own destructive devices.

NOTE: Today was one of those days when I only needed one basic meal to satisfy my hunger needs. Sure, I had a small amount of that wonderful recipe from Linda a couple of times (and finished it off!) today, the main meal was at midday and that's it. I don't know why my body can get away with eating once and not need to eat again, but that's the way it was today.

One of my Tuesday night volleyball friends invited me to come play at another church on Monday nights since it is a little more competitive than what we usually play. Since I enjoy the competition and skill aspects of playing volleyball, I was game for it tonight. We ended up playing for nearly three hours and it was AWESOME! I was sweatin' like a dog and my ankles were sore when we were done, but I think I'll be going back to play there again next week. We're not having volleyball at my church this week, so it was nice to get in some playing time this week.

When I got home from volleyball, I thought about eating something, but it was 10:30PM. My body was sore from playing and all I wanted to do was just sit on the couch to relax. Within an hour I was ready for bed, so I didn't eat anything. Something tells me I might be a little more apt to eat a few times tomorrow after a day like today.

NOTE: It's Sunday and that means busy busy busy for me in the morning. So with some leftovers from the night before, I had some more of that delicious low-carb breadless pudding recipe for breakfast this morning and I ate it cold. Not bad at all! And it kept my hunger in check all through church this morning until we could eat lunch.

When supper rolled around, I decided to have something a little different from the norm--SPAGHETTI SQUASH!!! Oh my gosh, if you've never had the privilege of eating this stuff, it is utterly amazing. Poke some holes in it and microwave the veggie for 20 minutes. Take it out, cut it in half, remove the seeds and then cook for 10 more minutes. Using a fork to make the "noodles," add liberal amounts of butter, cheese, and garlic salt and VOILA! A healthy low-carb fiesta for your tastebuds that will keep you full and satisfied for hours on end. YUMMY!

Yes, I probably went over the Induction level of 20g carbs today with the amount of vegetables I ate, but that's okay. I challenge anyone to tell me my menu is unhealthy. One quick glance and all you'll see are nutritious nutrient-dense high-fat, low-carb foods that will keep my weight in check and health at optimum level. What more could you ask for from your diet? This truly is the high life and I'm proudly livin' la vida low-carb. How about YOU?

NOTE: The youth at my church had a hot dog/auction fundraiser this evening in the church gym. People made up big baskets for others to bid on and raise money for their mission trip this summer. Before the event started, the youth choir director said it cost $6,000 to charter a bus for a week and wouldn't you know it the amount of money we raised for them was nearly $6900! God is good.

Of course, the meal they served wasn't exactly the kind I'd typically eat for a meal. Hot dogs with chili on buns, potato chips, dessert and sweet tea--YUCK! But when you are livin' la vida low-carb, you improvise like I did today and make it low-carb. Ditching the bun, chips, and sweets, I had a nice little snack meal to hold me until I could get home for some real food. It was a fun experience and rewarding knowing we did a small part to help the kids share the love of Christ with others this summer.

Chris expressed concern about the "breadless pudding" recipe from Linda's low-carb recipes web site yesterday. If you look at the ingredients in it, you'll see there's eggs, cottage cheese, heavy cream, etc. It's an OUTSTANDING recipe for people wanting something a little sweet for their healthy low-carb lifestyle and I'm thankful for places like Linda's web site and people like Dana Carpender and Judy Barnes Baker who are out there creating some truly amazing dishes for those of us choosing a low-carb nutritional approach to eating.

Yes, I have my critics and that's perfectly fine. The book of Proverbs in the Bible talks about what kind of man can accept criticism and rebuke and what kind cannot. The man who chooses to get upset by those who are pointing out what they see as faults is described as a fool; but the man who graciously accepts the chastisement and correction of his peers as a means to improve himself is considered wise. For me, I'd rather be in the category of the latter as I strive to be every single day than in the former any day.

NOTE: Who says Induction has to be monotonous and boring? Sure, your food choices during this most restrictive phase of the Atkins diet where you keep your carbohydrate intake to 20g daily are somewhat limited, but that means you have to get a little creative.

Take, for example, my afternoon snack idea to come up with a homemade low-carb Coke float. By pouring some Coke Zero (or your favorite diet soda) on top of some heavy whipping cream, you have a very delicious and satisfying treat!

And perusing around Linda's Low-Carb Recipes web site I found that delicious dessert that contains Induction-approved foods like eggs, heavy cream, sugar free DaVinci syrup, cottage cheese, and cinnamon. It didn't come out perfectly, but it was yummy enough to satisfy my desire for sweet.

Even on Induction, don't EVER lose your creativity. It will keep you on the straight and narrow as you make yourself healthier and thinner than you ever thought possible.

NOTE: I was on Atkins Induction to the core today. Piece of cake. Anybody can eat this way and LOVE it! They say you're so restricted when you go on the Induction phase of the Atkins diet, but I've never understood how unlimited full-fat meats, eggs, and butter along with a limited amount of full-fat cheese and dairy and non-starchy veggies can be ANYTHING but one of the most delightful ways to eat on a diet EVER!

When I did this in 2004 for the first time, I felt like I was cheating because I enjoyed all the foods I was able to eat on a weight loss plan for the first time ever. And that is one of the main attractions of low-carb living--being able to eat like a king following a proven plan for success. And even MORE exciting than the weight loss is what you see happening to your energy levels and your health markers like blood pressure, cholesterol, and blood sugar. People are AMAZED when they find out how you did it and it is a testimony to this incredible way of eating we all love and enjoy.

I was just speaking with someone the other day when I was out in the community who saw my recent appearance on local television (see Part 1 and Part 2) and she told me how my transformation was incredible to her. I thanked her for sharing her feedback and urged her that the same could happen for her if she would start implementing some of the same diet strategies that I did. It was a delightful conversation and she was amazed at all the wonderful variety of foods you could eat that nobody ever told her were good for her body. She thought (as most people do) that she had to cut the fat, but she left that day empowered with the knowledge that carbohydrates were causing more harm to her body than dietary fat.

This is how we make the message stick. Live our lives for all the world to see, ignore the negative naysayers who tell us eating fat is gonna kill us, and reap the whirlwind of health benefits that await us on the other side. Although we may have our disagreements within the low-carb community about what constitutes a healthy low-carb diet, none of us would ever argue that eating a high-carb, low-fat diet is a healthy alternative. We know from personal experience that a truly effective way to lose weight and experience unbridled health success is by consuming a high-fat, moderate-protein, low-carbohydrate menu each and every day. "...you are misleading your readers--especially those that are new to low-carb eating."


If you are new to livin' la vida low-carb, in the midst of losing, or maybe you've been very successful at low-carb living for several years like I have, then listen up. I'd like for this to be an invaluable object lesson for you today. It could very well help you in the future when you encounter criticism like the examples I shared above.

Quite a few people have e-mailed me asking why I put up with and post the negative comments that people have about me and my menus. They shared how vicious and cruel these people are being and that I shouldn't allow such commentary to appear on my blog. But I have a different philosophy about these comments. While some of them may very well be anti-Jimmy Moore for whatever personal reasons they have against me, I honestly believe most of them have my best well-being in mind when they share.

Granted, there are ways to get your point across without resorting to language or words that look like you are looking down your nose at someone in disgust. But not everyone has the writing talents to convey such a message in that kind of tone and instead they just write whatever is on their mind. With that in mind, I never take comments at any of my blogs personally, although my wife Christine gets very upset whenever people share what she believes is unfair criticism about me. I can understand why.

I learned a long time ago that people will say things on the Internet that they would never even dare share to someone face-to-face. It could be the whole anonymity thing being online, but people are a lot more aggressive and outspoken when they don't have to look at the person in the face to tell them the message they are writing in a comments box on a blog. That's why you'll not see me get upset about anything someone write to me. Instead, I'll politely respond and share my views on the issue and move on. That's the way blogging communication works and I don't have any problem with it.

This week I recommitted myself to going back to an Induction-level of carbs (20g daily) and I have honored that commitment. Some say I need to do an Atkins Induction for the challenge to be "real" with my commitment, so I'll tell you what--for the next two weeks starting on Thursday, March 12, 2009, I will do Atkins Induction. I'm always up for a challenge even when it's unnecessary. But I'm happy to show others who are new to this healthy lifestyle change how easy it is to live this way of eating even in what is supposedly the most restrictive phase of the diet.

As for this business that I'm still fat, I can live with that. For three decades of my life, I walked around in the body of an ever-increasing morbidly obese man. That Jimmy Moore who was the "fat kid" in elementary school, the awkward pre-teen trying to figure out where he fits in life in middle school, the shy anti-socialite in high school, the let-it-all-hang-out college student, and trying-to-find-his-way young adult who allowed himself to get up to 410 pounds before 2004 has done more to improve his life in the past five years by embracing the healthy nutritional concepts of low-carb living than anything else he could have done.

Is my body perfect? Not by a long shot. But I'm still in the game, working my way through the challenges of life, and never EVER losing sight of the big picture that I'm far better off now than at any point in my life and nobody will ever take that away from me. Newbies, ongoing weight loss participants, and long-time low-carbers, be encouraged today that you are doing something absolutely incredible for yourself each and every time you wake up and decide to start livin' la vida low-carb for another day. It's a privilege to share in this experience together with you each day!

NOTE: For the purposes of this Induction-level of carbohydrates I am consuming starting yesterday, my goal is to eat no more than 20g carbs daily. There will be some who say that low-carb wraps are not allowed during the Atkins Induction phase and they'd be right. Oftentimes, people start on their own version of the Induction plan and eat a bunch of meat along with a 20g carb food of their choice (like a small sugary dessert) and think that is being on Induction.

But the quality of those 20g carbs is important. That's why consuming foods with sugar or white flour on ANY phase of livin' la vida low-carb, but especially during Induction, can and will be detrimental to your ultimate goal of improving your health and weight. If you are just starting out on low-carb, then it is ESSENTIAL that you follow the dictates of your chosen low-carb plan EXACTLY as the author prescribes so you get the most benefit from it.

However, when you've been doing this for several years, you quickly learn what your own personal tolerance level for carbohydrates is and eat accordingly. For me, it's pretty low--about 35g net carbs daily is the most I can eat without gaining--so I keep my carb intake in check. Even with this Induction I am currently following, it's not that much different from my usual diet as I've stated before. I am avoiding the low-carb ice cream and chocolates during this period of time to see if there is a benefit to doing so.

Livin' la vida low-carb is about working the plan to make it work for you. That's what I've been doing for the past five years and I'll continue to do it for the rest of my long and healthy life.

NOTE: The weather was almost summer-like today, so I took advantage of it to wash my car. After the big snowstorm blew through just one week ago there was salt and sand all over the roads. While it's great for melting the ice, it's not so nice for the exterior of the cars. So I gave my Hyundai Sonata a good scrubbing and it looked B-E-A-yootiful when I was finished with it.

Like I have said before, my diet has and always will be low-carb. That has included foods like sugar-free, low-carb ice cream and chocolate and I don't see anything wrong with using these foods as part of your healthy lifestyle. They're better than eating the sugary versions of those foods. Call 'em what you want, but they are better options than what 99% of the rest of the world is eating. I think it would be GREAT progress to see the average Joe and Jane just switch from eating their truly crappy diet to one that includes sugar-free, low-carb foods. Just sayin'.

I was challenged to do an Induction-styled low-carb diet for a couple of weeks just to see what it would look like and today was the first day of that effort. My carbohydrate intake was right at 20g today. Most days I'm well under 50g carbs and love eating this way. It's so easy when you get used to livin' la vida low-carb to just do this automatically. There's no thinking about it it...you just do it.

NOTE: Today was a pretty glorious day in the history of my church. After years of preparation and one year of building, the brand new building for Anderson Mill Road Baptist Church in Moore, South Carolina opened for Sunday morning worship services today. It was an amazing experience and I documented it all on my FLIP camera:



By the time these historic services were over, I was wiped out and hungry. And I've noticed that I'm getting hungrier a lot lately. That's strange since I haven't stopped taking the Metformin, which is known to suppress hunger, yet (that's coming next week when my prescription runs out). I'm not complaining because I LOVE to eat, but it's just worth noting for me.

Although my menus lately have been spectacularly low-carb for 95% of the time, I'm excited about the challenge starting on Monday to go back to an Induction-styled low-carb plan for a couple of weeks. There's certainly no "need" to do this because my weight and health are doing just fine. But I'm game to fine tune my diet from time to time and provide a few more stringent rules to see if I can improve upon the basis of my low-carb lifestyle. There's certainly nothing wrong with that.

I am going to do this like I did in 2004, though, and include a diet soda if I want one as well as sausage, bacon, or whatever other meat I want to eat. Dr. Atkins did not explicitly reject these things as part of his healthy low-carb lifestyle, so neither will I. Now I will attempt to back off on my consumption of diet soda and I'll skip the low-carb chocolate and ice cream for this two-week period. Additionally, I will not have the occasional dinner roll or other such food items during this period. Like I said, it'll be a fun way to get back to the basics of livin' la vida low-carb.

NOTE: I have some of the nicest neighbors you could possibly want and today proved that point exactly. At 10:00am, the doorbell rang and our next door neighbor said he wanted to help me remove an old apple tree that was both an eyesore and a hindrance to the power lines as well as being able to see down our street. I had just called a tree removal company to get an estimate on what it would cost to take care of this and they were scheduled to come on Monday. But this neighbor said he'd be happy to do it.

Although I hadn't eaten yet, I got out there with my work gloves on and started throwing limbs into his trailer until that poor, rotted tree was completely gone except for the stump. In the matter of a little more than two hours, we cut that thing down and hauled it to the local landfill dump. Although I hadn't planned on spending time doing this today, I'm certainly thankful for good neighbors like this. I gave him some money for his time and generosity today and he was very appreciative to help me at no charge. That's the kind of loving kindness this world needs more of.

Needless to say, I was STARVING by the time we got that job finished and I ate what I could get my hands on before taking a shower. Not surprisingly, I was hungry again a few hours later which is why I got me a big T-bone steak and veggies to eat for supper. Yes, I had a dinner roll with my meal, too, and slathered it in butter. YUMMY!

Someone issued a challenge to me this week to try going back on an Atkins low-carb Induction plan with my menus. Although I'm not dissatisfied with the results of my current eating plan, I'm certainly not opposed to following such a plan. In fact, the way I'm eating now isn't that far away from the diet I did in 2004 to lose 180 pounds. So, starting on Monday, I will be 100% devoted to Atkins Induction and following it for at least the next two weeks. With my Metformin prescription running out at mid-month, this will give me a jumpstart on negating any problems that may happen when I wean myself off of the drug.

Keep in mind the way I have been eating in recent weeks has not resulted in any weight gain or played a negative role on my health markers. Everything has been going just fine. While there are some like my regular commenter Chris who I believe genuinely have good intentions when he shares feedback, I don't hold out the same lofty standards of many of the others.

I suppose by posting my daily menus, I have set myself up to be criticized for being too much this, not enough that, yadda yadda yadda. But the purpose of blogging my menus has never been about showing how to monotonously eat a low-carb diet perfectly day in and day out. It's about living the life of a real man dealing with all the complexities of life and making the choices that best suit him. I've never pretended to be doing anything else but that since I started my menus blog.

That said, this is what I eat on a daily basis and it is provided for informational purposes to people who are wondering what Jimmy Moore eats. I don't ever tell people they should eat the same thing as I do because this is what I like to eat. Find the foods you enjoy that fit within the mold of your low-carb lifestyle and never let anyone deter you from doing what's right for you. That's not to say you can't listen to input people have for you, but the ultimate decision about what goes in your mouth is yours alone.

There was an excellent comment from one of my most ardent supporters yesterday Didirina who noted that I am not the only prominent low-carber who uses foods like chocolate and snacks as part of their low-carb lifestyle--Dana Carpender, Laura Dolson, Kent Altena, Judy Barnes Baker, and so many more. Again, it is a personal preference about choosing to add these to your diet or not. If consuming a little chocolate or low-carb ice cream can keep you away from the real thing, then there is absolutely nothing wrong with eating these things in your healthy low-carb diet. Anyone who tells you otherwise is being much too legalistic in their interpretation of the low-carb way of life.

I will continue to do low-carb in the way that I see best suits me while keeping my weight and health in tip-top condition. For people who are new to this journey or still in the midst of your transition from a carb-heavy diet, be encouraged! You are gonna make it and be successful at it just like I have been. As you can tell from my menus blog five years after losing my weight, it's still something that you'll be working at long after the weight comes off. But the weight loss is sustainable like more than 150 pounds have been for me since 2004. And that's something nobody will ever be able to take away from you. YOU CAN DO THIS!!!

March 4, 2009 Low-Carb Menu

NOTE: Anyone who looks at my menus knows that I eat a high-fat, moderate-protein, low-carbohydrate diet. It's what I've been doing for the past five plus years and it's what I'll continue to do for the rest of my long and healthy life. I consider livin' la vida low-carb to be a miracle in my own life because it made me care about what I put into my mouth.

Before going on the Atkins diet in January 2004, I didn't give a rip about what I ate because I didn't think about the consequences of my actions at the time. It was all about shoving whatever I could into my pie hole to give me some sense of temporary satisfaction. What's truly disgusting about that behavior I engaged in so willingly was the fact that I'd even eat or drink something that tasted disgusting so I would "waste" it. Looking back on the days of being a 400-pounder, I am ashamed by the reckless activity I engaged in.

For example, I used to deliver newspapers in the wee hours of the morning when I lived in the Hampton Roads area of Virginia in the mid-1990s. One of my rituals was to get up at 2:00am and drive to the 24-hour convenience store to get a big gigantic cup of Coca-Cola. This thing had to be at least 44 ounces or more of sugary soda. It was dispensed from a fountain drink machine and the quality of that soda was always suspect.

Oftentimes I'd fill up my cup and not take a sip until I'd already paid for it and left. Then when I did, there was a rude awakening how gross it was--too much carbonation or too much syrup. Either way, I'd FORCE myself to drink it because I'd paid money for that soda and wasn't about to let it get "wasted" (there's that word again!). Add to that the sugary soft cookies, breakfast sausages in a bun, and Lord knows what else I'd pick up on the way to the checkout at these 7-11 type stores. It was a pitiful existence I was living in and I'm so glad that person I used to be is LONG GONE!

Today, I care deeply about what I eat, consume healthy high-fat, moderate-protein, low-carb foods like eggs, cheese, meats, non-starchy veggies, butter, sour cream, and so much more. And even with my indulgences in things like low-carb ice cream and chocolates that are probably less than 5% of my total calories for the day, I'm nowhere near the kind of reckless, out-of-control habits I used to have. My life in 2009 is night and day compared to what it was ten or fifteen years ago. And THANK GOD!

NOTE: After posting a YouTube video where I had some fun with a hilarious moment that happened with my cat Smokey yesterday, several people expressed concern that she was somehow harmed by this experience. Let me assure you this half-second moment when a snowball landed on her head did not harm her in any way. Christine and I love all four of our kitty cats and would never think of hurting any of them in any way. To insinuate otherwise is utterly absurd.

Moving on to the menus front, I had a pretty typical day for me--delicious and nutritious low-carb foods, enjoyment with my food selections, no hunger whatsoever, and feeling great about the choices I made. Oh what a difference a few years can make. Just five years ago, my diet was DRAMATICALLY worse than it is now. I am thrilled to be livin' la vida low-carb...and LOVING it!

NOTE: We had five inches of snow dumped on us last night and I woke up today with no phone line and no Internet access! YIKES! Since I was unable to get any work done today, I got outside and started playing in the snow with my neighbor's kid. We had a nice snowball fight going when one of my four cats got outside. She's fine, but I just HAD to share that video with you. Although we didn't have any Internet service, at least our power was on so we could stay warm. We got our phone back late in the day and Charter FINALLY got the Internet back very late in the day. Our schedule was so strange today that we ended up going to the pizza place again for supper tonight...and I was VERY good sticking with the meat and cheese primarily.

NOTE: I don't know why I do this to myself on Sunday mornings, but today I went without eating before heading off to church. Sure, it's only a few hours before lunch, but I really should eat SOMETHING before I go to church because inevitably my stomach will start growling and gurgling BEGGING me to eat. Today wasn't as bad as it has been in the past, but it was bad enough. So when I finally did get to eat, I was plenty ready to feed the beast with my favorite meal.

I had planned on going to the store to get some more of my low-carb wraps since I ran out, but then something funny happened--it started snowing in South Carolina in the month of March! And snow and snow and snow...as of the time I'm writing this, we've gotten about 4-5 inches and it's STILL falling. I love seeing snow because I grew up in Pensacola, FL where it hardly EVER snowed when I was growing up. So snow is cool to me as long as the power stays on. And I work out of my home, so I can still get work done on Monday when everyone else has worked canceled. I don't mind.
