NOTE: When I was at the store the other day I picked up some raw spinach leaves because I truly love spinach. Now, if you had asked Jimmy Moore six years ago if he "loved" spinach or not, you would have gotten a really funny look. But the 2010 Jimmy Moore can proudly and honestly tell you he adores the green leafy stuff. My tastes have radically shifted for healthier foods than I consumed prior to 2004 and that's something I try to communicate with people who say they could never eat a low-carb lifestyle. If you give it enough time and allow your tastes to shift, then it's not just possible but PREFERRED! I'm still on this journey myself shifting to all real, whole foods the past couple of months and I'm thoroughly enjoying it!
I added the spinach leaves to my second egg meal today and they shriveled up quite nicely mixing in with the eggs. The butter really helps this process and the taste is incredible. Yes, you can get a whole cup of spinach into a meal like that quite easily and it only adds like 10 calories. But oh the phytonutrients and fiber you get from consuming fresh raw spinach. YUMMY!
Today is my weigh-in day and I try not to let the day-to-day weight impact how I feel I am doing. I've made another radical shift in the way I eat similar to what I did in January 2004 starting the Atkins diet. No, this isn't quite the leap that was, but it's probably the most significant thing I've done to my diet since then. The weight loss is slower than I'd like but that tells me there may be some other underlying issues I'm not aware of yet. In the meantime, though, I'll keep eating my eggs, grass-fed beef, butter, cheese and all the rest and seeing what happens. I lost 1.6 pounds last week to get down to 260.8 pounds. As we enter the month of May, my goal is to get down below 250 by the end of that month. That's about 2.5 pounds a week weight loss and I'm gonna likely add some HIIT activity to help with this.
My next weigh-in will be two weeks from today on May 14, 2010 because next Friday I'll be in New York City for an event with the Nutrition & Metabolism Society. Should be interesting traveling again with sporadic mealtimes and questionable availability of food. But I'll make the best of it. Can't wait to spend three full days in The Big Apple with Christine who I will be going to pick up in Virginia for this trip. More menu updates to come...THANKS for reading!

Hi Jimmy!! I notice that you add a little mayo and ranch dressing here and there. Are you using normal store-bought products for these?
Personally, I am looking for mayo and prepared salad dressings without any soy or canola, and am just wondering what type you are using.
Thanks Ramona! I haven't gotten around to making my own mayo yet because I still have some store-bought on my shelf I don't want to see go to waste. Yes, it has soybean oil in it (GRRR!), but I don't consume a lot of it in my menus.
I'll be darned... you're eating clean and Charles is working up 'zero carb' ice cream recipes that use real sugar. It's like the earth has tilted!
I'm glad to read of your great results with kicking the 'crap' foods and losing weight so well! I knew that would work, and am cheering you on! Please don't un-learn this lesson because you're doing your body good.

mmm eggs and spinach are awesome. my kids actually, shockingly, will eat an omeletter stuffed with chopped bacon, cheese and spinach. i also like that spinach comes up early here in the midwest so its local!

What's for dinner? If you ask doctors that have been on your show, Drs. Davis, Gundry, and Ornish say avoid meat, unless you want to die young. Johnson says avoid sugar unless you want to die young. Dr. Thompson this week says sugar's no big deal, avoid starch unless you want to die young. I guess we're at an interesting point in time where a lot is known about nutrition, except, that is, what to have for dinner.
