NOTE: My weekend was all messed up with the cancellation of our trip to NYC. It just felt weird the past few days being in South Carolina when my mind had prepared to be in New York. Oh well, whaddyado? Next weekend is our trip down to Jacksonville, Florida for The 3rd Annual Low-Carb Cruise to the Bahamas and my minister of music thought that's what we missed this weekend. I responded, "Come you know where or high water, we WON'T be missing that trip!" And we won't unless something really drastic happens between now and then. I can't wait!

February 27, 2010 Low-Carb Menu
7:15AM
4 eggs cooked in butter with cream cheese
Splenda-sweetened diet soda
9:00AM
3-hour youth basketball refereeing
1:30PM
3-egg omelet with sausage, bacon, American cheese, and tomatoes
Salad with greens, tomatoes, cheese, and Ranch dressing
Diet Coke with lime
6:30PM
GG Scandinavian Bran Crispbreads with sugar-free raspberry preserves
8:00PM
Dreamfields angel hair pasta with all-natural tomato sauce, provolone and cheddar cheeses
Splenda-sweetened diet soda
Homemade low-carb cheesecake (cream cheese, heavy cream, cinnamon, sweetener, nutmeg, eggs) with sugar-free raspberry preserves, and whipped cream
NOTE: Although I didn't get to sleep until nearly 2:00AM in the wee hours of the morning because of the men's retreat last night, I still was up bright and early at 6:30AM today. It gave me some time to catch up on a few e-mails before heading to my church today for the final week of Upward basketball. I was supposed to be in New York City today, so they were surprised to see me show up to volunteer to referee these last games. Good thing I was there, too, because they would have been one man short (it's hard enough watching for all the calls with two refs, much less only one!). Needless to say, I was EXHAUSTED from the lack of sleep and crashed after lunch.
I tried some new low-GI crisps today that I got from my friends at CarbSmart.com. They're not half bad and I like the fact they only have 2g net carbs and give me something crunchy to eat. I added a little sugar-free raspberry preserves to mine and it was fantastic. Christine got peanut butter and jelly on hers and she was in heaven. It's a nice high-fiber, low-carb snack if you're looking for something different to try.

NOTE: What a crazy day! Christine and I woke up bright an early this morning to leave on our trip to New York City for a conference with the Nutrition & Metabolism Society. But it appears Mother Nature had something else in store for us as we were making our way up I-85 to the Charlotte airport en route to LaGuardia. We got that automated call to my cell phone informing us that our flight had been cancelled due to that freaky blizzard that hit the Northeast today and so I called the organizer of the event to let her know what was happening. Since 95% of the attendees at this conference were flying in and no flights were being allowed into NYC, they postponed it. Bummer!
We actually got all the way to the Charlotte airport entrance when we heard from Laurie at N&M stating it wasn't gonna happen. Christine was exhausted when we got back home to Spartanburg and she crashed on the couch immediately. I did a little bit of work on the computer before it "hit" me and I was zapped, too. That's what getting only a few hours sleep will do to ya! I decided to spend the rest of the day with Christine playing the Wii and such when it dawned on me that our church was having a men's retreat this weekend that started tonight down the road about an hour away. With Christine's blessing, I went to that where our pastor DJ taught on the subject of David having courage and conviction for being brave enough to face the giant Goliath.
After the Bible study and group time, it was time to have some fun. A few of us braved the cold and went down to the outside basketball courts to shoot some hoops. The temps were probably in the lower 30s, so that ball literally felt like a rock. My left ankle is still a little sore, so I wasn't sure if I'd be able to make any cut moves playing offense of defense. But it held up well. My team won that first game and I told the guys I'd had enough. All that cold air in my lungs wasn't feeling so good on the body, so I trekked back up the hill to the warm cabin where the other (smart!) men were playing some Texas Hold 'Em.
I was disappointed to see so much junk food laid out for the guys to eat: M&M's, Cheetos, Doritos, pretzel snack mixes, candy bars, sugary sodas, and more were literally everywhere. The closest thing to "healthy" they had other than water and diet soda was peanuts seasoned with sea salt. Jimmy Moore did without. How sad was it to watch all these guys stuffing their faces with this literal garbage that quite frankly has no business EVER being consumed by anyone, much less grown men. This is the culture that we battle with the message of livin' la vida low-carb and I'm trying to live by example for people like this with my own diet.
After playing cards into the wee hours of the night (coming in 2nd place in the Texas Hold 'Em tournament and even putting out my pastor from the game--HA!), I journeyed back home and was starving! When I entered the door, the first thing I headed for was the refrigerator to get a little bit of cheese to make that gnawing feeling go away. I don't like being hungry and a good piece of fat/protein usually does the trick! It was a thrilling day--although not exactly what I thought when I woke up this morning!

February 25, 2010 Low-Carb Menu
5:00PM
Chopped steak w/cheddar cheese, mushrooms, grilled onions, & mayo
Salad with greens, tomatoes, cheese, and Ranch dressing
Diet Coke with lime
Cantaloupe with whipped cream
7:00PM
30-minute competitive volleyball
NOTE: Yes, I only ate once today because I was scurrying to get things done before our trip to NYC tomorrow. That's the only bad part about going away for even a few days--tying up all the loose ends before you go. It's gonna be so worth it!
I tried to give my left ankle a go playing volleyball tonight since it has been feeling better and it did okay. But to avoid risking injury to it further, I only played one game. I even jumped and blocked a spike once and did okay. Just a twinge here and there while running around the court, but did well overall.
Check out my appearance on the "Healthy Mind Fit Body" podcast show that aired today here. I spoke openly and honestly about my low-carb lifestyle and even with some of my struggles with gains over the past couple of years! DON'T MISS IT!

Splenda-sweetened diet soda
NOTE: THANKS for all the advice on the avocados everyone! Yes, it turns out they just weren't ripe yet. I love adding them to my meals, but was frustrated about how to properly cut them...until now! :)
We had to do some makeup games for the youth basketball league I referee in this evening because of all the snow on the weekends recently. It was my last night doing it since I'll be in New York City this Saturday morning for an event with The Nutrition & Metabolism Society. I'm working on getting together with some peeps on Friday evening, so hop over to my Twitter page to find out where if you wanna join me and Christine.
My schedule has been harrowing this week and I've barely been able to get anything done I REALLY want to do. Ahhhhh, and then next weekend is the cruise to the Bahamas with my fellow low-carbers. So much to do, so little time. But I ain't complainin'!

NOTE: Today I made Christine an incredible salad with grilled chicken cooked in the bacon fat (OMG...AMAZING!) and it was so delicious I had to have some for myself. I even threw in an avocado in my eggs this morning for a little variety while adding in more healthy fat to my diet. Anybody else have trouble cutting those little boogers open? It's a TON of work for just a little food. Grrrr! Any suggestions are welcomed. :D

NOTE: After the second service at my church was over today, I went to see that friend of mine I told you about the other day with the sudden heart issue. I shook his hand, told him we were praying for him, and that I didn't know what to say. He said that his hope is that doctors can figure out what is happening to him to make his heart function at about 30 percent. Doctors have ordered him to not work or exert himself until they can determine the cause. It turns out (and I didn't know this before) that his father and grandfather both died at the age of 42 from a genetic heart condition and my friend...is 42. I'm not fatalistic that things will automatically happen like that for my buddy because I believe there is One who can heal anything He so chooses to if there's still work left to be done. Your thoughts and prayers are still welcomed in this situation.

8:45AM
Mozzarella cheese
9:00AM
3-hour youth basketball refereeing
1:15PM
Chopped steak w/Swiss cheese, mushrooms, grilled onions, & gravy
Salad with greens, tomatoes, cheese, and Ranch dressing
Diet Coke with lime
Cantaloupe and blueberries with whipped cream
9:00PM
Beef tips cooked in butter with Provolone cheese
Splenda-sweetened diet soda
Flax seed-based natural peanut butter mixed with heavy cream, sugar-free raspberry preserves, and whipped cream
NOTE: For the first time since injuring my left ankle nearly three weeks ago, I decided to give it a go running on it...ever-so-gingerly. I did surprisingly well while refereeing the basketball games today at my church, even running backwards coming back down the court a few times to see how that would feel. Pretty well. It was a bit sore after three hours of this, but I can tell it is well on its way to being healed. I'll probably still skip volleyball a bit longer and will need to take it easy on the upcoming low-carb cruise in a couple of weeks.

NOTE: After it was suggested to me by one of my recent podcast interview guests, I decided to try something new with my eggs this morning. Rather than scrambling them with butter and a little salt, I added in a new secret ingredient: cream cheese! Yes, I thought it sounded a bit strange, too, but I couldn't resist trying it at least once to see what it would taste like. OH...MY...GOSH! This is amazing! I don't think I'll have eggs without cream cheese unless I'm away from home or something. INCREDIBLE stuff. Anybody else ever have cream cheese in your scrambled eggs?
It was kinda a wild day for us when I woke up this morning: FREAKIN' COLD IN THE HOUSE! Went to the thermostat and noticed the temperature was crazy low, so that could only mean one thing...we let the petroleum fuel run out in our tank. ARGH!!! So I pulled out the space heater and aimed it at Christine to get her warm. Thankfully it was a little warmer outside today while we waited on the fuel people to come fill 'er up for us to the tune of $700! Then we had to get the fuel primed so the heat would start working and a neighbor friend who's a "jack-of-all-trades" came by this evening to do that job for us. CRAZY CRAZY DAY!
Had some "good" crazy stuff happen today and all week long. Check it out in my "Fun-Filled Friday" post.

NOTE: THANKS for all the well wishes and prayer for my friend going through the heart issues right now. He's been so excited about livin' la vida low-carb lately with his 25-pound weight loss and was just telling me last weekend how good he feels eating this way. But passing out while on the treadmill and having to be put on mandatory medical rest is going to dampen his spirits about life, much less staying on low-carb. I'll do my best to encourage him and help him any way that I can through this.
Today was a good day for my meals...plenty of fat and protein to go along with my yummy low-carb veggies and a nice sweet treat to end my day...well, it was already partially into the next day by the time I had it, but I've had some late nights lately.

1 tablespoon natural peanut butter with flax seed oil, heavy whipping cream, sugar-free raspberry preserves, and whipped cream
NOTE: Today I got some news that was quite disturbing to me on a number of levels. A good friend of mine from church in his low-40's who I've known for much of the past decade through Sunday School classes, leading his oldest kid in children's choir, and teaching about healthy low-carb living found out that one of his arteries was blocked about 80-90%. He's always been a big guy, but not gargantuan like I was when I started low-carb. He's been on and off low-carb for several years and recently was doing a spectacular job on it after reading my latest book. But now they had to go in and do a heart cath, he's had to take some time off of work, and I'm sure the doctors are gonna blame his low-carb diet for "causing" this. It is frustrating to no end that this kind of misinformation is gonna be shared with my friend despite all that he knows is true about low-carb living! Hopefully he is gonna be okay, but I'd appreciate it if you could remember him and his family through this.

NOTE: Not being able to exercise since injuring my left foot has been a real bummer! I LOVE getting in my volleyball on Monday nights, but I've got to let this foot heal as much as possible. It's likely I tore some ligaments in the foot, so I'm taking it easy. It would be great to find some exercises to do that do not put any stress on the injured foot. Upper body work is possible as long as I'm not standing when I'm lifting. Need to get motivated to do this!
The diet today was pretty good and I especially enjoyed mixing that HWC with the PB for a nice treat tonight. Very fulfilling!

NOTE: HAPPY VALENTINE'S DAY! I do stuff for Christine all the time and we both abhor the commercialism of this holiday that only profits the card, flower, and candy industries. So to counter all that, I got Christine little gifts all week long leading up to today. A CD by one of her favorite groups The Brooklyn Tabernacle Choir, a Precious Moment doll that says The Lord's Prayer, and cold hard cash are just a few of the "SOOPWIZES" I had for my honey baby. She means the world to me and I don't know what I'd do without Christine in my life. She's the best thing that ever happened to Jimmy Moore.
Today I decided to have some mini-cheeseburgers with the bun this time just to see how they tasted to me now since I don't eat that kind of thing anymore. They were okay, but nothing to write home about. It's just a friendly reminder that I can and do feel satisfied eating my healthy low-carb lifestyle! How about you? Do you "feel it" when you eat carbohydrates after going without them for a long time?

NOTE: After getting hit with over 3 inches of snow overnight last night, the church basketball league I referee games for on Saturday mornings was cancelled. It was probably a good idea since my left foot is still very sore and bruised from that volleyball accident last week. I'm trying to take care of it so the damage can heal, it's just gonna take some time. Had an interesting conversation during an interview with "Better Food Choices" radio on Friday about the role of blood type in determining the best food choices for your specific body. The doctor on the show called me back afterwards and said some amazing things about A blood types which is what I am. I'll be inviting her on my podcast soon to further discuss this subject at greater length.

NOTE: I'm curiously intrigued by the whole homeopathic HCG protocol discussed by Dr. Kendra Pearsall on my podcast this past week. A few days of eating high-fat, low-carb foods to the point of gorging yourself followed by putting these HCG drops under your tongue and consuming a 500-calorie daily low-carb diet for about six weeks and then transitioning to a low-carb plan? Sounds a little "out there," but I'd love to hear from anyone who has implemented such a program with success. Do share, do share. :)

NOTE: After trying for several months to get a prescription for the thyroid medication Armour filled by my local pharmacy, I heard from them today stating they found ONE bottle of 100 left at a Walgreen's on the other side of town. I've been wanting to try this treatment option in conjunction with the high-dose iodine to see if it will make a difference for me. These pills are so teeny tiny and they're actually naturally made from the thyroid of pigs. EWWW, I know! But Dr. William Davis from "The Heart Scan Blog" and others swear by this stuff and say it has the appropriate T3 and T4 levels to help aide with weight loss. Day one of testing that commenced today.

Low-carb cheesecake (cream cheese, heavy whipping cream, eggs, sweetener, cinnamon, nutmeg, and sour cream) with whipped cream
NOTE: I decided to tinker with my cheesecake recipe today to see if I could make it creamier and not fall in on itself when it cools. The secret ingredient that helped somewhat: SOUR CREAM! I didn't know if it would negatively impact the taste any and it didn't. I don't really follow a recipe, I just throw it all together, mix it up, and cook it. Christine loves it so I must be doing something right. :D When it set in the refrigerator, the taste and texture was divine.

NOTE: Less than two days after injuring my left ankle, guess who was back out there like a big dummy trying to walk on it? Yep, that's me. But I committed to being a referee for Upward basketball in January and February and I wasn't gonna let anything stop me from doing that. While I hobbled up and down the court trying to keep up with the kids to make the appropriate calls, I made it. Had I not shown up there would not have been enough refs for the games. So I needed to be there. Even still, my ailing ankle was killing me afterwards. Check out how it's turned black and blue on me:

Mashed cauliflower with butter

NOTE: Did a lot of resting today to get my left ankle sprain to heal. I was able to walk with a limp on it, but it still hurts. Expecting it to take about a week to be back to normal again. Crossing fingers. :D
Earlier this week I had the privilege of taking part in a conference call with singer/reality TV star Carnie Wilson about her latest struggles to lose weight again. She had gastric bypass surgery before, but gained weight following the birth of her child. Now Dr. Mehmet Oz is supposed to be assisting her efforts to shed the pounds again and I was invited by the producers of The Dr. Oz Show on Monday to take part in a teleconference call with Carnie. Here's how my question was answered by her:
I was encouraged to hear that she knows what works, but you could really tell she's still very addicted to carbohydrates. Hopefully she does find what works for good and does it forever. Her life may depend on it!

NOTE: I'm getting too old for this! Went to play volleyball at my church like I always do on Thursday nights and towards the end of the playing time I went up to block a spike and land right on the foot of an opposing player twisting my left ankle. UGH! Yes, I've done this before and this one REALLY hurt. Oh well, it's gonna be black and blue for a few days, but I'll live.

Loading up on recording podcast interviews for the next several months takes up a lot of my time, but the payoff when the interviews air is what makes all that work worth it. I'll be posting a schedule soon, but in the meantime I gotta get back to it! :)

NOTE: My fourth and final television appearance last week happened on the CNBC-TV show devoted to diabetes called dLife. Host Benno Schmidt was the consummate professional and did an outstanding job! What's funny is most people won't realize they did about five different takes and then pieced them all together. The final version is seamless:
What an incredibly busy day it was today! I'm usually busy on Mondays, but today for some reason was especially so. Telephone calls galore (even got to take part in a conference call with Carnie Wilson about her weight struggle and ask her a question which I'll share on my podcast show on Thursday) and just a whole lotta "stuff" to deal with. I'm certainly not complaining at all. Life is good even when you're eating low-carb...better yet, ESPECIALLY when you are! :D
