2 slices Julian Bakery Smart Carb #1 bread cooked in coconut oil with American cheese, homemade low-carb chocolate chip cookies

9:15PM
2 cups spinach leaves with 2 hardboiled eggs, 1 slice crumbled bacon, 2 ounces shredded cheddar cheese, sunflower seeds, and 4 Tbs Ranch dressing, 1/2 grilled BBQ chicken breast

NOTE: I'm gearing up for trying something new in my diet and exercise routine starting on Monday since my weight is still pretty stagnant. Something's gotta give and I'm gonna keep trying new stuff until I figure it out.

December 30, 2010 Low-Carb Menu

9:15AM
Vanilla Almond QuestBar

10:00AM
Cardi-yo-lates (10 minutes brisk walking, 50 minutes of Pilates/yoga)

2:15PM
2 cups spinach leaves with 2 hardboiled eggs, 1 slice crumbled bacon, 2 ounces shredded cheddar cheese, and 4 Tbs Ranch dressing, full rack of BBQ ribs

10:00PM
2 slices Julian Bakery Smart Carb #1 bread with 2 Tbs natural tomato sauce, 2 ounces mozzarella cheese, and 12 pepperoni slices

NOTE: After Monday's Pilates class, I "felt" it more than usual and when I woke up on Tuesday morning I was sore in my back, shoulders, legs...heck, all over my body! So with great regret I decided to give my body a rest and NOT go to one of my favorite classes at my local gym--Namaste yoga. These yoga classes have been an amazing addition to my overall health by helping me shut out the stressful parts of life and increasing my flexibility. I love 'em! It felt great to be back in class today for a mixed class of Pilates/yoga. One of my goals for 2011 is to improve my tight hamstrings and to get better and better at doing the poses. I'm best at hip stretches and even sun salutations. My worst areas are balance and ab/core work. If you've never tried Pilates or yoga, I HIGHLY recommend it.

December 29, 2010 Low-Carb Menu

1:15PM
2 cups spinach leaves with 2 hardboiled eggs, 1 slice crumbled bacon, 2 ounces shredded cheddar cheese, and 4 Tbs Ranch dressing, mashed cauliflower with 1 Tbs butter, 1/4 pound hamburger patty with 1 slice of American cheese, 2 Tbs mayo, 1 Tbs mustard, and 8 slices of dill pickles

9:45PM
2 slices Julian Bakery Smart Carb #1 bread with 2 Tbs natural tomato sauce, 2 ounces mozzarella cheese, and 12 pepperoni slices

NOTE: I spoke with a respected physician about my weight gain in 2010 and this person has agreed to analyze my situation with me in a one-on-one talk this weekend. I'm hopeful that we'll be able to hammer out any culprit areas in what I'm doing to figure this thing out for good. I'm also in the process of running some tests to see if they add another clue to this ongoing puzzle. If and when I ever figure this puppy out, I may have to write a book about it or something. LOL!

December 28, 2010 Low-Carb Menu

1:00PM
Grilled chicken breast with lemon sauce and tomato slices, mashed cauliflower with 1 Tbs butter, sugar snap peas with 1 Tbs butter

9:45PM
2 slices Julian Bakery Smart Carb #1 bread with 2 Tbs natural tomato sauce, 2 ounces mozzarella cheese, and 12 pepperoni slices

NOTE: Decided I'm tired of obsessing over counting in my diet. Figuring out my exact calories and carbohydrates is laborious and I'm just not interested in that anymore. If you want to run the numbers for your curiosity sake, then have at it. I'm content with knowing what I'm putting in my mouth and being fine with it. I'll of course continue to weigh in every few weeks just to let you know what's happening weight-wise with me. But no more micromanaging of my diet to some arbitrary calorie and carb level. I'm beginning to think those things are less and less relevant in the grand scheme of things.

NOTE: It was my birthday today and Christine surprised me with more of that blondie brownie and vanilla ice cream again. I know, twice in three days, but I decided to do it because I wanted to. It was a conscious choice and I'm good with it. With the lack of sustained weight loss with whatever I've done in 2010, things certainly couldn't get THAT worse with a couple of sugary desserts. It's cool. We even headed out to Denny's tonight to get my FREE birthday Grand Slam--cool offer and I could have certainly kept it all low-carb...but I chose to have some of their whole wheat pancakes with the sugar-free syrup. Not too shabby. We'll be cleaning up the diet by this weekend and see if 2011 is any better.

NOTE: When I interview Art De Vany last week about his new book The New Evolution Diet, he talked about mixing things up in the timing of when you eat your meals to keep your metabolism guessing rather than becoming accustomed to a routine. I've deliberately tried to do this in my menus the past few days changing the times I eat dramatically. Of course, I'm not allowing myself to starve if my body is telling me to eat, but I am trying to shake things up to see if any difference will happen. We will see if this shows up measurably in weight and fat loss.

NOTE: I got a "nice" little comment at my "Livin' La Vida Low-Carb" blog today from someone named Andreas that I thought I'd share with you to see how charitable some people are the week of Christmas (SARCASM ALERT!):

Jimmy, was wondering if you should adjust the language on your website given that you have gained what appears to be 50 or 60 pounds of your weight loss back. It seems dishonest to say you lost 180 pounds (weight = 230?) when you are now closer to 290 by your menu blog.

Just a thought…

OUCH! Tell me how you REALLY feel. LOL! The fact is for anyone who has read my work in 2010 that I’ve been quite honest about my weight struggles this year and am actively working on trying to get it under control. It is very easy to play Monday morning quarterback and point the finger of blame regarding my weight. But I am not being dishonest in any way...actually, just the opposite. Sometimes I'm honest to a fault opening myself up to this kind of comment by being VERY open about my low-carb journey. No, it hasn't been fun watching some of my weight come back on. However, I've still kept off triple-digit weight loss for the past seven years and I will continue to pursue the answers to my recent struggles.

I appreciate the feedback from so many people and look forward to figuring it all out for myself in 2011.

He drove down from Asheville, North Carolina to meet us and we had a fabulous conversation about healthy low-carb living and other stuff over lunch. It was a delightful time just shooting the breeze with someone who is like-minded in his thinking about nutrition and health. And he's got quite the story to tell about how he beat mercury poisoning from the fillings in his teeth--maybe a podcast interview is looming in the future. He did tell me about his personal family doctor who support low-carb living. AWESOME! He said he thought he met a famous person today in me, but I was even more intrigued by his story of triumph over disease. Cool stuff!

When I'm in recording mode, it can be quite an intense experience making sure I study up and research all the topics I'll be discussing with my guests. This week was a wild ride too with people like Dr. Loren Cordain, Art De Vany, Paul Jaminet, and more! I look forward to sharing these and many others on my podcast in the early part of 2011. Friday night is "date night" with Christine, so I make sure to get finished with all of my work activities around 6:00pm so that rest of the night is for us to be together. NOTE: I so much enjoy doing yoga/Pilates several times during the week because it allows me to get away from the day-to-day grind of working (although I absolutely love what I am privileged to do) and remind my body that I care about taking care of it well. From the gentle stretching and deep breathing to strength exercises and balance (the most difficult part for me), I enjoy the process and feel like I've reaped the benefits mentally which then translates to the physical in subtle ways. The perception of these kinds of classes is that they are for women, but I wouldn't trade my time in yoga/Pilates for anything. It's an important part of my healthy lifestyle.

NOTE: I had the privilege of interviewing Dr. Loren Cordain today for an upcoming episode of my podcast. You'll recall he's the author of The Paleo Diet and he now has a new companion cookbook to go along with it. We had an amazing conversation and one of the things I enjoyed the most about his new book was what he calls his "85-15 Rule." As long as you stick with the Paleo/low-carb principles the majority of the time, it's okay if you allow yourself an indulgence from time to time. I asked him why this was so important and it really comes down to compliance in a modern society that includes many more temptations and influences than our Paleolithic ancestors ever had to deal with. Can you imagine a hunter-gatherer having ready access to a 7-11 convenience store? Would he be able to resist the urge to splurge? Probably not. One of the disciplines we modern-day healthy eaters have to use is discretion and limits. Knowing what to eat to properly nourish our bodies and then realizing how much we need to live on. It's a daily process of living it out and making it happen. That's what this menus blog is all about.

It's from a new start-up company who are dedicated to providing quality bake mixes, flours, sweeteners, etc. to low-carbers that do not contain soy or other nasty ingredients typically found in these kind of products. They are loaded with fiber so I have to be sure not to consume too much of them. But I have to admit they're pretty darn tasty! More on these products when they become available to the public for purchase.

It's quite a privilege and a responsibility to address these doctors, nurses, dietitians and the like to let them hear our disappointment in how they have let us down, but also to give them hope that they can make a real difference in the lives of their patients if they continue to educate themselves about the low-carb alternative. I've got the chapter just about completed and I can't wait to see what the authors think of my submission. Gary Taubes is also contributing to this book along with many other names you would recognize. Should be amazing! Look forward to sharing more about it when it releases in the next few months.

NOTE: I'm done beating myself up over the weight gain I've seen this year. I've had my critics and I know that comes with the territory. But nobody can say anything to me about this that I haven't already said to myself over and over again in my head. It's frustrating to do what you know is right for you based on past experience and to seemingly see no results happening. As I've stated again and again, I'd be livin' la vida low-carb even if I never lost another pound because I know it's healthy for my body. And I sincerely believe that with all of my heart. I'm considering tinkering with the macronutrient ratio/calories soon to see if that can commence weight/fat loss again. I'm ashamed of this belly that is protruding out again and I'll be damned if I sit idly by without doing something about it.

It was interesting when I got home and stepped on the scale because I fully expected to gain weight on the cruise since I wasn't super-strict with my nutrition. Yes, I ate mostly low-carb, but I consumed many more calories than usual and even had some sugary desserts. But to my surprise, I didn't gain a single pound! However, a few pounds decided to creep on this week to explain my 288.3 weigh-in today. Perhaps it's last week finally catching up with my body or maybe there's something environmental in my house going on. It's all good...I'll just keep doing what I can do and never waver in my commitment to being healthy for life. The weight loss will catch up.
