May 28, 2010 Low-Carb Menu

9:15AM
Blood sugar--81

9:30AM
3 scrambled pastured eggs cooked in 2 Tbs grass-fed butter with 2 ounces raw yogurt-cultured cheese

2:30PM
Shrimp cocktail, 1/3 pound burger with cheddar and provolone cheese, tomato, pickle and mayo
2 ounces of homemade cornbread with 2 Tbs butter

8:00PM
1/2 pound grass-fed beef hamburger with 2 ounces raw yogurt-cultured cheese and 1 Tbs mayo

CALORIES CONSUMED: 2172
DIET SODAS: 0 (ZERO!!!) 65 DAYS DIET SODA FREE!!!

NOTE: Back at it again today after my two-pound weight gain last week. No, gaining is not the end of the world and certainly a lot of things can contribute to that happening. As I've stated again and again, I'm not at all worried about it and will just keep chugging along in this thing called life. Today at lunch Christine and I were invited to enjoy some delicious food that included shrimp, beef, and cornbread. Now usually I would eat cornbread, but these people were nice enough to make us a meal so I had a couple of bites of the cornbread with LOTS of butter. Never really been a fan of cornbread, but it was amazing!

My fasting blood glucose number was back down in the lower 80s again this morning when I checked, so that's interesting to note. Perhaps it was the MYSTERY FOOD that led to the increase in this fasting number...we'll see how my fasting blood sugar reading tomorrow morning is being off of the MYSTERY FOOD for several days.
