February 24, 2011 Low-Carb Menu

9:15AM
3organic, soy-free, coconut fed eggs cooked in 1 Tbs coconut oil

1:00PM
7-ounce sirloin steak with pepper seasoning, 1/2 cup grilled green beans with 2 Tbs butter
2 ounces sugar-free dark chocolate

7:00PM
120-minute competitive volleyball

NOTE: It's weigh-in day and I had more good news in my weight loss efforts this past week--another 5.2 pounds lost! That puts me over 30 pounds lost in nearly two months of this new focus in 2011 and well on my way to reaching my goal of 230 pounds again and beyond. In fact, it's been several years since I've been this low in my weight and by one of the next two Fridays when I weigh in again I should be pretty darn close to cracking the 250-mark. WOO HOO!

Someone left a comment earlier this week stating I was slipping back into bad habits by adding vegetables like cauliflower and chocolate into my diet. HA! What a freakin' dope! This is my journey and I'm simply documenting it here for you to see what happens to me. And yes, that even includes having DAILY chocolate which I've thoroughly enjoyed and been able to all while seeing the pounds melt off of my body. It's been an amazing ride that I expect to continue moving forward.

We went to see the tax guy today and it went surprisingly well. I never know what to expect when it comes to doing our taxes, but it usually works out for the best in the end. I am faithful about making my estimated quarterly payments and Christine is a whiz at keeping good records for the business. It's awesome to be able to do what I do for a living, help people along the way, and genuinely love every moment life gives me. It's what motivates me to keep doing what I'm doing and never losing the fire that attracted me to blogging in the first place. THANK YOU for being a part of that in my life.

Great job Jimmy!! That's quite a bit of weight loss for one week.

Haters gonna hate. Why don't people understand that moderation is ok!? And it is DARK CHOCOLATE. It is good for you. I eat 2-4 squares of chocolate every day and I have not gained any weight. Keep it up! This seems to be working!!

Congrats on your weight loss !! I've gotten used to eating one meal or another small one a day. I just hope it works out good for me.

It's my birthday Sunday, SOOO as long as I dont GAIN weight, I'll be OK :)

LOL, Jimmy, everyone knows that it's just a short step from indulging in mashed cauliflower to being face down in the paczkis!

As for those criticizing that you're losing too quickly, how healthy is it to remain significantly overweight for months while losing only 1-2 lbs./week doing it the "healthful" way?

Congrats on another good weekly weight loss. 2 percent is neither too little nor too much for the concerted effort you’re making. The Franken-Chocolate you’re eating is probably NOT the best choice but hey, nobody’s perfect. I sincerely hope you’re not planning to “pull” a Jared (like he did with promoting Subway) and claim the Chocoperfection "helped" you lose weight.
