NOTE: This morning I set the alarm to get up at 4:00AM so I could be one of the first people in line at my local AT&T store to get my hands on the new iPhone 4. When the product hit store shelves last Thursday morning and went on to sell 1.7 million units in just three days, needless to say it quickly sold out. The AT&T store actually had to push their launch date back because of the overwhelming demand by their customers. Thus, today was the BIG DAY!
After eating my egg breakfast, I headed out in the dark to AT&T around 4:45AM not sure what kind of line there would be. I knew there would be a few people there waiting already and sure enough there were probably nine people in line. So I was #10 and felt good about my chances of getting an iPhone 4 quickly after the store opened at 7:00AM. Over the next couple of hours as the sun rose and it got closer to opening time, the line kept growing and growing looping around the back side of the building as probably 50-60 people anxiously awaited their chance to get the hottest phone on the planet right now.
Once the doors opened, they let 10 people in the store at a time--so I was in the door first...barely! The guys at the front were a bunch of college students who had camped out since 10:00PM the night before and I got to go in at the same time they did. HA! So I got my new iPhone 4, passed down my 3GS to Christine and was dead tired most of the day. Got in about 30 minutes of sleep in the afternoon, but it was a full work day for me. Fueled up on my grass-fed beef for lunch and had a good dinner before hitting my head on that pillow for some much-needed shut-eye. But it was worth it to get that new iPhone!

NOTE: It was incredible feeling well enough to go to church today and I did pretty good considering I've been laid up on my back for a few weeks. But I felt strong, made it through the entire morning without getting fatigued, and it looks like this walking pneumonia is FINALLY behind me. Somebody say WOO HOO!
On the menus front today, I had my usual favorite egg-styled breakfast before heading off to church and then had a solid meal for lunch after church. But I really wasn't hungry the rest of the day. Hmmmm. If I'm not hungry and I didn't have any signs of hypoglycemia happening that would require me to eat--why eat? So I didn't. This definitely served the purpose of keeping my calories at a good level for me (again, not counting them but it's worthy of noting) and satisfying my appetite. Not hungry at all and things are going well for me again. We'll see how that translates to the scale come Friday.
Perhaps since I stopped eating so early in the day I could make it until 1:15PM on Monday afternoon before eating my next meal which would work out as a 24-hour intermittent fast. Of course, if I get hungry I can always eat. But it'll be interesting to see what happens. I've heard people doing well implementing this into their low-carb/Paleo diets and it feels natural when you don't force the issue like making a set time to do it at 6PM or something like that. Allowing your body to guide you seems to be the best way to go and I'm certainly gonna do that.
Because of my illness and all the cough syrup and meds I was taking over the past few weeks, I haven't been measuring my blood sugar levels but I will be resuming that again soon to see what's going on. Maybe measuring during one of my intermittent fasting times would be educational. We'll get that going again soon. THANKS for reading!

NOTE: Two things happened today with my menus. I wanted to try to bring my total intake down from where it has been the past couple of days and yet I didn't want to allow myself to get ravenously hungry either. So when I woke up and noticed I wasn't hungry, I decided to engage in a little intermittent fasting just to see how long I could go before eating. It wasn't too shabby considering I made it to early afternoon before needing to take my first bite and I wasn't ready to eat my arm because I was too famished. This I believe is a normal, natural way to consume food probably along the same lines that our hunter-gatherer forefathers engaged in. The end result for me today was still a good number of calories (not that I am counting them or care what the intake is necessarily since they have little to do with weight loss), but a reduction of nearly 25% in my intake. I'd consider that a GREAT success and another step in the right direction as I get back into the swing of things with my low-carb eating plan.

NOTE: Well, it's "D"-day of sorts here at my menus blog since I haven't weighed in for several weeks because of my walking pneumonia. During those three weeks I was probably sicker than I've ever been in my entire life, I took in more cough medicine with got knows what sugar in it, antibiotics, homeopathic stuff, more carbs than I normally would, and some junk "low-carb" foods to help me feel better in the midst of it all. And I haven't been able to exercise at all (although it's been so hot I don't know if I would have been able to anyway). While you may not have made these same choices for yourself, they worked for me to help me get through the illness. I wouldn't have changed a thing.
But what has the impact been on my weight from all of this stuff? We found out the answer to that question this morning when I stepped up on the scale to see my latest weigh-in reading of 266.6 pounds. That's a 6.2 pound weight gain since June 4, 2010 when I last weighed in. Frankly, I expected more weight gain considering all the stuff I was putting into my body. I consider this fortunate that it wasn't much worse and I'm excited about getting that back down again. I would think I'd be back to where I was by the end of July and will make it my goal to do just that. Of course, if I lose more that'd be great--the more the merrier.
It's interesting how people can respond to you when you put yourself out there as openly as I do with my low-carb lifestyle. Here's a comment from a man named Arthur that came into my "Livin' La Vida Low-Carb" blog comments section yesterday that will show you how truly low some segments of humanity will stoop just to bring others down while somehow trying to prop themselves up. This one's a classic!
Oh the joys of dealing with a nutritional know-it-all. I wrote him back asking him to please share what his definition of a "healthy diet" is so I can immediately deal with my "fat dysfunctional ugly body" right away. Waiting with bated breath! HA!
I can't tell you how good it is to feel better again. Daily I'm getting stronger again and despite what Arthur claims in his diatribe, these things are just sometimes inevitable regardless of how well you feed your body. The good news is my body is even better equipped now to ward off anything that could come my way and it'll be longer than five years before my next sickness. It's good to be livin' la vida low-carb and I'm proud to share about how it's changing my life for the better continually with tens of thousands of people daily!

One day, readers of this site will find out that Jimmy has died from a heart attack or another weird medical condition. His wife will tell us it is because of some unfortunate event. This will be all BS. Jimmy is killing himself with his diet. It kind of reminds me of someone called Atkins! His recent pneumonia is just another example of how his immune system is weak because of his poor uninformed nutrition that is not supported by science, just supported by fantasy repeated by a bunch of morons on the internet. The guy has been obese for years on this diet and now he can't recover from a pneumonia on antibiotics after more than 20 days. Wake up dude, you are killing yourself. Switch to a healthy diet, lose weight and maybe you'll be able to have your own kids one day. Maybe that's the price God is charging you for spreading your venom and lies over the internet: a fat dysfunctional ugly body.

I said I'll be back to eating lots of healthy eggs very soon--bought five dozen from him this time around!
Also got my grass-fed beef stocked up from Live Oak Farms just down the road about 10 miles from my house. They are the supplier for my grass-fed butter and raw cheeses, too. Christine and I will be visiting the farm on July 13, 2010 to shoot some YouTube video of the farm and how they take care of the animals to produce the wonderful food for the community. Should be an interesting day and we can't wait!
My calories were a bit higher today and I'm sure there will be an adjustment to get back to feeling what "normal" is again. I know my weight is up from the last time I weighed in prior to getting sick. That's okay and I'll happily report it here tomorrow. NOTE: It was Father's Day today and I haven't been to church is several weeks because of my walking pneumonia. But I've been starting to feel a little better and decided to venture out to see how I'd do. Christine and I sing in the choir at my church in both worship services and go to Sunday School after singing in the first service and then stay for the sermon at the second service. Well, I sang at the first service and my ears are still pretty stopped up--so it sounded like I was singing by myself. I was kinda in my own little world up there during the song and felt like I was gonna pass out. When we came down from the loft, I told Christine I didn't think I'd make it the second service, but let's go to Sunday School. I was basically a zombie in the class and stared at the wall a lot not realizing it until I caught myself doing it. Strange for me...probably shouldn't have gone to church yet. But I missed it and gave it the old college try. We went home after Sunday School was over.
At church, Christine had a bit of a difficult emotional experience when the pastor asked all of the fathers in the church to come down to the altar for prayer. Every single member of the men's section in the choir got up in mass and went down to the front except for me and one other single guy. This scenario played itself out six years ago when Christine bawled her eyes out seeing me standing there by myself while all the other men were at the altar. We'd usually avoided going to church on Mother's Day and Father's Day for this reason, but I thought there had been enough time since our failed IVF cycle in December 2007 forced us to realize we would never have biological children of our own. Yes, we know adoption is an option and we'd LOVE to try--but that process is also very expensive, arduous, long, and sometimes heartbreaking, too.
It wouldn't have been so bad until our pastor made the statement, "Fathers are the real backbone of the church more than anyone else." This was somewhat of a slap in the face to people like me who cannot have children but consider myself just as important a part of the church as anyone else. Why are men who are physically able to impregnate a woman any more worthy of being honored for their service to the church than those who cannot? That was a pretty tough pill to swallow even if I wasn't still sick and fatigued as I have been lately. Maybe I'm just overreacting to this a bit, but I had to express how it made me feel.
I am hoping within the next few days I will have more of my energy back so I can get back to my all whole food low-carb diet. The way I've been eating the past couple of weeks is admittedly not ideal for me, but it's the way I've chosen while going through this difficult experience. Most of it is low-carb, but not all. And I've allowed the "low-carb junk" in to help get me through it. Others may choose to be puritanical when they go through an illness of this magnitude and I applaud them for doing that. But I haven't been as successful doing that. Take it for what it is. I'm human and I'm the first to admit it. Hopefully sooner rather than later I'll be back on the straight and narrow path again with my diet and I appreciate your prayers and support for me as I go through the final stages of this crazy sickness.

NOTE: A little over a month ago, I was invited by the owner of a restaurant in downtown Greenville, South Carolina (about 15 miles from my home in Spartanburg) called Soby's to dine there and let him show me how he can make real local food that would fit within my low-carb lifestyle. I'll admit I was somewhat skeptical about this although most restaurants can accommodate your dietary choices. However, I've noticed some upscale restaurants tend to be more stickler about this than others. But looking at Chef Shaun Garcia's blog showed me he has a different philosophy about how he prepares food at his restaurant.
I still wasn't feeling great with my walking pneumonia, but we had this planned for a long time and I wasn't going to miss it! Christine and I sent in our order prior to arriving at the restaurant so they could make it low-carb and Chef Garcia didn't disappoint. My appetizer was an unusual one--PORK RINDS! But I gotta tell you those were the most delicious, buttery-tasting, melt-in-your-mouth pork rinds I've ever eaten. Then the salad he made was a fresh bed of local green leafy veggies with some outstanding ham and pecans and a light amount of homemade Ranch dressing. Then the dinner itself was a perfectly-cooked medium steak and cooked asparagus and local broccoli. I was so full by the time I got to the broccoli I couldn't eat a bite of it. Of course, I did have a little room for some sugar-free cookies afterwards and I drank a half glass of red wine that was pretty disgusting since I don't ever drink wine. How can people think that stuff tastes good? Maybe I'm missing something about it.
By the time I got home from this awesome "date night" trip, I was zapped of energy. Took my last antibiotic tonight and I'm not light years better like I was told I would be. I suppose I'll just keep taking it easy and get work done when I can. It's been no fun being sick like this and I don't wish it on anyone. Hopefully I'll just keep getting better day by day. Wish me well!

The doctor's office called back this afternoon and said they'd prescribe a "stronger" antibiotic called Avelox which cost me a cool $100 for five pills. It'll be worth every penny if I can get rid of this stuff for good. The fever stayed away today for the first time since this began and my coughing was lighter in the morning (although it got worse as the day progressed). Did two interviews this afternoon for my podcast (including one with Gary Taubes) with about half my voice, but I gotta get some work done. Driving me nuts lying around like I've been doing...but I do realize it's best for me and I'm doing my part to take it easy. The headaches I've been having are from coughing so much the nurse told me, so hopefully that gets better soon, too. Yes, today was a "feel-good" day with my menus, but I'm just so ready to be better. Wish me well!

NOTE: After being sick for the past week plus, today started off as a rather odd day for me. I've been laying around the house, chillin' out, taking medicine, drinking plenty of fluids, popping my Vitamin D and other supplements, and all the other stuff somebody with what I have should be doing. But this morning I had a film crew from South Korea in my home filming a segment on the health benefits of consuming butter. This has been in the works for many months and it just happened to coincide with my week from Hell being sick. They were here for two hours taking video footage of me making my eggs cooked in butter, asking me about my weight and health changes from eating a high-fat, low-carb diet, and other neat stuff I can't wait to share when it airs. The entire time I was sweating, blowing my nose, and hacking up a storm...I was miserable trying to put on a good face with a happy demeanor when I felt like crap. When they left, I was zapped and crashed on my recliner watching the U.S. play in the World Cup against England.
After the game, Christine said she was hungry and asked if we could go out. I was feeling somewhat better at that point but still had a low-grade fever of 99.1. I decided to "surprise" her by taking her to a place we hadn't been to in a while--Cracker Barrell! I was pleased to see this great big "low-carb offerings" menu there, but today was gonna be different for me. I decided to have an all-out carb-fest on purpose. Yep, the more carbs, the merrier. So I opted for things I haven't eaten in years--chicken and dumplings, hashbrowns, fried apples, and a pecan log. Christine couldn't believe her eyes watching me eat all that stuff, but I wanted it and quite frankly I needed it after going through this past week the way I have. Believe it or not, eating all those carbohydrates actually made me feel better and I started feeling strong enough to start typing here at my menus blog. NOTE: After being sick for the past week plus, today started off as a rather odd day for me. I've been laying around the house, chillin' out, taking medicine, drinking plenty of fluids, popping my Vitamin D and other supplements, and all the other stuff somebody with what I have should be doing. But this morning I had a film crew from South Korea in my home filming a segment on the health benefits of consuming butter. This has been in the works for many months and it just happened to coincide with my week from Hell being sick. They were here for two hours taking video footage of me making my eggs cooked in butter, asking me about my weight and health changes from eating a high-fat, low-carb diet, and other neat stuff I can't wait to share when it airs. The entire time I was sweating, blowing my nose, and hacking up a storm...I was miserable trying to put on a good face with a happy demeanor when I felt like crap. When they left, I was zapped and crashed on my recliner watching the U.S. play in the World Cup against England.
After the game, Christine said she was hungry and asked if we could go out. I was feeling somewhat better at that point but still had a low-grade fever of 99.1. I decided to "surprise" her by taking her to a place we hadn't been to in a while--Cracker Barrell! I was pleased to see this great big "low-carb offerings" menu there, but today was gonna be different for me. I decided to have an all-out carb-fest on purpose. Yep, the more carbs, the merrier. So I opted for things I haven't eaten in years--chicken and dumplings, hashbrowns, fried apples, and a pecan log. Christine couldn't believe her eyes watching me eat all that stuff, but I wanted it and quite frankly I needed it after going through this past week the way I have. Believe it or not, eating all those carbohydrates actually made me feel better and I started feeling strong enough to start typing here at my menus blog. He prescribed for me Cipro, a prescription cough syrup and Symbicort for shortness of breath. I have literally never been this sick in my entire life and if you know me I NEVER get sick at all. This is the first illness for me in several years and I credit my healthy low-carb lifestyle for keeping me strong and healthy. Unfortunately, even the low-carb diet won't make you entirely immune from getting sick as I've proven this week. Hopefully I'll be on the mend soon. Sorry for not updating my menus blog sooner, but better late than never!

My voice was gone and I felt awful all day long just laying around waiting for this fever to break. Burning eyes, headache, body aches and shivers, lethargic, dizzy, and just plain pitiful. I didn't even get to blog at all today and the intro audio for my podcast show set to air today was late (I sound like Lurch from The Addam's Family on it!). Plus I had to ditch TWO podcast interviews I had set up today and hopefully will reschedule them soon.
You'll notice I revealed the MYSTERY FOOD today--it's the Manna From Heaven bread from Julian's Bakery. Dr. Ron Rosedale shared about the bread in his book and I decided to add it to my diet to see if it would produce a positive impact. You'll also notice ChocoPerfection bars have bee in my diet the past couple of days, too. Delicious real chocolate can be a part of a wonderful low-carb lifestyle focused on real food. Plus it has made me feel better during this illness. Finally, I'll be sharing more about a new product soon called PaleoKits that is really really exciting! Today I tried the grainless granola bar made from the finest of ingredients. More about that coming soon!

We had a very sweet offer from a neighbor who brought us some zucchini bread. I wouldn't normally eat something like this, but I had a small slice with a LOT of butter on it--not too shabby! She said she didn't put any sugar in it and it was still amazing. LOVED IT! That gave me some good fuel to mow the grass before those dastardly afternoon thunderstorms hit as they have been everyday lately. Just my luck, the self-propelled part of the mower gave out on me so I was pushing that big load of metal around myself. Got a good workout in that way!
Slept like a baby this afternoon after finishing mowing and taking a shower. I could hear the thunder and the rain outside as I laid there smiling that I got the grass cut before it hit. Works out well that way sometimes.

Slept like a baby this afternoon after finishing mowing and taking a shower. I could hear the thunder and the rain outside as I laid there smiling that I got the grass cut before it hit. Works out well that way sometimes.

NOTE: Today was this week's "Monday" after the Memorial Day holiday yesterday and it was back to work again. I'm heavy into my recording schedule for my podcast show right now for the upcoming months. Lots of outstanding guests, but it's a bear getting all of the logistics lined up in perfect order to pull it all off. Somehow it works and I'm grateful to be a part of it. Even bought me a new wireless headphone/microphone headset that is supposed to be the best...I'm not real impressed with it so far, but maybe it'll grow on me.
