NOTE: Today was a bit lighter on the carbohydrates than I have been with green, leafy veggies the primary source along with the around 1g found in eggs. I go ahead and count eggs as 1g carbohydrate each although technically I think it's like .7g per large egg. It's just a way to be honest about reporting my carb intake. The broccoli I've been eating tends to be a bit higher in total carbohydrates with a good amount of fiber in it that can be deducted for the net carbs. Christine and I stopped by a lady's house about 2 miles from our home where she sells fresh, local veggies and picked up some squash and green beans out of the garden. Can't wait to eat these in the coming days, although squash does tend to be higher in carbohydrates than salad greens or broccoli coming in around 10g for 1/2 cup serving. But it's real food that tastes amazing--especially with LOTS of butter! Looking forward to digging into that soon. And I'm anxious to see how this slight shift in my dietary intake--which has not compromised calories at all this week--will show up on the scale in a couple of days.

And I LOVE my salmon when I have it, too. Good stuff! Had a few more veggie carbs today than I have been since starting on this no-yeast (no cheese, sour cream, mustard, etc.) plan a few days back. Taking probiotics three times throughout the day has been an interesting experiment, too. Remembering to do it is the biggest challenge, but I just keep the bottle out on the table to remember. NOTE: I was faced with a bit of a conundrum today with two activities planned at the same time with my church. The first one was a cookout by a nice lake with the members of the choir and orchestra at my church. They planned on having fried chicken with knick-knack side items, finger foods and desserts. These kind of events always frustrate me as a low-carber because I have to eat something beforehand so I'm not STARVING when there's nothing there for me to eat. Just once I'd love for somebody to bring a big pot roast or rotisserie chicken to one of these things for those of us who can't have all that carb-laden food. But I digress. The other event happening was a steak dinner at the local Marriott raising money for the missions fund set up to help those who want to take mission trips but can't afford to go. Christine and I have always tried to help individuals we know who want to go any way that we can and so this was certainly a worthy cause to be a part of. And it didn't hurt they had a big fat juicy steak for us. Of course, I had to pick around the mashed potatoes and some sweet something on my plate to get to that slab of meat. And there was some chocolate cheesecake concoction for dessert--did fine without it! People are always amazed by my "willpower" but I often tell them this isn't about being strong mentally, but rather making a concerted effort to make better choices for the sake of my health. The conversation at my table (yes, we did the steak dinner!) about healthy living was awesome and people seemed to respect what I was sharing (although they still shoved that dessert down their mouths). Oh well, you can't change their hearts overnight!

Buh-bye! It wasn't that bad, although I was really wanting some cheese with my eggs for breakfast or some mixed in with my grassfed beef lunch meal. But I survived and rather enjoyed my meal selections today. The carbs were at Atkins-Induction levels and calories fell within the 1800-2300 range that Jackie Eberstein suggested I stay in during this one-month experience to see if the yeast is indeed the issue from the antibiotics I took for my recent bout with walking pneumonia. One thing I didn't mention was that she said not to be surprised if weight loss is slow to begin with since the gut flora is probably way out of kilter at this point. Heavy doses three times a day of probiotics along with the yeast-free plan should help restore balance to the bacterial organisms that need to be working in your body properly to commence weight loss. I'm hopeful today was the first step back in the right direction even if it has been a hard road going at times. I've got a plan and I'm sticking with it.

NOTE: Weigh-in day today and the number came in at 280.4. With this recent weight gain trend that's been happening, I decided to tap one of my most trusted resources when it comes to Atkins low-carb living: Jackie Eberstein. Jackie is a registered nurse who worked with the late, great Dr. Robert C. Atkins himself for nearly three decades in his complementary medicine clinic in New York City. Over the years she has seen just about anything and everything when it comes to perplexing patient situations where they are resistant to weight loss even eating a low-carb diet. I'm grateful for her expertise and was happy to speak with her today about my situation.
She asked me about my recent walking pneumonia illness from a couple of months back and whether I had to take any antibiotics. When I responded that they put me on not just one, but two rounds of two different very strong antibiotics, Jackie said that might explain my most recent struggles with the weight. Although I do take probiotics on a daily basis, she said those antibiotics probably zapped most of the good bacteria with them making me more susceptible to yeast. Taking my acidophilus THREE TIMES a day rather than one over an extended period of up to two months will hopefully replenish that good bacteria in my gut. Bringing balance back to my gut health is vital to seeing weight loss commence.
Since yeast and mold is possibly very sensitive in me because of the antibiotics, she suggested I eliminate foods that contain it, including mushrooms, sour cream, vinegar-based foods like mustard, and--YOU GUESSED IT!--cheese. Grrr! So my experiment into avoiding dairy starts in earnest on Friday. I know many of my menus blog readers have said to try ditching the dairy foods for a period to see if that makes a difference. Of course, this is for a different reason altogether, but I suppose the desired end result is the same. No more cheese on my hamburger patty. No more mustard with my burger either. This is for at least a month to see how my body responds.
Jackie asked about my energy levels and I said they were a little less than normal. She suggested a supplement called tyrosine in 500mg dosage once in the morning and then again in the afternoon to help with that as well as any thyroid problems that may be happening. One thing she did state is that I probably need a full thyroid panel test conducted to measure T3 and T4 levels as there may be something going on there. Measuring my temperature when I first wake up, before meals, and at bedtime for four days and getting the average of all of those numbers will help indicate whether there is some abnormality in the thyroid function. I honestly believe SOMETHING is going on as an underlying issue because I shouldn't be gaining with what I'm eating.
Green leafy and non-starchy veggies were encouraged to go along with my non-yeast diet that will likely consist mostly of pastured eggs and grass-fed beef. She did say that butter was okay to consume as much as I want of as well as coconut oil, so that will be my fat sources. When I asked about calories, Jackie noted that I should not dip below 1800 and that a maximum of 2300 should be right for a man my size. Although my friend Muata suggested I give my weight loss attempts a rest for a period of time, I think this is the right strategy to move forward with because I have to get to the core issue that's impacting my weight. Some have used my struggles as a means of mocking the low-carb lifestyle stating that it doesn't even work for one of its biggest supporters. This issue I'm dealing with obviously goes much deeper than the low-carb diet. It really doesn't matter what diet I'd be eating right now, I'd probably be dealing with the same things.
The good news is I feel good other than the bloating possibly from this yeast issue brought on by the antibiotics along with some minor diarrhea. We're working on resolving these issues through a specific, strict diet in the coming weeks and I am hopeful this will get my body going in the right direction again. Weight loss is not really my goal...I need to lose stored body fat and to get rid of this belly that has begun to grow again. Was it the antibiotics that triggered this? I dunno. But it's a theory worth pursuing with some targeted changes in what I've been doing. Wish me well as I take this next step to figuring out what is going on.

With funkiness ruling the roost right now with my weight, I'm just trying to change things up a bit to see if we can knock some sense into my metabolism.
One of my regular menus blog readers has graciously offered to pay for a diet genetics test that I placed an order for today that allegedly tells you the diet and exercise plan that is right for you based on the results of a test using a swab of saliva from the inside of your cheek. I'll get the test in about a week and then the results will be mailed to me with suggestions about macronutrient ratios, the kind of exercise to engage in, and the length of exercise for my genetic type. It sounds kinda hocus pocus to me, but we shall see. I'll blog my experience when I get the results.

NOTE: I had a hankering for some chicken wings again today and wanted to see how many it would take to feel satisfied. Yesterday I ate 10 of them and was still not adequately satiated when I was finished. Part of the problem with chicken is that although it's a great source of protein, it's woefully inadequate in fat. So you have to add more fat in the form of deep frying it for the chicken wings, dipping or cooking them in butter or coconut oil, and adding in Ranch dressing. But chicken wings are a delicious low-carb meal and I was happy to partake in them today. It took to wing #25 before I felt I had enough. Perhaps that was too much as my calorie total for the day reflects, but it is what it is. And I didn't need to eat the rest of the day.
Now that the weather has gotten a little cooler from the scorching hot summer months and the rain has also subsided, I did some short interval sprints today up and down my neighborhood street. It felt good to get out there and run like the wind for 20-30 seconds, take a quick breather and repeat over and over again for 15 minutes. I suppose I could have gone longer, but this was my first go-round with doing this. I'll try to be consistent and add in more as my body adjusts. Something's gotta give with what is happening with my weight right now and I'm checking every area of my lifestyle to make sure nothing is being overlooked.

I surprised my sweet wife Christine today with an impromptu "date night" at O'Charley's. We usually have one on Friday nights, but Monday night seemed like a way to lift her spirits since she was having a "down" day today. She had a great time with a fantastic meal, too. Mission accomplished.

NOTE: What a day! At church today they had the bloodmobile there, so Christine and I decided to forgo Sunday School to give some blood to help the local hospitals and patients who need it. My blood type is A+ which is pretty common, but Christine's is one of the rarer types as B-. I was pumping out the blood and finished as Christine was having trouble with the needle pushing through her thin veins. She ended up only being able to give about a half pint of blood before it started clotting and stopped altogether. It was disappointing for her and them since she has the rare type that is so sorely needed. Equally disappointing was what they had for the "food and beverages" after you gave--Little Debbie snack cakes, apple juice, orange juice, and V-8. GRRRR! When I told her none of the above, she said I gotta drink something. There was a water fountain in our church gym where the blood drive was taking place and I filled up on it. How disappointing for people who are diabetic or livin' la vida low-carb. The nurse said budget cuts prevent them from offering higher-quality snacks.
We also had a church-wide picnic at the local family gym with a cookout and fun. The meal consisted of chili dogs with potato chips, M&M cookie, and sweet tea. Of course, by now they know I won't eat all the "carby" stuff, so they gladly put a couple of bunless hot dogs on a plate for me with a little chili on top. I added some mustard from the condiments section (which also had the HFCS-infested ketchup in it, too!) to top it off. Unfortunately, they didn't have any forks since all of the food was meant to be eaten with your hands. GRRRR again since I didn't need the bun. I joked with Christine that I should have gotten the bun to "hold" my hot dogs and eat them with. Isn't it funny how we don't really NEED the bun except as a means for holding the food?
Of course, I couldn't be at a gym without getting in a little bit of a workout playing my favorite sport of all-time: VOLLEYBALL! But it was like a sauna in there with a relative humidity of 100%...you were dripping with sweat within seconds of being in there. Me and a guy from my Sunday School class took on a couple of young whooper snappers in a series of games that only ended because we couldn't breathe anymore from the heat. Yes, we kicked their butts! LOL! I was soaking wet from all the sweating and it felt good too! When I got home from the event, I told Christine I was hungry. So I made my grass-fed hamburger meal I love so much.
Oh, speaking of blood type, I will be sharing an interview with Dr. James D'Adamo who is the father of the Blood Type Diet coming up on November 18, 2010 since so many people have been curious about it. It's a fascinating topic to say the least!

So our church had about a dozen or so members drive down to help out with the final movie and it was a lot of fun. Of all the jobs I could have done, somehow I got dubbed the "bug guy" since I carried around a big sign and a can of bug spray! Actually, it was a pretty nifty job since everybody was happy to see me walking around:

Later on when the movie started, I was the "popcorn guy" passing out this stuff I wouldn't personally eat in a million years--but it was the ministry opportunity I had before me. How do you beat back our cultural insistence on eating popcorn and drinking sugary soda (both were free at this event) when watching a movie? It's a huge battle to say the least. When the event was over, a group of us went out to Cracker Barrel to eat since we were quite hungry and tired from the walking around at this park serving others. I LOVE this restaurant because they have a neat low-carb menu and I happily got the meal with lots of meat and eggs--WOO HOO! Good stuff!

Perhaps I consumed more calories than normal when we were in Indiana, but I didn't go off the deep end on my eating. Even still, my weight went up to 278.6. I find it curious how some people find joy in seeing me gain weight and I suppose that's just the nature of the Internet these days. People will say things online they would NEVER even think about saying to your face. And that's too bad because the viciousness of the dieting world is bad enough without more piling on from complete strangers. This is why I can understand the trepidation of some people to put themselves out there. Me personally, I don't care because I'm a whole heckuva lot better off now with my health than I was at 410 pounds. Would I like to weigh less? Sure. But I like being healthy and making healthier choices for myself. That's what you see here in my menus and I'm constantly seeking to make them even better. After about a minute the mower stalled out and I tried to crank it again...loosey goosey! GRRRR! I took it back to the neighbor thanking him for letting me borrow it, but I'd have to find another neighbor to borrow a mower from. Thankfully my next door neighbor had a push mower I could use, but I was running out of daylight with tall, wet grass ahead of me and thunderstorms threatening. Although it was a lot of slow go and lots of stalls due to the height and dampness of the grass, I got it done. In fact, the last few strips of grass were cut in complete darkness which was kinda crazy. But it's DONE at long last. With all the rain we've been getting lately, I couldn't let it go too much longer without giving it a buzz...and it was fantastic exercise for me, too!

This is one reason why I wanted Christine to be there this year to see her family because we don't know how much longer some dear family members will be with us. She was glad I insisted we go. And so was I.

NOTE: It was a hot day today in Indiana and guess what Jimmy does with his father-in-law and three other men in the family. We head out to the local golf course to hit a little white ball for four hours. I know, crazy stuff! But it's a family tradition and we had to keep it going. I played with one of my father-in-law's brothers and then my father-in-law got the other brother for a "best ball" tourney. It's fun because I'm not that good at golf, but the brothers are VERY good. I was able to putt in two birdies and an eagle and I hit my shot on the 18th hole just a couple of inches short of being perfect before it rolled into the sand trap. We lost, but it was a good day.
Boy oh boy, though, I got some sunburn. However, it wasn't as sore as it usually is. The heat was sweltering, but I agree with others who switch to a high-fat, low-carb lifestyle, you just don't have the problem with sunburn anymore like you did when you ate less fat. I'm not sure why this works, but it does. That's not to say I didn't feel the effects of the sunburn when I went to bed tonight, but it's been a whole heckuva lot worse in the past.
This evening we had a cookout at one of the brothers' homes and they grilled pork tenderloin that was so tasty and lowcarbolicious! Sure, there were plenty of carb-filled foods to choose from as well--baked potatoes, pasta salad, and desserts galore--but that tenderloin looked amazing enough to be my entire meal. One of the family members asked, "Can't you have the apple salad or the strawberry pie? They're fruit you know?" I smiled and explained that those are still sugary and that my blood sugar would be adversely impacted if I ate those. He replied, "Well, we wouldn't want that to happen." No we wouldn't. :)

NOTE: Today was the family reunion with Christine's family in Indiana. The meal fare was all the typical stuff highlighted by fried chicken, macaroni & cheese, pasta salad, and desserts galore. I stuck with foods I could eat like hot dogs, meatballs, and ham, but I did allow myself one spoonful of a dessert Christine's grandmother made called Oreo Delight. It didn't take a plateful of the stuff to satisfy me and I had just enough to get the taste. Way too sweet to eat something like that everyday.
Of course, for suppertime the meal was leftovers of all the carby stuff, so I ran out to Hardee's to get my fat and protein. Ahhhh, thank goodness for options like this. It's been a long, tiring day, but I'm looking forward to a great week. Cookouts, golf, card playing, and family. This is what makes coming to Indiana so much fun!

Went to a buffet place where we are staying in Indiana and got my favorite low-carb foods. I was telling Christine how it's funny there are "two breakfast" cultures in America--high-carb offerings and high-fat, low-carb offerings. It's all a matter of choice.
For lunch, I met up with some low-carb friends at Dana Carpender's house with about 20 people having a good time sharing conversation and FOOD good on a low-carb lifestyle. It was party food, so nothing fancy schmancy. It was AWESOME meeting so many people and hearing them talk about their low-carb way of life. The in-laws ordered some pizzas for supper and I had the toppings off of them. One said, "The crust is the best part" and I just sat there smiling eating my pepperoni and cheese. They don't realize this is a lifestyle change that I made for a LIFETIME and not just some temporal diet. All I can do is show them by example. Having a great time in Indiana.

But getting to meet you guys in person is a real thrill and I'm always happy to shake your hand, thank you for supporting me, and getting to know the real people who frequent my sites on a daily basis.
One such encounter happened today when one of my forum members and low-carb weight loss success Rev. Brian Sharp drove down to my hometown of Spartanburg, SC for a Choral Festival taking place this weekend. Ministers of music from all across the United States come into this very prestigious event that features the new music that is available for choirs to sing. We met up with Brian and his minister of music friend Andy at Wild Wing Cafe in downtown Spartanburg, SC. Andy dared Brian to have the "Braveheart" wing which is supposed to be the "hottest wing" they sell at this place. I caught the reaction on camera:

TOO FUNNY! He did a lot better than I ever would have because as you can tell from my menus, I don't do spicy hot at all. Never been a fan of igniting my mouth with a lot of spicy heat (sorry Bobby Flay!). But Brian was a trooper and ate that whole thing. This guy is a bona-fide success story too shedding over 85 pounds after being inspired by my weight loss success. He's a living example of what high-fat, moderate protein, low-carb living is all about and I'm proud to have met him in person. I brought him some MCT oil since he asked me about it recently and he got me a Tennessee Vols cap (GO BIG ORANGE!) since that's my alma mater. We had a fantastic time chatting with him and Andy about the amazing benefits of livin' la vida low-carb.

NOTE: The grass has been brown most of the summer because of the super-hot weather and very little rain. But over the past week we've experienced quite a few days of heavy soaking rain and now the lush green grass is back. So today I tackled it and got out there to cut it with my crazy lawnmower. This thing cranks great, but it breaks down a lot and the self-propelled feature broke on it. I think I'll be returning this to Sam's Club tomorrow because this is the second time this summer this featured stopped working on this exact same model. GRRRR! Don't ya wish things would just work the way they're supposed to?
On a positive note, did you see the new low-carb study out of Temple University today? Dr. Gary Foster conducted a two-year diet comparison study of low-carb vs. low-fat to see which would be better for weight loss and health improvements. Unfortunately, after three months on the study when there were very clear lines of demarkation between the two diets, he had the low-carb dieters start adding back in 5g carbohydrate/day each week until they were no longer in ketosis. NOTE: The grass has been brown most of the summer because of the super-hot weather and very little rain. But over the past week we've experienced quite a few days of heavy soaking rain and now the lush green grass is back. So today I tackled it and got out there to cut it with my crazy lawnmower. This thing cranks great, but it breaks down a lot and the self-propelled feature broke on it. I think I'll be returning this to Sam's Club tomorrow because this is the second time this summer this featured stopped working on this exact same model. GRRRR! Don't ya wish things would just work the way they're supposed to?
On a positive note, did you see the new low-carb study out of Temple University today? Dr. Gary Foster conducted a two-year diet comparison study of low-carb vs. low-fat to see which would be better for weight loss and health improvements. Unfortunately, after three months on the study when there were very clear lines of demarkation between the two diets, he had the low-carb dieters start adding back in 5g carbohydrate/day each week until they were no longer in ketosis.
