July 28, 2010 Low-Carb Menu

12:45PM
1/3 pound hamburger with American cheese, pickle, mayo, and mustard
Mashed cauliflower with butter

8:45PM
1/2 pound grassfed ground beef cooked in 2 Tbs coconut oil with 2 ounces yogurt-cultured raw cheese and mustard

CALORIES: 1542
TOTAL CARBS: 18g
NET CARBS: 12g

NOTE: It's time to shift gears a bit with the focus of my menus blog. Having successfully removed diet soda as a predominant element in my diet, I will stop counting the number of days I haven't had one. That doesn't mean I've gone off the deep end and started drinking diet sodas again like there's no tomorrow. Just the thought of a NASTYtame-laden Diet Coke makes me want to gag now and that's a beautiful thing. It's been an incredible journey giving those things up and I'm proud of the progress I've seen in that regard knowing I can live without them in my life.

Beginning today, I will not only list for you the calories I consumed but also the total carbohydrates and net carbohydrates minus fiber. A new reader asked the other day why I listed calories and not carbs on my menus and I just automatically assumed people would realize my menus are very low in carbohydrates. But rather than assuming, we're gonna start explicitly listing them for you so you can see how low I go in carbs to make this lifestyle change work for me. Not everyone needs to go this low, but for Jimmy Moore it's a reality that I have to stay well under 30g carbs daily.

Hi Jimmy, I am still thinking about your IR (or possible IR) and I know that I remember hearing that you practice yoga. What I know personally is this, yoga helped me tremendously with my weight loss. I don't really know why, I could hazard a guess, but it would be me putting lots of different things together without any real evidence (except my smaller tummy and random glucose/blood sugar of 81.) Cardio seems to have helped with my insulin resistance tremendously. Do intervals, the steady state stuff is not effective on me. Also, never more than 45-60 minutes. That triggers a release of insulin.
