But imagine my surprise when we stood in line for HAMBURGERS! Sure, there were chips, cookies, and other high-carb stuff I wouldn't touch with ten-foot pole. But I got me a couple of hamburgers with a slice of cheese each along with some mustard and mayonnaise--I'm good to go! One of the sopranos looked over at my plate and remarked, "Look at Jimmy over there being all good with his meal." Yep, you bet I am. After all, I am livin' la vida low-carb. ;)

While resistance training while fasting may work for some people, it's obvious it doesn't work for me. I need to eat a little something something beforehand to help fuel my workouts. It's still a killer workout, too! I'm getting much stronger than I thought I would.

I'm so grateful for her willingness to go through all of this to make us a baby. We'll know if it worked on July 5th.

NOTE: We're coming up on our transfer date for our embryo adoption this Wednesday afternoon. It's been a long journey that you could date back all the way to the beginning of our marriage in 1995--that desire to have a baby to call our own. We'll know for sure if all these needles and the rollercoaster ride of emotions was worth it or not on July 5, 2011 when we have a pregnancy test done. We'd love to have any prayers and happy thoughts thrown in our direction about this. THANKS guys!

On the weight lifting front, I'm ALREADY lifting 20 pounds more than I was just one month ago. I can't believe how strong I'm getting so soon after kicking my butt into high gear to do this. AMAZING!

NOTE: I posted the results of my retesting of the Julian Bakery SmartCarb breads and the results were WORSE eating these "low-carb" breads dry than with coconut oil and cheese. The owner of Julian Bakery was adamant it was the cheese that spiked my blood sugar previously--now what's his excuse? Shot down in a blaze of glory!

Tonight we had a social with our Sunday School class from church and they had hamburgers and hot dogs--a low-carb lover's delight! We had a great time and didn't need the carbs from buns, sides and desserts either. WOO HOO!

NOTE: We had a really cool group of young orphans from Africa visit our church today to bless us with their singing and dancing. They're the Mwangaza African Children's Choir from Uganda and were incredible ambassadors for Christ with the way they worship. Most of their parents died from AIDS or malaria and now they're left to pick up the pieces of their life. Half of the population in Uganda is under the age of 15 and most are orphaned children. Here they are singing in our worship service today:

NOTE: Christine and I went with a group of people from our church down the road about 75 miles to Columbia, South Carolina to help a cell church there who was doing an outdoor event called "Night At The Movies" in a local park there. The church has a small congregation, but this event is HUGE with 1500-2000 people attending from the community. Needless to say, they need as much help as they can get for crowd control and parking. I was one of the parking people and enjoyed pointing people to where they could park. I wore one of those reflective vests and it's amazing how people just assumed I knew everything about the event asking me all sorts of questions. I did my best to answer them all with a smile. :)

Our group of about 15 who drove down gathered at a local Wild Wings Cafe down the road from the park and enjoyed a nice meal together. Christine said she could eat about 8 wings, so we split a 16-wing meal. Mine were BBQ and Christine got the Parmesan something or another. We like wings...low-carb and oh so delicious. One of the people from our group said, "So, I bet you're glad we picked Wild Wings, eh?" YEP, I sure was! I've been eating low-carb long enough now that people are very accommodating of my needs. We're having a Sunday School get-together on Monday night and they've already asked how they can meet my low-carb nutritional plan. WAY COOL! And who knows the impact my example can have on them when they're ready to take the low-carb plunge someday.

Although we don't drink, my highly observant wife pointed out this curious sign with "low-carb" in it at Wild Wings:

NOTE: My retesting of the SmartCarb #1 bread from Julian Bakery commenced today without any fat or cheese to see how my blood sugar would respond. Somebody made the comment that OF COURSE my blood sugar will respond to these breads because they have carbohydrates in them. But the owner of Julian Bakery claims his bread has "no impact" on blood sugar levels when he's tested it on diabetics. Those are his words, not mine. So I'm testing that claim and will be publishing my results soon. He claimed it was the cheese that spiked my blood sugar previously when I cooked his bread in coconut oil and added cheese for a grilled cheese. We shall see.

NOTE: After the owner of Julian Bakery accused me of trying to sabotage his bread sales to low-carb customers with my n=1 experiment of his "low-carb" breads making grilled cheese sandwiches a couple of weeks ago, I decided on his suggestion to redo the experiment and just consuming the breads all by themselves. I would NEVER EVER eat bread this way, but he claims the cheese was what caused the spike in blood sugar when I ate his breads. Today I put that hypothesis to the test. How did the dry, butter-less SmartCarb #2 bread do? I'll be posting my results soon. Next up on Tuesday is the SmartCarb #1 bread. What do you think happened to my blood sugar? Was it similar to my previous results (see graph below) or do you think there was little impact on blood sugar as the owner of Julian Bakery claims?

NOTE: I'm gearing up to redo my testing of the Julian Bakery SmartCarb breads again next week, but this time just the dry bread. After posting my n=1 results consuming the SmartCarb breads with coconut oil and cheese to make grilled cheeses, the owner of Julian Bakery got upset stating that this was an unfair assessment of his breads since the cheese could have spiked my blood sugar (despite the fact that I consumed an egg meal with that same cheese as a control with very little response to my blood sugar). So, this next time I'll be testing the bread all by itself although I'd NEVER personally eat it that way and neither would most low-carbers who purchase it. I'll reserve my judgment until after I've tested again and see what happens to my blood sugar levels.

NOTE: After quite a few days of agonizing delayed onset muscle soreness from my workout with a personal trainer last week, I FINALLY felt well enough today to get back in the gym. This time I decided to give it a go at doing some super-slow weight lifting over my entire body. I've interviewed and met people like Fred Hahn and Dr. Doug McGuff who are big believers in this concept (Doug is about a 75-minute drive from where I live, so I may be going to see him soon to perfect these lifting techniques). So I gave it a go for myself--and WOW, what a workout! In just 30 minutes of lifting an appropriate amount of weight in a controlled slow motion doing just one set of six reps or so, I could feel it working. And when I got home I could REALLY feel how hard I kicked my own butt! It was nice. I'm sure I'll be "feeling it" for a few days, but the good news is this is all the exercise I need for the week according to Fred and Doug...until next week! I'll see how I do with this, especially once I get to work with Doug directly at his gym. Should be an interesting ride!

NOTE: Seriously, this muscle soreness ain't gone away yet?! UGH! I just knew I'd wake up today and feel so much better. Did that trainer break my body or what? :)

Woke up SUPER early today to surprise Christine. A couple from our church is selling their house and today they had a garage sale getting rid of their stuff since they are going on the mission field overseas later this year. One of the items they were selling was a bookcase which Christine has been begging me to get for all the low-carb books I receive to review, interview the authors on my podcast, etc. The only problem is we don't have a truck to bring one home.

So last night, she heard this couple was getting rid of their bookcase and she asked people from our Sunday School class if they could help us bring the bookcase home. Nobody responded (it was kinda late when she sent the request). So when I woke up this morning, I opened the trunk of my Hyundai Sonata and thought, "I'll make this thing fit." When I got there and saw it, I knew we'd be close--but we made it fit! WOO HOO! Christine was so surprised when she came into my office and saw all those books off the floor and on the new bookcase. Ain't I a good hubby?! Check it out:



While I was at the yard sale, a gentleman was enamored by my customized license plate thing on the front of my car:



He said he loved it and wished he had one. So I asked, "Do you eat a low-carb diet?" His reply (and this is no joke, he actually said this): "No, I'm just high-fat!" HAHAHAHA! Oh, that was too funny.

Since today was Saturday and my new "Low-Carb Conversations" podcast was out of new shows, it was time to get to recording four of these back-to-back-to-back-to-back (that's four backs, right?). My co-host Mindy and I were busy bees doing these every hour on the hour for four hours in a row. I like doing it this way so we can then take a month off before recording more. It keeps the episodes current while not wearing us out. And I'm right smack dab in the middle of my recording schedule for "The Livin' La Vida Low-Carb Show" podcast--so it's a crazy time for me right now. Busy is good, but frantic probably ain't. :O

NOTE: Ooooohhhhhh my aching muscles! After working out lifting weights with a personal trainer yesterday, I was FEELING IT today. O...M...G! I couldn't hardly move my arms and my legs were teetering on giving out at any moment while I was walking all day long. I suppose she worked those muscles to exhaustion, ya think? Christine didn't want me to go play volleyball tonight because of the soreness, but I got out there and did the best I could. My speed wasn't as good and jumping at the net to block a shot or spike the ball was indeed a challenge. But I felt better as the game progressed. Something tells me I'll be feeling these muscles aching for a few more days. REST TIME!

June 1, 2011 Low-Carb Menu

9:00AM
60-minute full-body weight lifting with a personal trainer

11:45AM
4 ounces beef with mayo, mustard, and pickle, spaghetti squash with butter, spinach salad with eggs, cheese, bacon, sunflower seeds, and Ranch dressing, GoLower bar

9:30PM
1 pound grass-fed ground beef cooked in coconut oil with American and mozzarella cheese, Atkins bar

NOTE: I wanted to try out working with a personal trainer again on my weight lifting to help build more fat-fighting muscle on my body. So I set up this appointment with a personal trainer at my local gym today and wouldn't you know I'd wake up late for my appointment. It didn't matter because she still killed me! LOL! My whole body was like Jell-o when I left she had done such an outstanding job of fully exhausting my muscles. I'm still not sure I will be hiring her full-time on a regular basis, but it was good to get in a positive weight lifting workout. That's the one area of my healthy lifestyle that I haven't been able to peg.
