May 27, 2011 Low-Carb Menu

8:15AM
2 slices of traditional whole grain bread cooked in 2 Tbs coconut oil and 2 slices of American cheese

12:00PM
Atkins bar

2:15PM
4 ounces beef with mayo, mustard, and pickle, spaghetti squash with butter, spinach salad with eggs, cheese, bacon, sunflower seeds, and Ranch dressing

9:00PM
Pepperoni, mozzarella cheese and a little low-sugar marinara sauce, Atkins bar

NOTE: This was the FINAL day of testing the bread in my blood sugar testing comparison of the Julian Bakery "low-carb" breads with traditional breads. Tomorrow I'll do my control for this n=1 experiment with eggs since it is commonly known that eggs do not spike blood sugars. The last bread test today was on whole grain bread bought in my local bread store. It stated on the packaging that it contains 9 different whole grains with 6g fiber per two-very-thin-sliced serving. To keep the calories as close to the same as the other slices of bread tested this week, I had to consume FOUR of this one and I'm not gonna lie to you--this bread tasted REALLY good. Made as a grilled cheese sandwich, I actually enjoyed eating this. I am not about to get into the habit of eating conventional bread again, but this wasn't so bad. Of all the breads I tested this week, this one warranted the most "interesting" results...I'll just leave it at that. You won't wanna miss my analysis of this coming soon!

Hey Jimmy, glad to see you are doing experiments, testing new things and breaking out of your comfort zone. Sure, some people will think you are nuts, but I like how you are starting to look past the accepted 'norm' and trying things that work for you. It's really hard as bloggers to break away from expectations and do things that might seem crazy to others but that might be better for us. I see after extensive reading of your blog that you have a lot of people who want to keep you in a 'low carb box', and tend to freak out when you do something different. I admire your courage.

Keep it up, keep experimenting!
