May 30, 2011 Low-Carb Menu

12:30PM
4 ounces beef with mayo, mustard, and pickle, spaghetti squash with butter, spinach salad with eggs, cheese, bacon, sunflower seeds, and Ranch dressing, Atkins bar

7:00PM
110-minute competitive volleyball

9:45PM
1 pound grass-fed ground beef cooked in coconut oil with American and mozzarella cheese, sugar-free dark chocolate

NOTE: With all my blood sugar testing last week, I deliberately avoided my normal exercise routine so as not to inadvertently skew any of the results. So it was good getting back into the normal groove again today with my workouts. Today was volleyball, yoga on Tuesday, weight lifting on Wednesday, more volleyball Thursday and I'll decide later in the week what else I'll do this week. I just feel better when I'm working my body and releasing endorphins through deliberate energy expenditure. Whether it helps for weight loss or not, exercise is an indispensable part of my healthy low-carb lifestyle.

I'm getting closer to sharing the results of my testing of the Julian Bakery breads...trying to give them a chance to respond in an interview. It will happen before the end of the week. In the meantime, check out this blog post that explains the purpose and process involved in my n=1 experiments.
