August 28, 2010 Low-Carb Menu

10:30AM
3 pastured eggs cooked in 1 Tbs coconut oil

2:30PM
6-ounce sirloin steak with 1 cup broccoli and 3 Tbs butter

7:00PM
8-ounce sirloin steak with 3/4 cup of salad greens (no dressing) and 1/4 cup asparagus with 2 Tbs butter

CALORIES: 2190
TOTAL CARBS: 20g
NET CARBS: 11g

NOTE: I was faced with a bit of a conundrum today with two activities planned at the same time with my church. The first one was a cookout by a nice lake with the members of the choir and orchestra at my church. They planned on having fried chicken with knick-knack side items, finger foods and desserts. These kind of events always frustrate me as a low-carber because I have to eat something beforehand so I'm not STARVING when there's nothing there for me to eat. Just once I'd love for somebody to bring a big pot roast or rotisserie chicken to one of these things for those of us who can't have all that carb-laden food. But I digress. The other event happening was a steak dinner at the local Marriott raising money for the missions fund set up to help those who want to take mission trips but can't afford to go. Christine and I have always tried to help individuals we know who want to go any way that we can and so this was certainly a worthy cause to be a part of. And it didn't hurt they had a big fat juicy steak for us. Of course, I had to pick around the mashed potatoes and some sweet something on my plate to get to that slab of meat. And there was some chocolate cheesecake concoction for dessert--did fine without it! People are always amazed by my "willpower" but I often tell them this isn't about being strong mentally, but rather making a concerted effort to make better choices for the sake of my health. The conversation at my table (yes, we did the steak dinner!) about healthy living was awesome and people seemed to respect what I was sharing (although they still shoved that dessert down their mouths). Oh well, you can't change their hearts overnight!
