April 26, 2010 Low-Carb Menu

9:00AM
3 eggs cooked with 2 Tbs grass-fed butter and 2 ounce local farm cream cheese

1:45PM
1/2 pound grass-fed ground beef burger with 2 ounces raw cheddar and 1 Tbs mayo

6:30PM
3 eggs with 2 Tbs grass-fed butter

CALORIES CONSUMED: 1952
DIET SODAS: 0 (ZERO!!!) 33 DAYS DIET SODA FREE!!!

NOTE: My first day without Christine at home today and it was quiet without her around. It's funny how much you get used to someone being there that when they're not there it's quite noticeable. My menu routine didn't really change with her being gone, although I joked with her I'd be eating a Big Mac meal from McDonald's for every dinner while she's away (she didn't buy it!). Yeah right!

Some people expressed their concerns in the comments section yesterday over my NMR LipoProfile test results. But let me assure you there's really no need to worry about my numbers. I've consulted highly-respected researchers and practitioners of carbohydrate-restricted diets and they have said that this is completely normal, that the changes in HDL going slightly downward are really statistically insignificant, and that losing as much weight as I did last month (27 pounds!) is a major change to put the body through resulting in the abnormal readings and that the numbers will stabilize back out again once weight loss resumes at a normal pace (as it is right now). I'll recheck again in a few months to see how I'm doing, but I'm certainly well on my way now with a real whole foods diet.

I've been asked if I "feel" a difference eating grass-fed beef and butter, pastured eggs, raw cheese, and all these other real foods in my body. Honestly...no. About the only changes I've seen are I urinate less frequently (no longer drinking anything but water) and my poop comes out clean (I know, TMI, but I wanted you to know what was happening). Plus I'm not craving anything carbohydrate, sweet, or otherwise. And I'm certainly not hungry eating this very high-fat, adequate protein, very low-carb set of meals and yet I'm still thoroughly enjoying it.

After the initial huge weight loss during my eggfest, the weight loss has slowed down considerably. But I know that my body is better off without the diet sodas and other artificially-flavored and sweetened foods in my mouth. I'm sincerely trying to make those things history for me and this is a monumental step in my health journey. I am not there yet, but I'm over halfway to the 60-day mark of making something into a habit. I'll continue to pursue that goal of ridding my body of anything that wouldn't have been recognized as "food" 100 years ago. So far, so good.

Hi Jimmy!

It sounds like you're coasting nicely on your diet, so if I were you I wouldn't listen to the concerns on something you know is working.

Me personally, I've gone back to a mostly zero carb diet after trying (unsucessfully!) to return to the paleo diet, because the mostly zero carb diet works for me in every respect. Unless it's your significant other, who cares what others (usually strangers!) have to say about the way you nourish your body? :)

(BTW: I cannot stress to you ENOUGH about how AWSOME your podcasts are. LONG may you continue!)

Watch out for sugar in the mayo! Store bought mayos often contain sugar and nasty industrial oils. It's really easy to make at home with a little patience - and it would be delish with olive oil and your farm-fresh egg yolks! Look for Julia Child's recipe at Cookstr.com.

THANKS Rando! And you should still believe in it because it works well. There are also individual circumstances that warrant we each tweak the plan to work with us. But carbohydrate-restriction as a template is the right thing to do. Thank you for reading!
