NOTE: With all my blood sugar testing last week, I deliberately avoided my normal exercise routine so as not to inadvertently skew any of the results. So it was good getting back into the normal groove again today with my workouts. Today was volleyball, yoga on Tuesday, weight lifting on Wednesday, more volleyball Thursday and I'll decide later in the week what else I'll do this week. I just feel better when I'm working my body and releasing endorphins through deliberate energy expenditure. Whether it helps for weight loss or not, exercise is an indispensable part of my healthy low-carb lifestyle.
I'm getting closer to sharing the results of my testing of the Julian Bakery breads...trying to give them a chance to respond in an interview. It will happen before the end of the week. In the meantime, check out this blog post that explains the purpose and process involved in my n=1 experiments.

NOTE: After all those bread experiments this week, it was nice to have some EGGS for the very last blood sugar testing experiment as the control in my n=1 investigation. I fully expect there to be little to no statistical change eating the eggs with coconut oil and cheese to contrast what happened with the breads. Someone commented, "Well, of course bread is going to raise blood sugar because it's carbohydrate." That's true about conventional white bread...but what about breads like the ones promoted as "low-carb" by Julian Bakery or even whole grain bread sold as such in your local supermarket? They say that since they're loaded with fiber that the impact on blood sugars is either minimal or very slow to rise. The results of my testing will shock a lot of people and those conclusions will be released soon at the "Livin' La Vida Low-Carb" blog.

To keep the calories as close to the same as the other slices of bread tested this week, I had to consume FOUR of this one and I'm not gonna lie to you--this bread tasted REALLY good. Made as a grilled cheese sandwich, I actually enjoyed eating this. I am not about to get into the habit of eating conventional bread again, but this wasn't so bad. Of all the breads I tested this week, this one warranted the most "interesting" results...I'll just leave it at that. You won't wanna miss my analysis of this coming soon!

NOTE: Today was my second blood sugar testing of the Julian Bakery SmartCarb breads. Today's test was on the SmartCarb #2 cinnamon raisin bread which claims to have only 2g net carb per slice. I ate two slices with coconut oil and American cheese (grilled cheese) and then tested my blood sugar every 15 minutes for three hours to show a graph of what my blood sugar did over that time period. Tomorrow I'll be testing white bread (Texas toast) and on Friday we'll test whole grain bread bought in the local supermarket. Saturday morning will be my control element of eggs since it is basically isocaloric to the slices of bread and has minimal impact on blood sugars. After this series of tests on the bread are finished this week, I'll likely take at least a month off from testing to stabilize my blood sugar again. Smart move, eh? I'll be posting a column about my latest test either this weekend or early next week at "Livin' La Vida Low-Carb."

The constant in the experiments will be 2 Tbs coconut oil and 2 slices of American cheese. My first test is on the SmartCarb #1 bread which claims to have only 1g net carb per slice. Wednesday I'l test the SmartCarb #2 bread that is cinnamon raisin and claims to have just 2g net carbs per slice. Thursday will be white bread (UGH!) and Friday will be whole grain bread (double UGH!). On Saturday I'll consume eggs instead of the bread as the control which should show minimal impact on blood sugar. This kind of testing is important to show what's happening to blood sugar with these products purporting to be "low-carb." We will see and publish our results.

NOTE: Last night was quite the interesting event--after watching the season finale of Survivor on our DVR, I went to bed around 11:30PM and Christine decided to stay up a little longer. Around 12:30AM, I heard Christine whimpering and telling me should couldn't breathe. She's had episodes like this before and usually can calm down from it enough for it to pass. But this one was different--she continued to feel anxious and even panicked enough for me to sit up in the bed and take notice. It's been about a year since we took Christine off of her Paxil after getting her Vitamin D levels up from 9 to the lower 50's...and this was her first "panic attack" since that happened. Realizing she was not feeling well at all, I rushed her down to the ER where they gave her some anti-anxiety medication to calm her down. We didn't get home until 4:00AM. After we slept for a few hours, Christine called her PCP to set up an appointment and we visited him this afternoon who gave her a prescription for something to take in case this happens again sometime. She was vehement about NOT going back on Paxil again. She admitted she has been lax about consistently taking her Vitamin D, so we got her started back on the high-dose 10,000IU daily regimen to see if that helps. It's just a gentle reminder why being diligent about your nutritional program is so very important.

They want to provide these underprivileged kids a bag fool of "goodies" when people from our church arrive to minister to them. The list of requested items was horrific: crackers, snack cakes, pudding, cookies, candy bars...the list went on and on. Every single item on the list was carbs, carbs, and more carbs. I wanted to rip up the list and throw it away to keep those poor kids from the carbohydrate load that is to come. We have so much work left to be done, don't we?

Plus, it gives this 39-year old man an extra spring in his step knowing I'm providing a necessary element to their games while also getting in some Vitamin D-creating sunshine and healthy cardiovascular exercise. It's sad the season will be over in just a couple of weeks.

NOTE: After the Low-Carb Cruise and hearing all the stories of the people in Sweden eating a low-carb, high-fat (LCHF) diet not for weight loss but their health, I've decided to refocus this menus blog by taking the spotlight off of my weight and back on the quality of the food I'm consuming. That's not to say I no longer care about my weight, but it's not the single obsession of why I eat the way I do. Sure, your weight can be an incredible marker for tracking your progress, but your blood sugars, cholesterol, and other such cardio-metabolic markers are much MORE important.
As I'm tracking my low-carb meal plans, I will likely track my blood sugar levels more than I have been doing because I think that will be more revealing about what my diet is doing for my health. I'd love to have a glucose meter company donate enough testing strips to record my blood sugars daily for a period of time. I'll work on that to make it happen because I think it'd be more beneficial than sharing my weekly weigh-in.
For the record, I did gain four pounds on the cruise and am working to get that back down again. It's all good and I'm happy to be back home in my normal routine again. Need to step up my exercise routine again, especially strength training. That'll be coming back into my schedule again soon.

NOTE: One thing the low-carb cruise taught me this year is the vital importance of making sure my low-carb lifestyle is indeed a high-fat one as well. The LCHF (low-carb, high-fat) movement in Sweden was well-represented on the cruise with 20 Swedes joining us this year. So I'm taking their message to heart by adding MORE butter and coconut oil to my diet to see how it positively impacts my health.
