NOTE: Today was Memorial Day and I just took it easy and relaxed most of the day. It's good for your health to get away from it all when you can and I've learned not to be such a work-a-holic so I can remained balanced in my life. Spending time with others, investing in your neighbor's kids, sharing good times with friends--it's all just as important a factor in healthy low-carb living as the diet itself. If you get so caught up in the day-to-day activities that you neglect all of the other important things that life has to offer, then you will burn out faster than you'd ever imagine! I never allow myself to get to that point which, ironically, allows me to get MORE done than I think I'm capable of.

My fasting blood glucose number was up again today--again, I'm not worried about it, but it is worth noting.

NOTE: Not sure what's happening with my fasting blood sugar lately, but today was at the highest it has been all week at 96. Still not eating the MYSTERY FOOD, so you can't exactly say it's "obviously" that. But I'll just keep tracking it each morning just to see how it's going. I knew I was a little messed up, but this is getting a little ridiculous.

Today we had communion at my church. I've previously blogged about whether low-carb dieters should partake in high-carb communion and my reasoning for doing it is that God will honor your remembrance of Him. Plus the carbs probably aren't that much in the end. Still, isn't it funny that communion is refined carbs followed by sugary carbs? GRRR!

After church, Christine and I went to a nice little hometown cafe that had a meat and two veggies with a roll lunch special. All of the meats were breaded except for the hamburger steak and the only low-carb veggie was green beans. So I ordered two servings of green beans with the hamburger steak. It was obvious this wasn't exactly the highest quality of food and eating grass-fed beef primarily has spoiled me for the good stuff. The meat was dry and when I asked for butter to put on my green beans, out comes this "spread" substance that wasn't going anywhere near being inside my body.

Needless to say, just a few hours later I was starving because of the lack of fat in that lunch meal. I told Christine I just HAD to make my supper meal early because my body was craving fat. I suppose I could have gotten some cheese or something else fatty to tide me over. But why not get what my body REALLY wants? And so I did. YUMMY!

NOTE: Started the day today testing my fasting blood sugar levels, but it was a little later than normal. Although I've been off the MYSTERY FOOD for several days now, it still rang in at 92. Yes, that's still a decent starting number, but it has been regularly in the lower 80s most of the time. We can't blame it on the MYSTERY FOOD because it hasn't been in my diet since earlier this week. Are there non-dietary reasons why fasting blood glucose levels would be elevated like that? Those of you who are diabetic or have knowledge with blood sugars feel free to chime in.

Had some raw chia seeds with my eggs again today. When you soak them in water they expand and create this gel-like substance that mixes well with eggs. And there's really no taste to them, but you get all of those healthy omega-3s into your body...GOTTA LOVE THAT! Well, I do love that and encourage you to find ways to add more good fats to your healthy low-carb lifestyle.

NOTE: Back at it again today after my two-pound weight gain last week. No, gaining is not the end of the world and certainly a lot of things can contribute to that happening. As I've stated again and again, I'm not at all worried about it and will just keep chugging along in this thing called life. Today at lunch Christine and I were invited to enjoy some delicious food that included shrimp, beef, and cornbread. Now usually I would eat cornbread, but these people were nice enough to make us a meal so I had a couple of bites of the cornbread with LOTS of butter. Never really been a fan of cornbread, but it was amazing!

My fasting blood glucose number was back down in the lower 80s again this morning when I checked, so that's interesting to note. Perhaps it was the MYSTERY FOOD that led to the increase in this fasting number...we'll see how my fasting blood sugar reading tomorrow morning is being off of the MYSTERY FOOD for several days. NOTE: As I stated yesterday, my fasting blood glucose numbers are slightly higher than I'd like for them to be the past few days, so I've completely cut out the MYSTERY FOOD for the next few days to see what if any impact that will have on my numbers. Obviously from the series of tests of my blood sugar levels the other day I didn't see a detrimental rise in blood sugar after eating the MYSTERY FOOD, but something is making the fasting number become elevated. Again, I'm not freaking out about it, but it's worth noting and making appropriate changes. We'll see what happens with it out of my diet.

Today was a pretty typical meal day, although my calories came in slightly lower than normal. A lot of people erroneously believe I am counting calories by listing them on my menus blog. Oh contraire. The purpose of my listing the calories is merely for informational purposes only. Yes, I tend to target 2,000 just as a general goal, but that doesn't mean I'm counting calories in the least. I'm simply eating food, allowing it to satisfy me, and in the quantities that are appropriate for me. Whatever the calories come in at is what it is. All the studies of low-carb diets presented at the recent Seattle conference where the researchers allowed unlimited amount of food at the disposal of the study participants found that there was a "spontaneous" reduction in calorie consumption because of the satiating properties of fat and protein. That's precisely what has happened to me.

NOTE: I noticed my fasting blood sugar reading was up today and I'm not going to obsess over it though. It's still well below 100, but I'd prefer to see that number remain in the lower 80s as much as possible. Perhaps the MYSTERY FOOD is impacting this--I don't know. I'll be cutting it out of my diet for the next three days just to see what impact it will have on returning my fasting glucose numbers to where they were previously. Yes, I'm trying to be more responsive to these kind of changes when they happen so that my weight and health are not negatively impacted. It's all a part of my new dietary focus these past few months. I am bound and determined to keep this momentum going no matter how much my metabolism wants to fight me along the way.

You'll notice I added in some raw chia seeds to my supper meal today. Remember that infomercial in the late 1980s/early 1990s with the "Ch-ch-ch-chia" plant? Well, it turns out that chia seeds are a great source of omega-3 fats as well as fiber. They are gluten-free and sugar-free and create this gel-like substance when you soak them in water. I interviewed an expert on chia seeds on my podcast today to air in a couple of months and so I just had to try some for myself. Like tofu, there's really no flavor to the chia seeds. But unlike tofu, these pack a powerful punch of nutrition that would be a welcome addition to any diet. I'm always looking for natural whole foods that can do just that in my menus and I look forward to trying other ways to put in healthy goodness whenever possible.

NOTE: WHEW! What a day of testing my blood sugars! My left middle and ring finger are still sore from all the poking I did today checking my blood sugars every 15 minutes following meals and every hour otherwise. It's a GREAT way to see what is happening to you that you may not even be aware of if you did not test. After last week's completely normal blood sugar tests now that I'm eating a real, whole foods diet almost exclusively, I wanted to see what if any impact the new MYSTERY FOOD I'm consuming is having on my blood sugar levels.

The day started off well with a fasting blood sugar reading of 80 when I got up. After my egg/butter/MYSTERY FOOD breakfast, I tested at 15-minute intervals for the next two hours. You can see a slight gradual rise in blood sugar as expected following a meal, but it didn't go above 93 for the next two hours. As we saw last week, my blood sugar tends to go up in the middle of the day and today was no exception when it reached the high for the day of 99 at 12:00PM. But by 1:00PM you could tell it was time for me to eat again as my blood sugar had fallen back down to 84 just before lunch.

Following my hamburger/cheese/mayo/MYSTERY FOOD lunch, I tested again for the next three hours at 15-minute intervals to obtain a nice set of numbers for this experiment. Fascinating stuff! Again we saw my blood sugar do a typical rise and fall following a meal going from 84 prior to the meal to readings of 91, 93, 96, 99, 94, 90, 85 over the next two hours. PERFECT! When I continued testing every 15 minutes into the third hour just for kicks, I was pleased to see remarkably stable blood sugar control for the next three hours. It wasn't until 6:00PM--nearly five hours after my previous meal--that I saw a drop in my blood sugar below fasting levels from this morning. This confirms why it is important for people who deal with reactive hypoglycemia to eat every 3-4 hours ideally and no later than 5 hours. Today I pushed that and my blood sugar levels showed it.

For supper I once again had eggs/butter/MYSTERY FOOD to eat and up my blood sugars went in the first hour before starting to come down to the upper 80s in the few hours prior to bedtime. It was another stellar day of testing that helps confirm what I'm doing for myself eating this way is helping my blood sugar control immensely. The range today was 76-99 and I'll take that every day of the week! And the good news is I'm not seeing the reactive hypoglycemic response like I was last year. After hearing Dr. Richard Bernstein speak in New York City a few weeks ago, I think I know why I was having this issue. He said simply distending the gut can lead to a rise in blood sugar levels even if what you eat is non-caloric. So all those diet sodas I was drinking (and there were a LOT of them!) were likely filling up my stomach so much that I was seeing an insulin release and making my blood sugar levels plummet even after a meal. It all makes sense to me now.

NOTE: Today I hit a monumental goal in my newfound efforts to stick with a real, whole low-carb foods diet as much as possible. After giving them up within 8 days of beginning my eggfest in mid-March, I haven't had a single diet soda now in 60 days. You know they say it takes that long to break a habit, so can I now say I've slain this monster in my life? I think so because I haven't even wanted one at all. Not even a sip...not even once! It's not like they haven't been available to me either. Christine still drinks them so they're in my refrigerator. And when we go out to a restaurant, they're available for me to order. But all I drink now is water. Removing the artificial sweeteners as a regular part of my life has been monumental.

You might notice I was up early today. Christine woke me up at 4:00AM on a Sunday morning frantically scratching her fingers through her hair stating, "There's a bug in the bed!" That's nice honey, come back to bed. She asked me to turn on the light and help her "look" for the bug. Ummmmm, how about I just keep laying here sleeping like I was? Wanting to help ease her worries, I turned on the light, shook her pillow and covers to get rid of the "bug" and Christine FINALLY came back into the bed to go back to sleep. No such luck for me. Adrenaline kicked in and I was wide awake after all of those early morning antics. I got up and finished working on some YouTube video stuff before it was time for church.

Since I was up early, I was curious what my blood sugars were doing that time of morning. The first reading of 82 was pretty typical for when I wake up. However, I didn't eat anything and had just a few sips of water and decided to check again 2 hours later--up to 88. Hmmmm...I wonder what makes blood sugar levels go up like that when no food is consumed? Of course, statistically that's little to no change. It's still curious to watch! By the way, I'll be measuring my blood sugars again with tomorrow's menus, including checking every 15-minute interval for two hours after each meal to see what's going on. Pray for my poor fingers.

Pretty good guesses so far on my MYSTERY FOOD and I'm anxious to see what if any impact it will have on my blood sugar results on Monday. We shall see! This afternoon I snoozed for several hours making up for the lost rest from Christine's bug-that-may-not-have-been-a-bug fiasco this morning. Felt good sleeping on a Sunday afternoon! It was a good weekend of livin' la vida low-carb!

Saturdays allow me to relax a bit after working hard all week long. That's not to say I don't sneak in a little work too, but most of it is just chillin' out and enjoying some time with Christine. Life is not all about go go go all the time. It's mostly about soaking in the moments and living in the here and now. That's the way I want my life to be lived.

NOTE: I decided to bring an element of surprise to my menus starting today with the introduction of what I'm calling "MYSTERY FOOD" on my menus. This ought to be fun watching all the pontification about what it is, but I can give you a few hints. It's not artificial, it's not sweetened, and it sticks with my whole foods diet. Next week I'll be testing my blood sugar levels every hour like I did this week just to see what impact this new food will have on my body. Should be fun!

We have this amazing local restaurant with a chef who only uses fresh, local ingredients as much as possible in his cooking and the food is exquisite! Christine had a tender pork loin that looked amazing and I opted for the salmon since I hadn't had seafood in a while. The sides with the Tilapia meal looked better so I asked if could substitute...so glad I did! Never seen spaghetti squash cubed before but it worked. The broccoli was perfectly cooked, too, and I added some extra butter for my fat preference level. It was an amazing meal together with my wife on our date night.

In the meantime, I'm pleased with continuing my real foods low-carb diet. It's been one of the most amazing experiences of my life and I'm thrilled to see what the next chapter of this journey will be like. THANKS for joining me on this great adventure!

NOTE: Just another day in low-carb paradise! After my incredible blood sugar results from testing every hour on the hour the other day with phenomenal blood sugar control, I couldn't be more pleased with the progress of my newfound commitment to choosing the best quality low-carb foods for my body. There's just something about eating foods like grass-fed beef, pastured eggs, grass-fed butter, raw cheese and more from local farmers that feels right and makes you proud of the food you are consuming. With delicious foods like these, you're not left wanting something sweet or artificial because you lose all of your desire for those things. Real food has awakened this person inside of me that I didn't even know existed and now I'm so excited about the prospect of things to come in the future.

While my blood sugar has been sensational (and I would assume my insulin levels as well--may get them tested in a few months, too), the weight loss has been somewhat slower than expected. I'm not discouraged about this, but it's an interesting observation to see how difficult the weight is coming off. But the good news is it IS still coming off with a little weight week after week. Today I weighed in at 257.8 pounds for another ONE POUND LOSS since last week. WOO HOO! It'd be great to see those 3-6 pound weight loss weeks like I did in 2004, but I'm not a 400-pound man anymore and I'm 38 years old. Father Time is likely kicking my tail as I attempt to do this--just means I'm gonna have to kick back harder! And I will continue to work the plan so it will work for me.

NOTE: After yesterday's glorious blood sugar reading experiment which I couldn't help but share with my readers at the "Livin' La Vida Low-Carb" blog, I thought it would be a good follow-up to test my fasting blood glucose levels each morning right before breakfast as an ongoing extension of that. It will be interesting to see how consistent the readings will remain in the upper 70s/lower 80s eating the way I do now with no artificially sweetened products like diet sodas as a regular part of my diet.

Just today I received an e-mail from someone asking me what I thought about sugar-free pudding and whether it was a good snack for people who are livin' la vida low-carb. My response was that it's better to move to as much real, whole low-carb foods as possible, but that I wouldn't judge her for making that kind of choice. After all, it took me six years to figure that out in my own low-carb life and at the right time that decision will be made by this reader. We are all at different levels in this journey and scorning someone for their food choices does no good in bringing them closer to making better choices.

That's been one of the most interesting aspects of this new commitment I've made to consuming real food as much as possible. I don't miss consuming diet soda or all that other low-carb convenience food, but I also understand how those things can help people who are transitioning from sugar/carbs to a sugar-free/low-carb lifestyle change. You're a lucky person if you've never been so severely addicted to sugar and sweet-tasting stuff that you can just drop it in an instant. For people like me who have long been sweet enslaved, it hasn't been an easy road. NOTE: Now that I've been eating a fairly clean low-carb diet for over two months since I started my "eggfest" on March 12, 2010, I thought it would be fun to see what is happening with my blood sugar readings today. I've written quite extensively about my bewildering blood sugar levels doing all sorts of strange things after I eat a meal. It turns out I was dealing with reactive hypoglycemia as identified by Dr. Keith Berkowitz in my podcast interview with him. But that was when I was still consuming some low-carb products, including diet sodas. I've been off of all artificial and sweet stuff now for 55 days and counting. I wondered what impact it would have on my blood sugar.

I wish I could have measured insulin levels at home, too, but blood sugar gives a lot of information for people wondering what is happening inside their body before and after meals--so I was excited to see an hourly update of my blood sugar levels from the time I woke up until I went to bed. Based on my previous experiences checking blood sugar levels like this one in July 2009, I thought I knew what I was in store for...but I actually got a BIG surprise! A VERY GOOD ONE TOO!

The first indicator that this was gonna be a great experiment came with my overnight fasting blood sugar reading first thing this morning. When I saw 75 on the glucose monitor, I almost did a backflip (well, in my mind at least). Sweet! Considering my fasting blood sugar levels last year were virtually always in the 90s to start the day, I was stoked about this. Of course, then it came time to eat and I was fully expecting the typical DROP in my blood sugar over the next few hours. But guess what? It didn't happen. The next four hours saw readings of 84, 94, 98, and 96 after consuming eggs and butter. AWESOME!

My previous blood sugar recordings showed me that my blood sugar tends to go up in the middle of the day and then come back down at night and today was no exception. Following my lunch meal of a grass-fed burger with cheese and mayo, my blood sugar stayed at the highest level of the day and began to come back down to the baseline reading as we entered the late afternoon. I wanted to hold off on eating supper for a little while longer just to see what would happen and predictably my blood sugar levels did dip below fasting baseline six hours after my previous meal. This confirmed that my strategy to try to eat every 4-5 hours is best for me. Following my egg and butter dinner, my blood sugar remained remarkably stable at 80, 80, 82, and 79 in the final four hours before I hit the sack.

All in all, with a range of 73-98 blood sugar readings today, I couldn't have been happier. That's just amazing to me how eating an all real, whole foods low-carb diet with no artificial sweeteners or additives of any kind has virtually cured my reactive hypoglycemia and provided me with stellar blood sugar control. I suppose none of this should surprise me in the least since it's been reported by many other people over my years of studying carbohydrate-restriction. But there's something about doing it yourself and seeing results like I did today that hammers home the point. When you see it, live it, and realize the good you are doing for your body eating this way, that can only motivate you to keep doing those things that got you there. That's what I'm gonna be doing in the months and years to come and I'm happy to be sharing this journey with you.

NOTE: Christine and I drove up the road to Charlotte, NC today to visit the closest Apple store to our house. It's about a 75-minute drive and we stopped at a restaurant on the way up I-85 for a nice bite to eat for lunch. Prime rib! It was so good with green beans/butter, a great salad and a beef fajitas appetizer without the wrap. The server looked at us funny, but I think she understood what we were doing. We had to go to the Apple store because I've been having trouble getting three one-hour videos off of my iPhone from the recent Nutrition & Metabolism Society strategy meeting in New York City a couple of weekends ago. All of the shorter videos downloaded to my iPhoto just fine, but not these. It turns out I need to upgrade my version of iPhoto and they'll download fine. I'm doing that this week and hope to have video footage from Dr. Richard Feinman, Dr. Richard Bernstein, and Dr. Eugene Fine up this weekend.

Tomorrow I'll be checking my blood sugar readings throughout the day to see how this all real whole foods diet is doing for my blood glucose. As you know from previous attempts at doing this, I've had some pretty severe hyperinsulinemia and corresponding reactive hypoglycemia after eating even a low-carb meal in the past with drops of 25-30 points (thus, the reason for beginning my eggfest in mid-March). This is not normal for blood sugars to do this, so it will be interesting to see how my readings are now that I've removed the junk from my low-carb diet. The improvements you see in your lipid panel alone are worth eating this way: higher HDL good cholesterol, significantly lower triglycerides, less small LDL particles that tend to be more atherosclerotic than the large, fluffy kind that are typical of low-carb dieters, and so much more! Lower blood pressure, stabilized blood sugar and insulin readings--I could go on and on forever talking about the amazing health benefits of healthy low-carb living. You just gotta live it to believe it!

Got into a conversation with the farmers there and invited them to come on my podcast show to talk about what they do and why they do it. Sounds like they may have some opinions about the government getting involved so heavily in what they do. Gonna try to make that happen later this year. NOTE: Today's my first weigh-in over the past couple of weeks since I was in New York City last Friday. While I stayed on plan while in The Big Apple, I still was a little nervous about how my weight would do with the traveling. When I went to Seattle last month, my weight pretty much stayed the same and predictably so since I likely consumed more calories than I normally would have (although the carbs remained very low and I'm still not drinking diet soda or consuming other artificial junk). When I'm back home where I can control my intake a little better, it's a good position to be in.

When I stepped on the scale to see the latest verdict in my renewed weight loss journey in 2010, I fully expected to be up about 1-3 pounds. I don't know if it was a psychological thing or what, but I just had this feeling I might be up in weight. Never mind the fact that I'm now on the last inner hole of my belt--a clear sign I'm losing belly fat. Sometimes you just "feel" bigger than you are. I call these having a "fat day." With all this swirling around my head today, I stepped on the scale: 2-5-8 . 8! COOL! I lost two pounds since two weeks ago when I weighed in last. There was nothing to worry about. I'm on the right track and doing well. Plus I'm now 50 DAYS DIET SODA FREE, baby!!! Ten more days and I think this newfound habit will have taken firm root. WOO HOO!

NOTE: Now that I'm back home for a while I'm gonna get into a regular routine of eating again. I prefer the 3-meal-a-day system best because it does feel the most natural for my body. That way I don't go too long between meals with my hyperinsulinemia and I'm able to keep blood sugar and insulin stable eating high-fat, moderate protein, and low-carb. Hunger is not and has not been a problem for me obviously. I could probably go the entire day and not eat anything if I chose to do that for whatever reason, but it would not be best for me. Fasting is one of the LAST things someone with a significant metabolic disorder needs to do because it can make these conditions worse. This isn't for everyone, but those who are like me and have very strange reactive hypoglycemia happening at virtually every meal need the regular meal intervals to keep blood sugars and insulin levels as stable as possible. That's why I try not to miss a meal even if I'm not hungry. It's the right thing to do to get a handle on this issue.

NOTE: It's good to be back home in the friendly confines of my regular routine because I can control exactly what kind of food I put in my mouth here. When I'm away on a trip, it can be a bit more challenging to say the least. Although I do love getting away from time to time, deep inside I'm a homebody who is perfectly content with sticking to a regimen. And we're home for a while now with no more trips planned until this Fall. WOO HOO!

Prior to my New York City trip this past weekend, I had been sticking mostly to consuming eggs, butter, cheese, grass-fed beef and just a very tiny amount of green leafy veggies. This has been by design to see how my body would respond to very few carbs. Honestly, I was expecting the weight loss to be a bit faster than it has been, but I'm not discouraged. I realize these metabolic disturbances take time to work through and I'm not even close to thinking about giving up on this whole, real foods nutritional approach I am on.

However, today I decided to add in more vegetables than I have been eating just to see what impact they would have on me. At lunch, I consumed 2 cups of cooked squash and zucchini as well as 1 cup of green beans (all with butter, of course!) to see if I would have any cravings or hunger a few hours later. I did not. Maybe I had sufficient butter or fat in the meats I was eating to stave them off, but that was a good sign. I'm not ready to go gung ho over putting a ton of veggies back into my diet too quickly, but my self-experiment today went well.

In fact, our hotel room overlooked Ground Zero and it was breathtaking looking down from the 44th Floor on this solemn ground. It's hard to believe it's already been NINE years since the terrorists attacked America. So glad we got to see where this historic event took place.



Christine wanted authentic NYC-styled pizza and I happily obliged. I wasn't even remotely tempted to have a bite although I've been told that stuff is amazing. NAH, not for me. Didn't really need it. We went to another restaurant so I could eat and I got some delicious shish kabob. Man, I love New York! Our flight was set to leave LaGuardia at 5:00PM, but it was 90 minutes late leaving. Ahhhhh, what a weekend!

Got back to Virginia and I was pretty hungry since we arrived later than I expected. Went to get some grub to take care of that issue before bedtime. We got a long trip back to South Carolina on Monday! Looking forward to getting back to my normal routine again.

NOTE: I'm excited about the progress of my recent focus on consuming the highest quality of real, whole foods I can find. It's still not a perfect diet, but it's a whole heckuva lot better one that I was eating the past six years and certainly light years ahead of the Standard American Diet (SAD) I was consuming prior to 2004 as a 400-pound behemoth of a man. But I don't regret the transition it took for me to go from that morbidly obese state into the smaller size I am now. Some people scoff at the notion that you do things like add artificial sweeteners instead of sugar, substitute favorite high-carb foods with low-carb alternatives, etc. because they say it feeds your addiction to carbohydrates. But I disagree.

My personal experience has shown me that those things are an outstanding way to NOT feel deprived while you are transitioning from eating crappy to eating healthier. When I was 410 pounds, I literally didn't care about what I put in my mouth because it didn't seem to matter inside my head. But when I turned to the Atkins diet to help me take the weight off (and subsequently get my health in line), all of a sudden my mind did a complete 180 and I suddenly became acutely aware of everything I was putting inside my body. It was as if a light switch was turned on and instantly I could see the fallacy of my old eating habits. It was an awakening of sorts that helped me become highly successful in my weight loss efforts and why you know who I am today.

In March 2010, the next phase of my journey took hold and a newfound awakening happened allowing the light to be turned on about the foods I added to my low-carb lifestyle over the past five years and I could see it was filled with a lot of junk. As much as I loved regularly consuming my beloved diet soda, sugar-free chocolate, low-carb pasta, low-carb ice cream, and all the other replacement foods that made low-carb enjoyable for me the past six years, those foods are not what we were intended to be consuming as the mainstay of our low-carb diet--EVER! I know, I know...I've been one of the leading low-carb junk food junkies for a long time and I'm here to say nobody should be eating these things ALL THE TIME. Perhaps once in a while it's not a big deal but several times a week or every single day? Not appropriate if you are attempting to be as healthy as possible.

With the light shining brightly on this aspect of my low-carb life, I couldn't help but change my habits. They had become somewhat sloppy again albeit with low-carb foods instead. So doing my eggfest a couple of months ago started a new transition for me away from relying on things like diet soda and all the other sugar-free, low-carb stuff that I had introduced into my life and towards fine-tuning my diet to prefer grass-fed beef, pastured eggs, grass-fed butter, quality cheeses, a few natural spices, some green leafy veggies, and water instead. Unless you've been through this journey yourself, you can't imagine how incredible it feels to make this kind of switch. It's monumental for me and I'm still in the midst of making it take hold in my life so that I can benefit both my weight and my health. The weight loss started fast and has slowed down, but that doesn't matter to me as much as allowing the good habits to take hold and stay there for life. That's my pursuit.

The argument could be made to just go all the way with your diet changes and more power to ya if you can pull that off. But I know for Jimmy Moore and others out there that this is a process that we all need to determine the perfect timing for us. Rushing into it too soon will only lead to discouragement and ultimate failure with discontentment about the process leading right back to poor dietary habits again. Although it is possible to make these changes later than need be, it's a whole lot better to be late than never. Yes, I'm probably late transitioning to the next phase in my lifestyle change, but I think the time has taught me what is right and what is wrong. I'll never claim that I have arrived and anyone who does has a rude awakening coming someday. But what I am is aware. Aware of my surroundings, aware of what's best for me at this moment in my life, aware that I hold the power to change and am making that change happen. The time is now for me. How about you?

I'm so happy to see so much enthusiasm about healthy low-carb living and I shouldn't be surprised to learn that one of the favorite parts of what I do is this menus blog. Who woulda thunk it that a guy writing down what he eats everyday would be such an intriguing subject for people, but it is. I consider it a privilege to share my low-carb lifestyle to help encourage others that this is a completely normal and I would say NATURAL way to eat to keep yourself healthy and happy for life.

DIET SODAS: 0 (ZERO!!!) 39 DAYS DIET SODA FREE!!!

NOTE: After I got home from church today, I was working pretty much the rest of the day on compiling the responses to my 5-Year Blogiversary survey and there's a TON of them to go through. I didn't even come close to going through half of them yet because there were so many this year. I'm not complaining at all because it's encouraging to know there is such a positive interest in low-carb living in 2010. The number of people who participated in this year's contest DOUBLED and that's huge considering not many people are talking about low-carb diets outside of our circles these days. When I can get through the rest of the entries, it will make for a fascinating set of results to share with you. But it may take me a while.

I leave for my New York City trip on Thursday midday headed to Virginia to pick up Christine and then we'll hop on a plane on Friday morning to arrive in The Big Apple around 12:30PM on Friday. We'll be there until Sunday afternoon at 5:00PM. If you live in or around the New York City area, we'd LOVE to meet you in person and chit chat with you if you'd like to do that while we're there. I'm a little concerned about my menus while in New York, but I'll manage. It's only a few days and I can get right back to my routine again when I get home. May 1, 2010 Low-Carb Menu

7:30AM
1/2 pound grass-fed ground beef burger with 2 ounces American cheddar and 1 Tbs mayo

9:00AM
3-hour youth soccer refereeing

2:15PM
4 eggs cooked with 2 Tbs grass-fed butter and 2 ounces American cheese

6:45PM
1/2 pound grass-fed ground beef burger with 2 ounces American cheddar and 1 Tbs mayo

DIET SODAS: 0 (ZERO!!!) 38 DAYS DIET SODA FREE!!!

NOTE: I had a higher calorie total today mostly because of the three hours of running around on the soccer field this morning refereeing Upward soccer at my church. The games are pretty much constant running up and down the field watching the kids and getting in position to make the call about possession and scores. I LOVE IT but when I got home today I sat in my recliner and snoozed baby! I make sure I fuel up good before I referee because it takes a lot of energy keeping up with all those eight and nine year old kids.

In fact, pretty much all day I relaxed and took some "me" time to enjoy myself watching some movies, playing some games, and not thinking too much about blogging or low-carb much at all. But my menus were spot on low-carb friendly all day long despite the increased calories. My local egg supplier called me to see if I needed more fresh eggs from his farm and I did. Picked up five dozen and he threw in a half-dozen eggs as a bonus for being a good regular customer. They now EXPECT me to get a bunch of eggs every week. I'm more than happy to oblige!
