May 28, 2011 Low-Carb Menu

9:15AM
3 pastured eggs cooked in 2 Tbs coconut oil and 2 slices of American cheese

1:00PM
1/2 rack of BBQ ribs, spaghetti squash with butter, mashed cauliflower with butter, Atkins bar

7:45PM
Pepperoni, mozzarella cheese and a little low-sugar marinara sauce, Atkins bar

NOTE: After all those bread experiments this week, it was nice to have some EGGS for the very last blood sugar testing experiment as the control in my n=1 investigation. I fully expect there to be little to no statistical change eating the eggs with coconut oil and cheese to contrast what happened with the breads. Someone commented, "Well, of course bread is going to raise blood sugar because it's carbohydrate." That's true about conventional white bread...but what about breads like the ones promoted as "low-carb" by Julian Bakery or even whole grain bread sold as such in your local supermarket? They say that since they're loaded with fiber that the impact on blood sugars is either minimal or very slow to rise. The results of my testing will shock a lot of people and those conclusions will be released soon at the "Livin' La Vida Low-Carb" blog.

Yes, I can understand being shocked after eating low carb bread. I was shocked because I was losing control of my diabetes and initially couldn’t figure out why. Then I thought; could it be the bread?

I control my diabetes with diet and exercise. David Mendosa and I are twins, at least with how we manage this disease.

It’s all about insulin. It’s the insulin response from the food we eat and the lowering of insulin resistance from the exercise we get.

How about repeating the experiment with Quest bars? Lets see if they raise your blood sugar level.

They taste so good - I'm hoping they don't.
