Amazingly I've had absolutely ZERO desire for one still despite having them at my disposal. Christine enjoys drinking diet soda and they are in my refrigerator. While it could be tempting for me to pop one open when nobody is looking or around to catch me, I just don't want it. Something has happened in my head to trigger a total disdain for the stuff. I suppose it's similar to my rat poison thinking about sugar. And that's a very good thing.

NOTE: When I was at the store the other day I picked up some raw spinach leaves because I truly love spinach. Now, if you had asked Jimmy Moore six years ago if he "loved" spinach or not, you would have gotten a really funny look. But the 2010 Jimmy Moore can proudly and honestly tell you he adores the green leafy stuff. My tastes have radically shifted for healthier foods than I consumed prior to 2004 and that's something I try to communicate with people who say they could never eat a low-carb lifestyle. If you give it enough time and allow your tastes to shift, then it's not just possible but PREFERRED! I'm still on this journey myself shifting to all real, whole foods the past couple of months and I'm thoroughly enjoying it!

I added the spinach leaves to my second egg meal today and they shriveled up quite nicely mixing in with the eggs. The butter really helps this process and the taste is incredible. Yes, you can get a whole cup of spinach into a meal like that quite easily and it only adds like 10 calories. But oh the phytonutrients and fiber you get from consuming fresh raw spinach. YUMMY!

Today is my weigh-in day and I try not to let the day-to-day weight impact how I feel I am doing. I've made another radical shift in the way I eat similar to what I did in January 2004 starting the Atkins diet. No, this isn't quite the leap that was, but it's probably the most significant thing I've done to my diet since then. The weight loss is slower than I'd like but that tells me there may be some other underlying issues I'm not aware of yet. In the meantime, though, I'll keep eating my eggs, grass-fed beef, butter, cheese and all the rest and seeing what happens. I lost 1.6 pounds last week to get down to 260.8 pounds. As we enter the month of May, my goal is to get down below 250 by the end of that month. That's about 2.5 pounds a week weight loss and I'm gonna likely add some HIIT activity to help with this.

My next weigh-in will be two weeks from today on May 14, 2010 because next Friday I'll be in New York City for an event with the Nutrition & Metabolism Society. Should be interesting traveling again with sporadic mealtimes and questionable availability of food. But I'll make the best of it. Can't wait to spend three full days in The Big Apple with Christine who I will be going to pick up in Virginia for this trip. More menu updates to come...THANKS for reading!

NOTE: Today it was gorgeous outside, so I made time to cut the rest of my yard now that it was dry. Cutting wet grass was for the birds yesterday because I zipped through that dry grass with my new lawnmower with it only cutting off two or three times instead of 100 times! WOO HOO! Yes, I'm easily amused and entertained.

Still rockin' my real foods menus as of late and there's not even an inkling of desire for a diet soda, something sweet, or anything artificial at all. Had I known how easy this would be just from doing an all-egg diet, then I would have done it a long time ago. Maybe when a few months have passed and this change has stuck for good (and I fully anticipate it will) I'll write an e-book about the experience to help others who are struggling with weight loss, sweet addiction, and their health. It could potentially help a lot of people who were like me in their low-carb lifestyle and just needed a little spark of something to get them going.

Some people might look at my menus and say, "Man, that's a boring diet!" But you know what? Variety is overrated. It's my contention that variety tends to lend itself to causing problems for people who have an addiction to certain kinds of foods. When you look to change things up, one of the primary ingredients that gets introduced into the diet is carbohydrate. Fat and protein sources pretty much stay the same, but carbs come in all shapes and sizes when people desire the oh-so-coveted variety. For me, that's taking the focus off of consuming food for fuel and right back on eating for pleasure. There's certainly nothing wrong with the latter if you are able to control your urges. But a food/carb/sugar addict doesn't need to be tempted any more than necessary.

I'm feeling great these days with nothing really bothering me physically. It's like my body is happy to be properly fueled with the fat it needs for energy with just enough protein and very few carbs to run optimally. I like the fact that I'm healthy, shedding the pounds (slowly but surely), and consuming foods that I know are good for me without a doubt. Those people who have been critical of my menus in the past because of the diet sodas or low-carb products can no longer say I'm not eating a solid "clean" low-carb diet anymore. Other than the dairy foods I consume, you could say I'm eating pretty Paleo right now. And that's just the way I like it!

NOTE: I went back to that local farm I recently found the other day in my area about 20 miles down the road from my house and saw they had some cream cheese available. Most people probably get Philadelphia Cream Cheese or some local store brand, but I wondered how freshly-made cream cheese would compare. OH...MY...GOSH! You haven't tried cream cheese until you get it made fresh from a local farm. And mixing it in with my eggs while they are cooking makes the eggs so creamy and tasty that you'll never want to eat 'em any other way again. Yes, I'm hooked and happily so!

Started to run low on my raw cheddar cheese today, so I used some mozzarella cheese Christine likes in some of my meals today since she's away in Virginia. Christine really likes to cook up the mozzarella in a skillet until it gets brown and eat it as a "cracker" snack. I must admit it's pretty tasty, although I prefer to have it oozing off the top of a medium-cooked grass-fed beef hamburger! Yep, I could eat that meal until it's coming out of my ears...and probably will.

It was not too hot today, so I decided to go outside to mow the grass this afternoon. The sun was shining and the temperature was in the lower 70s--PERFECT! Only one problem, though: the lawnmower wouldn't start. Checked the gas, spark plug, air filter, everything. It just wouldn't crank. I had someone take a look at it and it was gonna take at least a week to even LOOK at it much less diagnose what the problem was. And I had to put $100 down just for that to happen. So I decided it was probably time to go get me a new one--and so I did!

Went down to Sam's Club and got me a good push mower to tackle the weeds growing in my yard (very little grass grows, but the weeds have a life of their own!). I picked up some gas, filled up the oil and cranked her up. Started up right away! WOO HOO! About 15 minutes into mowing, I noticed the sky got rather black, the temperature dropped at least 20 degrees (I could see my breath blowing out), and little drops of rain started to fall. Oh great! It's about to be a Southern gulley-washer! Yes, it did rain a little harder, but never hard enough for me to stop mowing. Once the ground was wet, I had to slow down because the lawnmower kept stalling out on me and that wet grass was a bear. But I trudged through it as the skies cleared up and got the job done. Well, at least the front yard. I'll hit the backyard soon...it's a jungle back there!

NOTE: My first day without Christine at home today and it was quiet without her around. It's funny how much you get used to someone being there that when they're not there it's quite noticeable. My menu routine didn't really change with her being gone, although I joked with her I'd be eating a Big Mac meal from McDonald's for every dinner while she's away (she didn't buy it!). Yeah right!

Some people expressed their concerns in the comments section yesterday over my NMR LipoProfile test results. But let me assure you there's really no need to worry about my numbers. I've consulted highly-respected researchers and practitioners of carbohydrate-restricted diets and they have said that this is completely normal, that the changes in HDL going slightly downward are really statistically insignificant, and that losing as much weight as I did last month (27 pounds!) is a major change to put the body through resulting in the abnormal readings and that the numbers will stabilize back out again once weight loss resumes at a normal pace (as it is right now). I'll recheck again in a few months to see how I'm doing, but I'm certainly well on my way now with a real whole foods diet.

I've been asked if I "feel" a difference eating grass-fed beef and butter, pastured eggs, raw cheese, and all these other real foods in my body. Honestly...no. About the only changes I've seen are I urinate less frequently (no longer drinking anything but water) and my poop comes out clean (I know, TMI, but I wanted you to know what was happening). Plus I'm not craving anything carbohydrate, sweet, or otherwise. And I'm certainly not hungry eating this very high-fat, adequate protein, very low-carb set of meals and yet I'm still thoroughly enjoying it.

After the initial huge weight loss during my eggfest, the weight loss has slowed down considerably. But I know that my body is better off without the diet sodas and other artificially-flavored and sweetened foods in my mouth. I'm sincerely trying to make those things history for me and this is a monumental step in my health journey. I am not there yet, but I'm over halfway to the 60-day mark of making something into a habit. I'll continue to pursue that goal of ridding my body of anything that wouldn't have been recognized as "food" 100 years ago. So far, so good.

NOTE: It was an abnormal Sunday for me today because right after church Christine and I immediately hit the road for Virginia so she could be with her family for a few weeks. Her mom is having surgery on Tuesday and will need help while recovering. The drive to where I was dropping her off to her dad was pretty much straight up I-85 for about 4 hours from Spartanburg, SC and I drove straight back. And I was already tired from being up at around 6:00AM today...wide awake to start the day and pooped out at the end!

Some of you have been asking about my NMR LipoProfile test I had run following my eggfest and here are the primary results:


As you can see, LDL and total cholesterol was pretty high, but I don't worry about that number. It's the HDL and triglycerides that are MUCH more important. Interestingly, while the triglycerides remained below 100 as they have been for the duration of my low-carb lifestyle, my HDL cholesterol actually went down slightly to 49. When I inquired with Dr. Mary Vernon about this at the Seattle conference last weekend, she said that is COMPLETELY NORMAL when you put your body through a significant change like losing 27 pounds in a month! She said that as my weight stabilizes out at some point that the lipids will follow.

So the "eggfest" is continuing to reap huge dividends for me and will continue to do so now that I've transitioned from that to a mostly real, whole foods low-carb nutritional approach. I'm not craving diet sodas or sweet of any kind and it's all because of the eggfest. Someone on my Twitter page just tried the eggfest for 10 days to see if it would zap her diet soda addiction and it did! WOO HOO! You'll never believe it until you try it for yourself.

NOTE: It's soccer season at my church with the Upward program and this one is probably the most physical referee job I do of football, basketball, and soccer. It's constant running around the field for three hours and I LOVE IT! Great workout. Christine is going to Virginia tomorrow afternoon to spend a few weeks with her mom who is having stomach surgery and so she asked if we could go out to her favorite Mexican restaurant for lunch. I was a little apprehensive since I've been doing so well with my all-real-foods diet as of late, but I said we could go. There was some concern I'd be tempted by the nacho chips and salsa as well as the diet soda. But I wasn't even close to wanting either.

I ordered an avocado salad since I knew what was in that. Although, when I got the Ranch dressing (on the side), I tasted it and could tell it had sugar or something sweet in it. Now that I don't eat anything sweet hardly anymore, sugary or otherwise, it's like my sensitivity to that kind of taste is heightened. This was revolutionary to me because I never thought of Ranch dressing as sweet. This is all a part of my continuing journey to try to stick with as many real, whole foods as I possibly can and feeding my body only the best it deserves. While Christine is gone I'll be continuing on with the eggs, butter, cheese, and grass-fed beef like I have been. I may not "feel" different eating this way, but I know it's better for me.

NOTE: It was "eggfest" redux today as I tried to get back in a groove again coming back from Seattle. Isn't it strange how long it takes to get back to normal again when you do a trip to another time zone? I'm sure I'll be feeling it a few more days, but the routine of eating is kicked back into high gear. Although I stayed very low-carb on my recent trip, I know I consumed quite a bit more calories than I would have if I was at home.

While I still don't buy into the need to unnecessarily restrict calories while on a low-carb diet, I do think it is possible especially when you are out in a social setting away from home to eat past satiety as you become engaged in conversation and stop listening to your body's internal signal to stop consuming food--even low-carb food. I didn't calculate calories while I was in Seattle but I would venture to guess they came in close to 3,000 daily. That's a 50% increase in my normal intake, so it would have been no surprise at all if that had some kind of impact on the scale when I returned.

Since I wasn't here last Friday to weigh in during my Seattle trip, today will be my first weigh-in in a couple of weeks. Honestly I expected to be up a couple of pounds, but imagine my surprise when I stepped on the scale and saw the exact same number that I did two weeks ago: 262.4! YES! I'll take that considering the fact I was up several pounds since I returned back to South Carolina.

I stocked up on more grass-fed ground beef that was just processed yesterday so it's the fresh, good stuff! Still sticking with the highest quality of real, whole foods I can consume and I'm LOVING it! Still no desire for diet sodas for nearly a month and I'm feeling more and more confident that I won't touch the stuff again. THIS IS A MAJOR MIRACLE PEOPLE! I'm a "sweet"-a-holic and doing just fine without anything artificially sweetened or otherwise. The freedom from bondage that this has given me is empowering beyond belief. I only expect even bigger and better things to happen from here.

NOTE: I got a late start to eating today because I had to fast overnight and head to my local LabCorp office to have some blood drawn for my NMR LipoProfile test. After the prodding of several of my astute menus blog readers who said I should see what impact the "eggfest" had on my lipids and finding a great place online that was both affordable and convenient, I decided to have the test done. When I got to the office, the lady asked me what I was having done. "I'm getting an NMR LipoProfile test," I responded. She leaned her head around the corner and said very loudly, "Hey, do we have any of those NMR tubes with the red top that aren't expired? Also, can you call customer service to see if it's okay that we use the blue top instead?" She then looked at me and said they hardly ever do this test (such a shame!) and that they will make sure they have 10 on hand for the future. Thankfully they did have the proper tube to do the test and I was in and out pretty quickly. In fact, I'm a big wimp with needles and this one was a cinch. WHEW! Results coming soon!

Needless to say, by the time I got home from the LabCorp office which is clear on the other side of town, I was ready to eat. So I whipped me up some eggs cooked in butter with cheese and went about my day. But I couldn't wait for my next meal of a grass-fed beef burger with some raw cheddar cheese on top with light spices...MY NEW FAVORITE MEAL! Here's a photo of it for you to drool over:



OMG, I could just eat that every meal for a month! It's so delicious eating this way and I'm still not having any cravings for diet soda (THREE WEEK OFF OF THEM AND COUNTING...) or anything artificial. That's pretty remarkable and I'm continuing to monitor my food intake to make sure I'm not consuming anything that would trigger those desires. So far, so good.

I've been blogging for a long time now and I think it's funny how many ways people try to sneak in links to their content and advertising sites in subtle (and NOT-so-subtle) ways. At first it was just in the comments, but it can also come as an e-mail. Here's a glaring example that I just got today that is obviously what I'm talking about:

Sounds sweet enough, right? For you new bloggers, I'm gonna break this one down for you to help you recognize why it's a scam and not as innocent as it might appear. First, you'll notice she mentions that she appreciates "those resources related to diabetes." Well, considering I myself don't have diabetes nor do I really discuss it on my MENUS blog, that's a red flag. Second, anyone who is a regular reader of my menus blog knows that it is simply a listing of what I eat each day with some commentary at the end. It's not something you would have a "guest blog" on. DUH! Third, a link to her web site shows it is a commerce site designed to sell products, not just provide "a little guide" on diabetes. Finally, I got multiple versions of this very same e-mail sent to me for my LLVLC blog, links blog, and podcast show web site. CRAZY! Just an FYI to help you see these shysters coming a mile away.

NOTE: Monday came and went for me pretty fast in this short work week from the office. Christine and I will be boarding a plane for Seattle, Washington on Thursday morning and won't be home again until next Monday afternoon. I'm looking forward to seeing so many amazing people in the world of low-carb nutrition, including Gary Taubes, Dr. Mary Vernon, Dr. Richard Feinman, Dr. Eric Westman, Jackie Eberstein, Nora Gedgaudas, Dr. Jeff Volek, Dr. Donald Layman, Dr. Steve Phinney, Dr. Eric Kosoff, Laura Dolson, Dr. Andreas Eenfeldt, and many many more! This really is a low-carb layperson's Disney World and I can't wait to share all about it on my blog! It should be a thrilling few days!

Of course, I am a bit concerned about meal scheduling and what I will eat during the trip, but I'm not gonna worry about it. I'll do the best I can to make great choices for myself and then get right back to the plan at hand when I return home. If there's one thing I've learned about livin' la vida low-carb is that you don't need to obsess over every little thing you do because that will drive you bonkers. But make the best choices you can most of the time and I think your body will thank you for that. I will continue to avoid diet soda and anything artificially sweetened as much as humanly possible. In the end, I think that will be better for my health anyway.

Today was a better day for my calories which landed just above the 2,000 mark after falling several hundred short of that yesterday. I knew this would be the challenge going from the eggfest to this very high-fat, adequate protein, very low-carb plan I am on. Even still, you'll notice I still ate quite a few eggs today because it's what I know and love (yes, I know it may be hard to believe, but I'm still LOVING my eggs!). During the week when I'm working from home, they will still comprise a good percentage of my meals. But I'm not gonna lie to you--that grass-fed burger meal is absolutely divine. The half-pound burger contains 612 calories, so I can't have too many of them and stay within my 2,000-calorie-a-day range. Even still, when I do I'm enjoying every last bite.

Tomorrow I'll be getting an NMR LipoProfile test done and I want to publicly thank Jeri for suggesting I have it done as a post-eggfest checkup to see what it did for me and to JD for telling me about PrivateMDLabs.com which had this specialized version of the lipid particle size test with a coupon for just $65. Within an hour I had confirmation that it was ready and that I could have my blood drawn after a 12-16 hour fast. I'll be doing that on Tuesday morning and can't wait to share the results with you and my LLVLC blog readers!

NOTE: I can tell already that Sunday is gonna be my most difficult day of the week to get my new real, whole foods-only plan right. This month I have been asked to sing on the praise team at church and that means getting there for practice at 8:00AM. Thankfully we only live about a mile away so it's not a long drive and I can eat right before we leave. But then we're there for the 9:15AM worship service, Sunday School, the 11:00AM worship service and get home around 12:30PM in time to rush to make my next meal. That's nearly five hours between meals which is the threshold of what I'm attempting to do based on what I've learned from the "eggfest" experiment. This then throws my eating schedule off for the remainder of the day and I was only able to get in three meals today.

Add to that that I underestimated on my calories today and came up a little over 400 calories short of the 2,000 threshold I have set for myself. In hindsight, I could have consumed two more eggs at the lunch meal, added cheese to both egg meals, and maybe even an extra tablespoon of butter to easily get to that mark. Oh well, I'm not gonna fret about it. I was satisfied with my meals today and that grassfed beef burger was simply mouthwateringly delicious. I added a couple of pinches of spices to it (all natural ingredients--no sugar or anything artificial) and I think I've found one of my new favorite meals. WOO HOO! The 1/2 pound burger was just over 600 calories and it was mostly fat, too. The taste difference between this and grain-fed ground beef is incredible. Listen to my recent podcast interview with Stanley Fishman, author of Tender Grassfed Meat, to find out why.

You'll notice the carbs are still very low, fat is pretty high, and protein moderate. That's still by design. What I've discovered about myself is I need this high-fat, adequate protein, very low-carb approach to keep my hunger and cravings at bay. I'm not saying everyone has to eat this way, but this is how I need to eat to keep me on the straight and narrow path I now find myself on. It's not gonna be something I can do sloppily and hope to see results. I'll need to stick with the frequent meals, the right macronutrient ratios, eating real whole foods the majority of the time, and keeping calories around 2,000 daily in order to get the results to my weight and health that I'm looking for. This journey has only just begun.

NOTE: Life after my month-long "eggfest" began today as this eggs-periment has come to an end of eating just eggs, butter, and cheese for every meal. It was an amazing journey and I encourage you to go back through my menus log from March 12, 2010 through April 9, 2010 to see the radical change that took place in my life as a result of this. Not many people can say they've gone through such paradigm shifts in their thinking about nutrition and health, but it happened for me TWICE--January 2004 when I started on the Atkins diet and March 2010 when I went on my eggfest. Momentous events in my life that will have a long-term positive impact on my weight and health.

I went light on my egg meals today knowing I would probably be eating a higher calorie dinner meal, but I was satisfied on two egg meals consisting of just 2 eggs and 1 tablespoon of butter. Those kept me well satiated until I met up with some of my fellow Paleo/low-carbers in the Greenville/Spartanburg, SC area at a local restaurant off I-85. We had such a good time talking about livin' la vida low-carb and I can't wait to meet with them again. Yes, I'm a ham, I know. Christine gives her fleeting glare at me when I do. HA! She knows she loves me (right honey?). The meal was absolutely divine and I had Christine capture it on video for me to share with you:



Oh, yes, there's nothing like ending the "eggfest" with a tender and delicious filet mignon with some non-starchy veggies. YUMMMMMMMY! By the time I got home and added up all the calories I had eaten for the day, I squeaked in under 2,000 so that was cool. I'm not necessarily counting calories, but I'm certainly attempting to keep them right around 2,000/day. My meals now that I'm off the "eggfest" will not be devoid of eggs--au contraire! They will still have PLENTY of eggs since I LOVE them (STILL!) and they have helped me immensely. But I'll throw in some grass-fed beef and other foods to mix it up keeping with the them of high-fat, adequate protein, and low-carb.

One interesting phenomenon happened after I finished eating my steak and veggies meal--I got "hungry" within a couple of hours after eating. I'm not sure if it was actual physical hunger or head hunger, but I felt the desire to eat. I can't help but think that even those few carbs I consumed in the broccoli and squash set off my cravings button again. I'm not opposed to eating vegetables, but maybe for me (and others) they're not as virtuous as some may think. This is why I'm going to take it easy transitioning away from the eggs too quickly because I want to make sure I'm putting the right fuel in my body that will keep me energized and satisfied without craving the "sweet" stuff (like diet soda) again. Baby steps, baby steps.

NOTE: It's the second to last day (29 days) of my eggfest and here were were my slightly raised calories for today: 13 pastured eggs (1040 calories) with 8 tablespoons of grass-fed butter (800 calories), and 3 ounce of raw cheddar cheese (270 calories) for a total of 2110 calories. I felt like eating an extra egg and cheese for supper tonight. Believe it or not, Christine asked me to go get her a pizza to eat. Really?! Are you kidding me? After explaining in a loving tone why she probably shouldn't have a pizza, she gave me that look that said she wasn't budging in her stance. Fine, I'll get you the pizza, but it doesn't mean I think it's a good idea for you. Christine will take longer to convince about these lessons I've learned from the "eggfest" because there are no immediate consequences for her. But someday there will.

Well, tomorrow is the big day when I make the transition from eating just eggs, butter, and cheese for the first time in a month to other real, whole, healthy, low-carb foods. It will be an interesting shift of gears for me because the simplicity of my "eggfest" is partially what has made it so successful for me. Adding in new dynamics like meat and even a few green leafy veggies will force my body to react differently...or maybe not. We're gonna see what happens. What I can tell you is this--I will likely keep on eating at least a couple of egg meals each day since I do love them and have not grown tired of consuming them at all. They're cheap, pastured, and are extremely healthy for me. I've consumed around 350 eggs in the past month alone and feel absolutely fantastic.

Someone made the comment that the biggest thing that happened to me during my "eggfest" experiment hasn't been the weight loss, but the removal of artificial sweeteners, especially diet sodas, from my menus. I couldn't agree more. Everyone has been congratulating me on finally having the willpower to beat this, but I disagree. If it was mere willpower, then I would have done it a LONG time ago. And believe me, I have tried! I don't know if it was the intensity of doing an egg-only diet or what that took away my cravings for them, but they're just completely gone now. In fact, I haven't drank anything except for water for 17 days now since I had my last diet soda and what a feeling that is. I don't even desire anything sweet on my tastebuds and for this sweet-a-holic that is a miracle in and of itself. People who don't have such a "sweet" addiction could never understand how difficult this is for people like me and others who deal with it, but somehow the "eggfest" has empowered me to do it. And doing it I am.

Progressing forward in my journey to continue shedding the pounds while maintaining my stellar health, I am going to be cognizant of everything I put into my mouth to make sure it is as free from artificial ingredients as possible. There will be times when that will be impossible, but I will try to prepare myself for situations when that may arise. My first test will be coming up in a week when I hop on an airplane for Seattle, Washington for the 2011 ASBP/N&M conference at the Hilton there. I've been so used to eating every 3-4 hours and accessibility to food at these things is next to impossible outside of the scheduled meal times which aren't like clockwork. I will need to bring some macadamia nuts, string cheese, or some other Paleo/low-carb "snack" foods to give me an in-between meal to make sure I don't mess up what I'm doing with my plan to eat every 3-4 hours. Wish me well when I'm there next Thursday through Monday.

Beginning tomorrow, I won't be counting the days in the "eggfest" anymore since it will for all intents and purposes be over as of 5PM. However, I will keep on tracking calories (not that I think they are necessary to keep limited, but for educational purposes for myself and my readers) as well as weighing in every Friday. Weight loss alone isn't the be-all, end-all of my success with what I'm doing, but it's a good marker that I'm on the right track. Additionally, I'll be getting blood work done on my lipid panel to see what if any changes have happened. Keep in mind I already had spectacular HDL, triglycerides, and LDL particles when I last checked them in late 2009, but they can't help but improve even more with my healthy high-fat, adequate protein, and low-carb meals from the past month. We'll see how that goes. Something else I am probably going to do is check my blood sugars again both fasting and after meals to see what I stand with my reactive hypoglycemia. I wouldn't be surprised to see it has improved dramatically, but we'll see for sure when I test. It may not happen until after the Seattle trip, but I will do it soon I promise.

I just want to send a great big THANK YOU to everyone who has been following my "eggfest" journey these past few weeks. Never once did I doubt what I was doing, but so many of you stood with me encouraging me to keep it going and to do what's right for me. That's exactly what I have done and will continue to do moving forward. One's diet is such a personal thing to many, but I don't mind putting mine out there for all the world to see because I have nothing to hide. I'm just one guy living his life (as an open book) the best he knows how and attempting to inspire people in the process to take their diet more seriously, too. I used to be a 400-pounder, so I know what kind of struggle this is for many. My mission with what I do is to give quality information in a readable format that engages people to make better choices for the sake of their health. NOTE: It's the end of Week 4 of my eggfest which is winding down coming to an end in a couple more days. Here were my calories today: 12 pastured eggs (960 calories) with 8 tablespoons of grass-fed butter (800 calories), and 2 ounce of raw cheddar cheese (180 calories) for a total of 1940 calories. I'm so pleased to bring you my four-week progress today and it's been quite the journey for me from when I started on this "eggfest" last month. I'd like to share just a few of the major changes in my mindset and actions that have happened in me from then until now and my hope that these changes will continue to take hold.

4 weeks ago, I was severely addicted to the taste of "sweet" consuming artificial sweeteners.
Today, I have NO desire for consuming anything artificially sweetened.

4 weeks ago, I felt like I had to have "low-carb" treats to feel satisfied.
Today, I have NO desire for consuming anything other than real, whole foods.

4 weeks ago, I was frustrated with my inability to shed the pounds even eating low-carb.
Today, I have confidence that I'm putting my body in the best possible position for weight loss.

4 weeks ago, I looked at food for the pleasure that it would provide to me.
Today, I see food as merely fuel for my body and find enjoyment in the things of life.

4 weeks ago, I was disappointed that I'd allowed myself to approach 300 pounds again.
Today, I'm sure I'll be back down to my original goal weight of 230 or lower by the end of 2010.

I could go on and on with all that has happened inside of me as a result of the "eggfest," but most of you who have been following this journey over the past month already know it's made a significant difference in my life. There's no way to describe what has happened other than acknowledging the real miracle that has happened in such a short period of time. As I've stated, I don't think I'm out of the woods yet, but I'm certainly positioned to be well on my way. I feel fantastic, but I've always felt great even before. Maybe this will take my weight and health journey to that next level. We shall see.

The results of my "eggfest" after 28 days were pretty much what I expected them to be. After weighing in at 289 pounds on March 12, 2010, I lost 14.2 pounds in week one, 6.4 pounds in week two, 3.8 pounds in week three and ANOTHER 2.2 POUNDS for a total of 26.6 pounds shed in just four weeks! WOO HOO! Some people have asked me what I'm gonna do to "speed up" the weight loss like I saw happening in the first week. Ummm, nothing. I'm quite content with losing 2-3 pounds a week here on out and will just let the scale do what it's gonna do. I'm not changing the basic principles of eating every few hours, keep the meals very high-fat, adequate protein, and very low-carb when I stop doing the eggs all day, every day. That's one thing I've had hammered into my head this past month--I gotta do what's right for me and that's exactly what I've been doing. It's working well so far so good.

As I move to add in some new fresh, real, whole foods to my diet beginning Saturday night, I will be moving slowly with this. The last thing I want to do is unravel all the changes I've been making by introducing too much, too fast. So, while I can appreciate the suggestions you may have for me about what you think I should be eating, I'm gonna do this the way I see fits me best. Feel free to offer your input, but I'm probably gonna start first with some grass-fed beef, maybe a few leafy greens, and anything I can find nutritious that meets the requirements for fat/protein/carbs I outlined above. After much thought and contemplation about how to move forward with this, I think this will put me in the best position to continue my success.

THANK YOU to everyone who has encouraged me in this "eggfest" journey and know that this is only the beginning. While I won't necessarily be eating just eggs, butter, and cheese anymore, I will still be eating a very clean diet that is wonderfully tasty and satisfying in every way. My four-week "eggfest" weigh-in is tomorrow and I look forward to sharing my progress with you. As I've stated, I will be ending my all-eggs-all-the-time plan on Saturday night when I meet up with some local low-carbers in the Greenville/Spartanburg, SC area. Not sure what I'm gonna eat yet, but it most definitely won't be eggs. Probably a steak and/or a salad, although I don't know how much I'll be able to eat since I've been used to eating meals consisting of around 500 calories of mostly fat and protein the past month. We'll see how it goes!

Although I will no longer be on my "eggfest" where all I'm eating is eggs, butter and cheese after Saturday, that doesn't mean I won't be consuming eggs anymore. They will still be a major part of my meals when I am in town. During the week, I thought I would have maybe a couple of egg meals and a couple of meat-based meals a day. Raw cheese will still be a part of my meals and I'll likely add some other fresh, real, whole foods to the mix as appropriate. As I've said, I don't want to make any drastric changes too quickly so as not to lose the momentum I've started with this whole experience. And I'm bound and determined to keep away from diet soda and other artificially ingredients as much as humanly possible. I have to laugh at people who still complain about my menus when all I've consumed is whole foods for the past month. Get over yourself already people!

The lessons I've learned from this "eggfest" I am hoping with last for a lifetime. I'm committed to this and feel like I've already overcome a lot of the things that were possibly holding me back. It's freeing to be in this position and I will be continuing to pursue this healthy way of eating even more in the months and years to come. The only time I think I'll have a problem is when I'm traveling. I have a trip to Seattle coming up next weekend and then one to NYC in May. It will be difficult to keep on my eat every 3-4 hours routine, but I will do my darndest to stick with the plan to keep my hyperinsulinemia controlled. I HAVE to, this isn't just an option. I'm looking forward to the challenge!

DIET SODAS: 0 (ZERO!!!) 2 WEEKS DIET SODA FREE!!!

NOTE: It's day 26 of my eggfest and my calories were a bit higher today: 12 pastured eggs (960 calories) with 8 tablespoons of grass-fed butter (800 calories), 2 ounce of raw cheddar cheese (180 calories) and 2 tablespoons heavy whipping cream (100 calories) for a total of 2040 calories. For my third egg meal today I decided to add a little bit of heavy whipping cream to the mix to "fluff" 'em up and boy did they ever! Those three eggs looked like about a half dozen after they were scrambled up and cooked and I was so full afterwards. However, I think the heavy cream was slightly bad because my stomach did the gurgles like I had consumed some maltitol-sweetened chocolate candies (of course I haven't had ANYTHING sweet to the taste or artificial in the past two weeks thank you very much). Thankfully the feeling passed and I was good to go for my find egg meal of the day.

I'm in the home stretch of this plan and I've got to say it's the most gratifying thing I've done for my healthy low-carb lifestyle since that initial experience of losing 180 pounds in 2004. I feel so alive, believe I can stick with the real whole foods I have been eating, and find the success I've been needing to get my weight back down again. Our bodies are such extraordinary machines that they adapt quite easily to whatever we do to them. I still can't imagine what my body was thinking about my old high-carb diet with a sugar rush virtually nonstop for 32 years, but I know that I'm light years ahead of where I was prior to my low-carb life. This eggfest has put me on that next step to finding the long-term weight and health I've been desiring and I realize this journey is far from over. I'm encouraged by what I've learned over the past month about myself and it gives me a lot to ponder as I move forward. THANKS for coming along for the ride!

NOTE: It's day 25 of my eggfest and my calories today were the following: 12 pastured eggs (960 calories) with 8 tablespoons of grass-fed butter (800 calories), 1 ounce of raw cheddar cheese (90 calories) and 1 ounce of raw yogurt cultured cheese (90 calories) for a total of 1940 calories. One of my readers noted that my butter is grass-fed, but not raw and that's exactly right. It's a lot better quality of butter as is the raw cheese I consume. These aren't necessarily required to increase weight loss, but they are certainly healthier for you (and taste better IMO!) than what you buy in the grocery store. Local farm eggs, butter and cheese are much better than anything they can put in your local supermarket (traveling thousands of miles to get to your dinner table). That's why I eat those kinds of foods instead.

One of my regular readers is a medical doctor who expressed his concerns over my "eggfest." Here's what he wrote:

Have you thought about the consequences of your having a bad outcome ie heart attack on this rather weird diet? Anti low carbers would be all over your case. I am a M.D. who is a diabetic and on very low carb diet. I eat eggs (at least 3 every day) and think it is unlikely that you will have trouble on the egg diet but if you did think about the bad press low carbing would get. You as, a prominent person in the low carb community, would have the high carbers jumping with joy and shouting from the rooftops about the evils of low carb not taking into account the fact that the egg diet is not what most low carb people eat. I wish you had not told anyone about the egg diet until it was successful which I gather so far it is. I also hope you are tracking your plaque with Dr. Davis or someone else to show that the diet is not causing any problems with your coronary arteries. Please don't have any trouble and good luck.


He and his wife were supposed to join us on The 3rd Annual Low-Carb Cruise to the Bahamas last month, but his wife got ill on the day the cruise was set to leave and they had to cancel. I really wish he could have heard people like Dr. Mary Vernon, Jackie Eberstein, Dr. Andreas Eenfeldt, etal. talk about this very subject. But here's what I wrote back to him:

Thanks for your concern. But I'm not at all worried about this eggfest I am doing. If there's one thing I've learned over the past six years of speaking with and listening to some of the world's brightest low-carb researchers and others, it's this: Dietary fat and cholesterol are not an issue as long as carbohydrate intake is significantly reduced. Not only am I NOT harming myself, but I'm actually making my HDL rise, my triglycerides fall, and increasing the size of my LDL cholesterol to the large, fluffy kind that are protective against a cardiovascular event. I appreciate your concern about what I'm doing, but my heart scan score of ZERO in August 2009 showed me that this way of eating I have chosen is the best thing I could have ever done for myself. Ridding my body of the artificial foods I was consuming in diet soda and processed low-carb food and now replacing them with just real, whole foods like eggs, butter and cheese has been a godsend for me.


Soon I'll be asking about an all-egg diet with my low-carb expert friends to get their take on all this. The eggfest is set to end this Saturday night at the conclusion of one month and I look forward to the results and transitioning to a healthy whole foods low-carb nutritional approach. I'm thinking about what my first non-egg meal should be: A salad or a steak? Hmmm...

Today was EASTER SUNDAY and what better day to be eating eggs! We had three morning worship services at 8, 9:15, and 11:00 and Christine and I sang on the praise team...which meant we had to be at the church at 7:00AM. Needless to say, getting in my second egg meal within 3-4 hours would have been a chore had I not found time to drive home between services to eat. But that's exactly what I did and happily so. Hope your Easter was a fun one!

NOTE: It's day 22 and I'm heading into my fourth week with the eggfest and I can honestly say I'm still loving this experience immensely. Here's the caloric information on the foods I consumed today: 12 pastured eggs (960 calories) with 8 tablespoons of raw butter (800 calories), and 2 ounces of raw cheddar cheese (180 calories) for a total of 1940 calories. With all the success I've had with this experiment, a lot of people are curious about what I'll be doing AFTER it's over. Well, I don't see myself going too much away from this basic plan of high fat, adequate protein, and very low-carb. I've learned that's what I need to get my weight back down while maintaining my health. I can and will do this long-term.

Regular readers of my blog and forum have noticed they have both been down a few days. Sorry about that. I've been having frequent outages over the past year with my current server provider and needed to make a change. On Wednesday night the switch was supposed to be made and it was gonna be a seamless transition that nobody would notice. Unfortunately, some of the code got messed up in the transition and my new IT guy is working feverishly with them to bring the service back. Don't fret, it'll be back soon. THANKS for your patience!

Since my sites were down today, Christine and I had a little extra time to go visit a place called Live Oak Farms about 15 miles from my house. YAY, I FINALLY found a local supplier of grass-fed meats, raw cheese, raw butter, and other delicious real whole foods that are a staple of my diet. I went ahead and bought three pounds of grass-fed beef for when I transition to eating meat with my eggs. I also got some yogurt cultured raw cheese for my eggs...can't wait to try that tomorrow! I was REALLY impressed with this farm and can't wait to go back and support my local farmer. I'm gonna try to get some YouTube video footage of the work they're doing there.

NOTE: It's the end of Week 3 of my eggfest and an update on how I'm doing is coming up today. Here's my calories from today's menu: 12 pastured eggs (960 calories) with 8 tablespoons of raw butter (800 calories), and 2 ounces of raw cheddar cheese (180 calories) for a total of 1940 calories. Today was officially three weeks on my all-egg diet and feel just as excited about this experiment today as I was on day one. Some can't fathom how eating the same meal four times a day with only slight variations could possibly be desirable, but I gotta tell you--this has been one of the most incredible things I've done since my initial foray into low-carbing 6+ years ago. Coming off of diet soda and losing all my taste for anything sweet has been an extraordinary personal paradigm shift for me that I believe will reap huge dividends to my health in the years to come.

Alright, I know you're ready for the Week 3 results, so here they are: Starting out at 289 pounds on March 12, 2010, I lost 14.2 pounds in the first week, another 6.4 pounds in week two, and this past week I LOST YET ANOTHER 3.8 POUNDS for a total of 24.4 pounds in 21 days! I've been in constant ketosis (DUH!) since I started this egg journey and the only thing I'm still dealing with is heartburn. It's only at night right before bedtime (before I'm lying down) and I had maybe three times all week I dealt with it. Also, I played some volleyball tonight and didn't feel well after 30 minutes, so I stopped playing. I don't know if it had anything to do with the eggs or not, but it was worth noting.

I'm continuing on the with the eggfest heading into one month this coming up week and I look forward to seeing the progress update next week to see if this eggfest is something maybe I should do during the week thereafter and eat healthy low-carb on the weekend. Still mulling it over in my mind how I want to do this, but I love the results I'm seeing with my plan and am happy to hear of so many others of you who have done well, too.
