DIET SODAS: 0 (ZERO!!!) 64 DAYS DIET SODA FREE!!!

NOTE: Weigh-in day and I thought it might be a challenging one--I gained two pounds this past week. Not sure what happened, but I'm keeping my chin up. I'm eating very well on my all real, whole foods, low-carb diet so there's nothing for me to feel bad about. I'll just keep plugging away at it and let my health continue to improve eating this way. Too many people see no weight loss or a slight weight gain like I experienced as a negative, but I refuse to let it get me down. I'm doing GOOD for my body and should never feel my efforts towards that end are futile. And I won't!

I can tell you from my own experience that if I have been eating very very low to zero carb and then start adding in a higher carb level I gain water weight. Happens every time. Even when the carbs are just those from salads.

Interesting JD! Do you have a theory on this?

No. No theory except that a very low carb diet is very diuretic. Carbs retain water. Something like 4 molecules water for every glucose molecule. They always blame salt for high blood pressure but it is always the carbs. Just in general I believe a very low carb diet can deplete glycogen stores somewhat. When you add back in the carbs you start to up your glycogen stores and with that the water that comes along for the ride.

Isn't it possible that it is just caused by the mystery food?

Cat, it's possible. That's why I ended consuming it for a few days to see what would happen to my fasting blood sugar levels. What's interesting is the MYSTERY FOOD didn't cause huge spikes in my blood sugar after consuming it and yet my fasting numbers are elevated? It's odd.

I agree with JD; if you're consuming more carbs, then weight gain is probably just water weight, and your weight will start to fall again shortly.

The other thing to note is that many healthy people do not see blood sugar spikes with some carbohydrates because their system responds so rapidly to the elevation of glucose. Insulin is released and insulin levels are elevated, however.

I suspect water weight too, and, for lack of a better term, fecal weight as well! Soluble fiber absorbs water in your gut (which is why it can constipate you if eaten w/o sufficient water intake). While Jorge Cruz claims you lose "false belly weight" eating more fiber, I suspect the opposite can easily be the case. During the eggfest, you ate very little "solid" food. Now you are eating considerably more. Also seems a bit more protein which can also be used to replenish glycogen that holds water.

Good to see you're not getting discouraged, although these types of weight gains can lead to overparanoia/obsession over carb consumption that can only lead to stress!
