March 12, 2010 Low-Carb Menu

NOTE: I'm gonna be dead honest with you...I was NOT at all happy with the way I looked on this year's low-carb cruise. It was a little embarrassing for me to weigh as much as I did, although it should not have been a surprise to anyone since I've been very open and honest about my struggle. I spoke with Dr. Mary Vernon and Jackie Eberstein about what they think will help me with this and both reminded me that although I'm not 400 pounds anymore, I'm still metabolically hyperinsulinemic. In other words, no I don't weigh as much as I once did, but the underlying condition of insulin resistance as a result of many years of damaging eating due to carbohydrates is still there.

One strategy Jackie (who worked with patients of the late great Dr. Robert C. Atkins for three decades as a registered nurse) suggested was consuming lots of small meals every few hours and make sure they are high-fat, moderate-protein, and low-carb. So that got me to begin something today that I have been meaning to do for a couple of years (I shared my desire to do it in my 2008 interview with Drs. Mike & Mary Dan Eades) -- and now I'm gonna do it!

As you can see from my menus above, I didn't eat anything else besides eggs, butter, and cheese today. That was by design. Today I officially start an egg fast and will be on it indefinitely to see what happens. Here are the 10 parameters of my eggfest:

1. Must eat eggs as the primary source of fat and protein.
2. 1 tablespoon of butter used per egg consumed.
3. I must eat an egg no later than 30 minutes after waking.
4. The egg meals ideally should be eaten every 3 hours, but not more than every 5 hours.
5. I will follow this schedule even if I'm not hungry, however I'll only have 1 egg when that happens.
6. Cheese will be permitted up to one ounce per egg.
7. A minimum of a half-dozen eggs must be consumed daily.
8. The eggs will be local pastured eggs loaded with healthy omega-3 fats and vitamin D.
9. Egg consumption will cease three hours before bedtime
10. Diet soda will be allowed up to 3 cans daily with a goal of 1 or less.


So that's what I'll be doing in the near future to see what happens. I got back from the cruise weighing in at 289 pounds. Yes, I'm humbled by that number and I'm doing something about it. Wish me well in this newfound journey and I'm excited to see what will happen as a result. I'll document everything that happens here.

Day 1 was not too bad, although I did find I got hungrier later in the day than I did in the morning. I held out until the final meal of the day to consume 2 eggs and needed some cheese in it to get the calories up. Each extra large egg I consume is about 80 calories, the 1 tablespoon of butter is 100 calories, and the ounce of cheese is about 100 calories. So today I had 7 eggs (560 calories), 7 tablespoons of butter (700 calories), and 2 ounces of cream cheese (200 calories) for a total of 1460 calories. That was a little low for me, so I'm gonna up my intake starting tomorrow. YES, I LOVE eggs, so this egg bonanza is going to be enjoyable for me...can't wait to see how it goes!

I am totally curious about this egg fast. I was struggling with mid morning hunger. I took a couple of boiled eggs to work with me, ate them mid morning, and did quite well. I also found that drinking an 8 oz glass of water every hour kept off the hunger and I lost 3 lbs. over night. P.S. I see you recommend Chocoperfection. I just discovered them. Jimmy, looks like Christine has lost weight. You on the other hand look like you've put on quite a bit or its just a very unflattering picture of you that makes you look bigger than you are.

Rose, I agree Christine looks fabulous, but she's always been that way. She's still hurting from her neck surgery six weeks ago, but doing surprisingly well. I'm so proud of her for coming off of her anxiety meds now that we've got her Vitamin D levels up above 50 after they were 9 early last year. That's helping her tremendously. I love that woman! :)

Wow Jimmy, best of luck on your eggfest but just reading about that number of eggs makes me feel constipated! methinks you had better drink lots of water to "keep things in motion", so to speak! Good for you for tackling the problem and being so honest about it.

LOL Judith! I ALWAYS drink enough water and have not had any poopy issues yet. You know I'll let you know all the "dirty" details if I do. :)

Very Interesting Jimmy,
I have been in ketosis for weeks now and haven't dropped a pound. But there are numbers more important than the scale, my blood sugar is great!

That's exactly right, Carl! My experience is similar. Despite the weight gain over the past two years, my health has remained spectacular with all the tests and blood work confirming my low-carb eating is working well in those areas. Now if we can get the weight under control to get to the underlying issue of what's going on, we'll be in good shape. :)

One thing that helped me immensely with cutting out sodas is flavored sparking water - not the aspartame laced crap, but natural orange, lemon, lime or berry flavored stuff. Trader Joe's stocks their own brand, but it's bottled by Crystal Geyser.

Jimmy, I've been following your daily menus for some time, and always think that you don't eat very much. It's hard to understand the weight gain. Plus, you seem to be getting enough exercise with the volleyball and weight lifting. Your problem is one that we all share from time to time, and I'll be anxiously awaiting your solution. Hopefully, the egg regime will help.

THANKS Sandy! I think my meals have fluctuated a bit from being too much and sometimes not enough...the eggs are keeping me at a specific level which is why I think it's working so well. Something certainly has to give and this plan is helping me identify what the issue is. I appreciate your support!

Hi Jimmy
Many years ago I did Atkins with great results.
I lost 20kg in 7 weeks!
However since having a baby and packing on over 30kg, I have been struggling to lose 5kg without putting it back on...trying every diet possible. I am not back on to Atkins and whilst im still not seeing results I feel better in myself.
I stumbled across your blog and noteably your eggfest, I was wondering how much weight you lost on it (though my main reason in wanting to do it is to beat my addiction to the carbs that keep creeping into my daily menu).
Should women be on the same plan or eat a little less?

I lost a total of 27 pounds in one month on my eggfest. But more importantly, I'm no longer on my diet sodas or anything artificial. That's been the biggest payoff about this experience. You do what's right for you but this worked for me.

I realised I said 'not back on to Atkins'...I meant to say that I am NOW back on to Atkins...and while Im not seeing results like I did the first time..my weight is slowly creeping down...as I havent done plan 100% (major carb addictions I have).
First day of my eggfest and I feel full....though I just calculated how much fat I consumed today, being 170g, I nearly fell over...lol

Because this way of life eating eggs, I am getting back my sanity. I even can afford some specialty cheeses because eggs are so cheap. Eggs,Butter,Cheese,Cream in my coffee. I feel power it's a little hard to explain. I already reduced my insulin.
